1/4 cup reduced-sodium soy sauce
3 tablespoons lime juice
2 tablespoons plus 1 teaspoon apricot preserves
2 tablespoons water
2 garlic cloves, minced
1/4 teaspoon ground ginger
2 medium carrots
6 green onions
3 teaspoons olive oil, divided
1 pound uncooked medium shrimp, peeled and deveined
1 large sweet red pepper, chopped
2 cups hot cooked rice
8 large lettuce leaves

Steps:

  • In a small bowl, mix the first 6 ingredients. Using a vegetable peeler, shave carrots lengthwise into very thin strips. Slice white parts of green onions; cut each green top in half lengthwise., In a large skillet, heat 2 teaspoons oil over medium-high heat. Add shrimp; stir-fry until pink. Remove from pan., Stir-fry red pepper and carrots in remaining oil 4 minutes. Add white parts of onions; stir-fry 1-2 minutes longer or until vegetables are crisp-tender., Add 1/3 cup soy sauce mixture to pan. Bring to a boil. Add shrimp; heat through. Place 1/4 cup rice on each lettuce leaf; top with 1/2 cup shrimp mixture. Drizzle with remaining soy sauce mixture and roll up. Tie each with a green onion strip.

My personal spin on a popular restaurant recipe. Preparation is the key to making this recipe successful, so plan ahead and you won't be disappointed! This recipes uses ground pork and is conventional recipes only husband approved!

½ cup water
¼ cup white sugar
2 tablespoons soy sauce
2 tablespoons rice vinegar
2 tablespoons ketchup
1 tablespoon lemon juice
⅛ teaspoon sesame oil
1 tablespoon dry mustard
2 teaspoons water, divided
2 tablespoons soy sauce
2 tablespoons brown sugar
½ teaspoon rice vinegar
3 tablespoons peanut oil, divided
1 pound ground pork
1 cup minced water chestnuts
8 ounces chopped fresh mushrooms
3 tablespoons chopped green onion
1 teaspoon minced garlic
1 head iceberg lettuce
1 teaspoon red chile paste, or more to taste

Steps:

  • Combine 1/2 cup water and white sugar together in a small microwave-safe bowl. Warm in the microwave to dissolve sugar, about 30 seconds. Add 2 tablespoons soy sauce, 2 tablespoons rice vinegar, ketchup, lemon juice, and sesame oil; mix until dipping sauce is well-blended. Cover with plastic wrap and chill, about 30 minutes.
  • Combine dry mustard with a few drops of water. Mix in remaining water until mixture is the consistency of hot mustard.
  • Whisk 2 tablespoons soy sauce, brown sugar, and ½ teaspoon rice vinegar in a small bowl to make stir-fry sauce.
  • Heat 2 tablespoons peanut oil in a wok or large skillet over high heat. Add pork; cook and stir until browned, about 5 minutes. Add remaining 1 tablespoon oil, water chestnuts, mushrooms, green onions, and garlic; saute until flavors combine, about 2 minutes. Pour in stir-fry sauce; stir to coat pork mixture evenly, 3 to 4 minutes.
  • Cut out lettuce stem and wash thoroughly. Discard outer leaf. Carefully peel off whole leaves and slice in half lengthwise. Arrange on a plate lined with paper towels.
  • Scoop dipping sauce into small bowls or ramekins. Mix in hot mustard and red chile paste to desired level of spiciness. Spoon pork filling into lettuce halves and roll up; top or dip wraps with dipping sauce.

1/4 cup natural smooth cashew butter
1 tablespoon coconut milk
3 tablespoons squeezed fresh lime juice
1/4 teaspoon chili powder
1/2 lb cooked shrimp, thawed if frozen
1/4 cup chopped scallion
1/2 cup shredded carrot
1/2 cup bean sprouts, washed and drained
1/2 cup diced seeded cucumber
1/4 cup sesame seeds
1 tablespoon grated fresh ginger
1/2 tablespoon reduced-sodium tamari soy sauce (gluten free)
2 tablespoons squeezed fresh lime juice
1/4 cup unseasoned rice vinegar
6 leaves boston lettuce, washed

Steps:

  • In a small bowl or blender, whip the cashew butter, coconut milk 3 tablespoons lime juice, and chili powder together.
  • In a large bowl, combine the shrimp, scallions, carrots, bean sprouts, cucumber, sesame seeds, ginger, soy sauce, 2 tablespoons lime juice, and vinegar.
  • Mix well and let flavors marinate in the refrigerator for 20 minutes.
  • Divide the cashew sauce and shrimp vegetable mixture in the center of each leaf and wrap lettuce around filling.
  • Wrap and serve.

1/4 cup sugar
1/4 cup rice wine vinegar
1 (1-inch) ginger root, peeled and thinly sliced
2 tablespoons vegetable or other light oil
1 red onion, chopped
2 small red chili peppers, very thinly sliced
1/4 pound shiitake mushrooms, stems removed and chopped
4 cloves garlic, chopped
1 1/2 pounds medium shrimp, deveined, tails off
Salt and freshly ground black pepper
1 head iceberg lettuce, cored and quartered

Steps:

  • Combine sugar, vinegar and ginger in a small pot and bring to a boil, dissolve sugar and turn off heat, reserve.
  • In a skillet heat the oil over medium-high heat. Saute the onions, chili peppers, mushrooms and garlic 3 to 4 minutes then add shrimp and toss 3 to 4 minutes more until pink and firm. Douse the pan with the sweet vinegar, season with salt and pepper, to taste. Serve with cold lettuce for wrapping the hot-sweet shrimp.

½ red bell pepper, chopped
1 pound large shrimp, peeled and deveined
2 cloves garlic, minced
½ tablespoon Greek seasoning
½ cup sliced cherry tomatoes, or to taste
½ cucumber, halved and sliced
1 (4 ounce) can sliced black olives
1 head romaine lettuce, separated into individual leaves
½ cup feta cheese, crumbled

Steps:

  • Melt butter in a large nonstick skillet over medium-high heat. Add bell pepper; cook for 2 minutes. Add shrimp and garlic and sprinkle with Greek seasoning. Cook until shrimp are bright pink on the outside and the meat is opaque, 3 to 4 minutes. Remove from the heat and stir in cherry tomatoes, cucumber, and olives.
  • Serve shrimp mixture in romaine leaves and sprinkle with feta cheese.

12 ounces boneless skinless chicken breasts
1 1/2 tablespoons canola oil
1 cup onion, diced
2 garlic cloves, minced
1 teaspoon soy sauce
1/4 cup cashews, chopped
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 tablespoon brown sugar
1/4 teaspoon ground red pepper
1/4 teaspoon ground ginger
1 teaspoon sesame oil
8 leaves iceberg lettuce

Steps:

  • Mix all stir fry sauce ingredients. Set aside.
  • Heat oil over medium high heat and add chicken. Brown chicken (4-5 minutes).
  • Remove chicken from pan and add onions, garlic, and 1 tsp soy sauce. Brown.
  • When onions are tender, return chicken to pan and add cashews. Stir fry for a minute or two to reheat chicken.
  • Add stir fry sauce and saute for a few more minutes.
  • Remove from heat and spoon into lettuce leaves to serve.

In a large nonstick skillet, saute shrimp in 1 teaspoon canola oil for 4-6 minutes or until shrimp turn pink; remove and keep warm. , In the same skillet, saute mushrooms and red onion in remaining oil for 5-8 minutes or until tender. Return shrimp to the pan. Add bean sprouts, cilantro and basil; cook and stir for 1 minute or until heated through. , Remove from the heat; stir in green onions and peanuts. Divide among lettuce leaves; drizzle each with 1 tablespoon sauce. Fold lettuce over filling.

½ teaspoon paprika
¼ teaspoon garlic powder
¼ teaspoon onion powder
1 teaspoon salt
2 heads bibb lettuce, washed and seperated

2 lemons, grilled, for squeezing

Steps:

  • Start by preparing your shrimp. Roughly chop the cooked shrimp into ½" pieces and add to a mixing bowl. Then add the mayo, tarragon, parsley, dill, celery, paprika, garlic powder, onion powder, and salt. Mix well to combine, then set aside and keep chilled. This can be done up to 2 hours before serving.
  • When ready to serve, separate the washed bibb lettuce into individual leaves. Place approximately a ⅓ cup of the shrimp mixture into the center of each piece of lettuce, then top with the finely sliced chives and a generous squeeze of grilled lemon juice. Enjoy!
