Carrot & Orange Stir-Fry image

This recipe is one of those that just belong together. The flavors of carrots and orange just meld so beautifully, and they shine in this dish. The orange juice brings out the sweetness of the carrots.

2 tablespoons sunflower oil
2 1/4 cups grated carrots
8 ounces shredded leeks
2 oranges, peeled and segmented
2 tablespoons ketchup
1 tablespoon brown sugar
2 tablespoons soy sauce
1/2 cup chopped peanuts

Steps:

  • Heat the sunflower oil in preheated wok.
  • Add the grated carrots and leeks to the wok and cook for 2 - 3 minutes, or until the vegetables have just softened.
  • Add the orange segments to the wok and heat through gently, ensuring that you do not break up the orange segments as you stir the mixture.
  • Put the ketchup, brown sugar, and soy sauce in a small bowl and mix together.
  • Add the tomato and sugar mixture to the wok and then cook for another 2 minutes.
  • Transfer the stir-fry to warm serving bowls and scatter with the chopped peanuts.

1-1/2 pounds parsnips, peeled and julienned
1/4 cup butter
2 pounds carrots, julienned
2 tablespoons dried minced onion

Steps:

  • In a large skillet, saute parsnips in butter for 3-4 minutes. Add carrots and onion; cook and stir until vegetables are tender, about 10-15 minutes.

  • Put the water in a 2-quart pot, cover, and bring to a boil. Stir in some salt until dissolved, then mix in the rice and reduce the heat to medium low. Cook for 35 minutes with the lid askew, or until all the water is absorbed.
  • Take the pot off the heat and let it stand for 5 minutes. Fluff the rice with a fork and stir in 2 tablespoons of butter.
  • Whisk together the soy sauce, orange juice, cornstarch, sugar, and orange zest in a small bowl until blended.
  • Heat the oil in two large saucepans or a wok over high heat. Add the carrots and cook for 2 minutes, stirring constantly. Add the rest of the vegetables and cook for 6 minutes. Always stirring as you want to keep the vegetables moving so they don't burn.
