CANDIED CASHEWS

- Preheat the oven to 350 degrees F. Place the cashews on a baking sheet and place in the oven. Toast the cashews for 10 minutes, or until golden brown. Be sure to watch the cashews carefully so they don't burn! Remove the cashews from the oven and cool. In a saucepan (copper works best), add the sugar and the water. Bring the mixture to a boil. Once the mixture is boiling and the sugar has dissolved, add the cashews. Continue cooking the mixture, stirring constantly. The sugar will thicken, and then become granular again, continue stirring. The sugar will then begin to turn back into a clear liquid. When all of the sugar has turned into a clear liquid, remove the pan from the heat, stirring constantly. Once the sugar begins to turn a golden color, spoon the nuts onto a parchment paper lined sheet pan. Allow to cool.;
CASHEW HAYSTACKS CANDY
Found this recipe while digging through my mom's - I think I made these in 7th grade Home-Ec class (that's when they still taught it in middle school). Anyway, these are delicious and easy for kids to make, with a little help. Serving size was not included on the recipe, so I'm guessing.

Steps:
- Melt six (6) cubes bark (12 ounces) in a medium sized pan on low heat.
- Combine nuts and chow mein noodles.
- Stir into bark and stir mixture until well coated.
- Drop by teaspoonful into candy cups or onto waxed paper.
- Cool completely. Can be stored for several weeks in airtight container.

- In a large bowl, melt butterscotch chips in the microwave.
- Mix in the peanut butter.
- Add the marshmallows and the noodles.
- Stir to coat noodles.
- Drop by spoonfuls on waxed paper.
- Allow to set up (takes an hour or so at room temperature).
- Best kept covered in refrigerator (if you have any left!).
HAYSTACKS
These are delicious little chocolate treats that are very quick and easy to make. The recipe was given to me many years ago, by a lady friend.

Steps:
- In a non-metallic bowl, combine 1- 12 ounce bag of Nestle' semisweet chocolate chips and 1- 12 ounce bag of Nestle' butterscotch chips.
- Stir the chips together and microwave on a medium temperature, stopping to mix the chips as they melt together.
- When completely melted and mixed, add 1 can La Choy Chinese noodles and 1 can Spanish peanuts.
- Stir together until mixed.
- Drop spoonfuls of mixture onto a foiled cookie sheet.
- Let harden.

- Butter a 15x10x1-in. pan with 1 tablespoon butter; set aside. In a large saucepan, combine the sugar, corn syrup and water. Bring to a boil, stirring constantly. , Reduce heat; cut remaining butter into cubes and carefully stir into syrup. Cook and stir until a candy thermometer reads 280° (soft-crack stage). - In a bowl, combine the first four ingredients; knead until smooth(mixture will be dry). Shape into eight rolls 5 in long x 1/2 in. in diameter (do not butter hands before shaping the mixture). - Line baking sheets with waxed paper and grease paper with butter; set aside., In a microwave, melt 1 pound of candy coating; stir until smooth. Drop by scant tablespoonfuls onto prepared pans. Let stand until partially set, about 3 minutes. Top each with six or seven cashews. Let stand until completely set., In a small heavy saucepan, combine caramels and cream. Cook and stir over low heat until melted; stir until smooth. Spoon over cashews. Reheat caramel over low heat if it thickens. Melt remaining candy coating; spoon over caramel. Let stand until set.

- Line cookie sheets with waxed paper or cooking parchment paper. Spray with cooking spray. Spray large bowl with cooking spray; mix noodles and peanuts in bowl.
- Spray medium microwavable bowl with cooking spray; add butter and marshmallows. Microwave uncovered on High 1 minute 30 seconds to 2 minutes or until smooth, stirring every 30 seconds. Stir in white vanilla baking chips and frosting. Continue to microwave uncovered on High 30 seconds; stir until well blended.
- Pour hot marshmallow mixture over noodles and peanuts; stir until well coated. To form each cookie, drop mixture by rounded tablespoonfuls onto waxed paper. Immediately top with sprinkles. Repeat with remaining noodle mixture and sprinkles. If mixture is hard to scoop, reheat in microwave uncovered on High 15 to 30 seconds.
- Cool completely, at least 1 hour. Store in airtight container at room temperature.
