CARROT LEMONADE



Carrot lemonade image

A simple, sweet cordial you can make from leftover carrots. Don't throw the grated carrots away after steeping - bake up a delicious carrot cake

Yield makes 400ml

Number Of Ingredients 6

150g carrots , grated
juice 5 lemons
juice 1 orange
150g golden caster sugar
ice
sparkling water

Steps:

  • In a bowl, stir together the carrot, lemon juice, orange juice and sugar. Steep in the fridge for at least 1 hr, stirring occasionally to dissolve the sugar. Pour the mixture through a sieve into a large jug to get rid of the pulp.
  • To make the lemonade, pour 25ml-50ml (depending on how sweet you like it) of the carrot mixture into each glass, add some ice then top with 200ml sparkling water.

1-1/2 pounds medium carrots, cut into 1/2-inch diagonal slices
3 tablespoons butter
3 tablespoons brown sugar
3 tablespoons lemon juice
1/4 teaspoon salt
Grated lemon zest, optional

Steps:

  • Place 1 in. of water and carrots in a large skillet; bring to a boil. Reduce heat; cover and simmer for 10-12 minutes or until crisp-tender. , Meanwhile, in a small saucepan, melt butter. Add brown sugar, lemon juice and salt; bring to a boil, stirring constantly. Drain carrots; add butter mixture and toss gently. If desired, garnish with lemon zest.

Lemon and carrot flavors combine for a unique flavor sensation in this moist quick bread. I know it's a winner because I bring a loaf to our church festival every year, and I always get requests to bake it again.

Yield 2 loaves (12 slices each).

Number Of Ingredients 12

3/4 cup butter, softened
1-1/2 cups sugar
3 large eggs, room temperature
1 tablespoon lemon juice
2-1/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup milk
1 cup shredded carrots
3/4 cup chopped pecans
2 tablespoons grated lemon zest

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Stir in lemon juice. Combine the flour, baking powder, baking soda and salt; add to the creamed mixture alternately with milk. Stir in the carrots, pecans and lemon zest., Transfer to two greased 8x4-in. loaf pans. Bake at 350° until a toothpick inserted in the center comes out clean, 40-45 minute. Cool for 10 minutes before removing from pans to wire racks.,

1 tablespoon butter
1 tablespoon brown sugar
1 teaspoon lemon juice
1 pinch salt and ground black pepper to taste

Steps:

  • Place carrots into a large pot and cover with water; bring to a boil. Reduce heat to medium-low and simmer until carrots are tender, about 8 minutes. Drain.
  • Heat butter in a skillet over medium heat; cook and stir carrots, brown sugar, and lemon juice in the melted butter, stirring often, until sugar has dissolved, 2 minutes.

4 ounces fresh lime juice (1/2 cup)
3 tablespoons super-fine sugar
16 ounces seltzer
Carrot greens, for garnish (optional)

Steps:

  • In a pitcher, combine carrot juice, fresh lime juice, and super-fine sugar. Stir until sugar dissolves. Cover and refrigerate until cold, about 1 hour. When ready to serve, pour over tall glasses filled with ice and top each with 1 to 2 ounces seltzer. Garnish with 1 or 2 carrot tops, if desired.
