Steps:
- Coat the inside of the bread pan fitted with the kneading paddle with nonstick cooking spray. Place all ingredients, in order listed, in the bread pan and secure the pan in the Bread maker. Press menu button to select the Cake/Quick Bread program. Press Start/Stop to mix and bake. While the batter is mixing, scrape the sides of the bread pan with a rubber spatula to fully incorporate ingredients. When cycle is complete, remove from bread pan and place on wire rack to cool completely for best slicing results.

Steps:
- Place water and carrot into blender and blend until you have a carrot juice.
- Combine all ingredients ( including the carrot juice) in the order given.
- Select White Bread and push start.
- Important: Check the dough after about 5 minutes, if its too wet then add a tablespoon of flour at a time, if its too dry then add a tablespoon of water at a time, until dough forms a smooth round ball.

CARROT CORNBREAD
Along with its vegan counterpart, this recipe was found in As You Like It Cookbook, 2001. Preparation time does not include time needed for the finished loaf to cool to room temperature.

Steps:
- Preheat oven to 350 degrees F, then oil & flour a 10"x6" loaf pan.
- In a large mixing bowl, combine flour, cornmeal, baking powder & salt.
- In another mixing bowl, combine the egg, milk, maple syrup, oil & vanilla, mixing well, before stirring in the carrots.
- Add the cornmeal mixture to the liquid ingredients, mixing well with a wooden spoon.
- Pour the batter into the prepared loaf pan & bake for 1 hour & 15 minutes, or just until a wooden tootpick inserted in the center of the loaf comes out clean.
- Allow to sit in the pan on a wire rack for 10 minutes, then remove the loaf by inverting the pan onto a wire rack.
- Turn the loaf right side up & let it cool to room temperature before slicing & serving.

RAPID CORNBREAD (BREAD MACHINE)
This recipe was in a book that came with my Black and Decker bread machine. This is not traditional cornbread, but is tasty anyway.

Steps:
- Add enough water to the beaten egg to equal 1 1/3 cups.
- Follow directions for your bread machine.
- My machine instructs to measure ingredients in the order listed into the baking pan. (I heat the water/egg mixture in the microwave for about 30 seconds before putting in pan.).
- Insert baking pan into oven chamber and secure pan.
- Select rapid setting and 2 pound loaf.
- When cycle ends, I put the loaf in a large zip lock bag, seal the bag, and plae on a wire rack to cool completely before slicing.
