SOUTH AFRICAN TRADITIONAL VETKOEK (FRIED BREAD)
These tasty vetkoek (fat cakes) make for a lovely dinner or snack. You can make these vetkoek any size you prefer. They're a great party snack if they are made small and filled with various processed meats, tuna and mayo, syrup, curried minced meat, cheese, or basically anything you feel like. They're fast, easy, and very tasty.

Steps:
- Mix lukewarm water, sugar, and yeast in a small bowl. Let stand until yeast softens and begins to bubble slightly, about 5 minutes.
- Sift flour and salt together in a large bowl.
- Pour water mixture over flour mixture and knead until dough is smooth and elastic, 5 to 7 minutes. Cover bowl with clean cloth and let dough rise until until doubled in volume, about 45 minutes.
- Pinch off a piece of dough about the size of a tennis ball; roll until smooth. Flatten ball of dough until it is the size of palm; set aside on a floured work surface. Repeat with remaining dough.
- Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
- Fry flattened pieces of dough in the hot oil, 2 to 3 pieces at a time, until golden brown, about 3 minutes per side.

SOUTH AFRICAN SWEET POTATO FRITTERS
Steps:
- Heat 2 inches of oil in a heavy saucepan or fryer to 375 degrees.
- Grate the sweet potatoes into medium-sized bowl, cover them with boiling water, and let them stand for 15 minutes. Drain off the water and slowly add the remaining ingredients, stirring to make sure that they are well mixed. You should have a thickish paste that will hold its shape when picked up in a tablespoon. If the mixture is too thick, add a bit of warm water. If it is too thin, add a bit more flour.
- Drop the mixture, a few tablespoons at a time, into the hot oil and cook the fritters for 3 to 5 minutes, or until they float to the surface, turning them once to make sure that they are slightly browned on each side. Drain on absorbent paper and serve hot.

- Preheat oven to 350°F.
- Saute the beef with onions until meat is browned.
- Soak the bread in half the milk; then mash the slice with a fork.
- Combine all the ingredients (except the remaining milk and egg).

- In a large, heavy skillet or stew pot, fry the onions in butter until they are golden brown. With a slotted spoon, remove about 1/3 of the slices and set aside.
- Add to the pot the ginger, garlic and chili paste, and fry for 5-6 minutes, stirring constantly. Then add the lentils, green peas, carrots and green beans. Reduce heat and cook for 15 minutes, adding more butter or a bit of oil if needed.
- Add the tomatoes, spices and mint, and stir for 5 minutes.
- Then pour a cup of hot water, cover, and simmer until vegetables are about half cooked.
- Add rice, potatoes, salt and another 4-5 cups of hot water (use the lesser amount if your vegetables have created quite a bit of liquid). Cover again, and cook for another 20-30 minutes until rice is done and water is absorbed.
- To serve, garnish with the reserved onion slices, and pass around a bowl of yogurt as a sauce.

- Whisk 1/2 cup sugar and 1 teaspoon cinnamon in a shallow bowl; set aside.
- Fit a large pot with thermometer and pour in oil to measure 3". Heat over medium-high heat until thermometer registers 375°F.
- Meanwhile, pulse oats in a food processor to a coarse powder. Transfer to a large bowl and whisk in rice flour, cornstarch, baking powder, salt, and remaining 2 tablespoons sugar and 1/2 teaspoon cinnamon. Whisk in egg and 1/2 cup club soda, adding more soda by the tablespoonful until the consistency of pancake batter.

- To make the chai syrup:.
- Combine all ingredients in a saucepan and cover with a lid. Simmer on medium-low for 1/2 hour to 1 hour or until the mixture reduces to a syrup(mine was not real syrupy, I simmered 1 hour). Then strain the mixture through a fine sieve (discarding solids) into a clean jar with a lid and store in the refrigerator.
- How to use the chai syrup:.
- Simply mix 1 teaspoon to up to 1 tablespoon of the chai syrup into hot milk(I use almond milk) and serve. Or mix in a teaspoon to a tablespoon of the syrup into hot water for a great chai tea.
