CHICKEN TORTILLA CASSEROLE

Steps:
- In a bowl, mix soups, milk, salsa, and onion.
- Put 3 to 4 tablespoons of chicken stock in a 9 x 13 inch baking dish. Add a layer of tortilla strips, and then a layer of chicken. Pour soup mixture over chicken and tortillas. Continue to layer in this order until dish is full. Top with cheese. Cover and refrigerate for 24 hours.
- Bake at 300 degrees F (150 degrees C) for 1 to 1 1/2 hours.

TORTILLA ZUCCHINI CASSEROLE
My grandmother always fixed this for special occasions and it was always a hit. It takes the southern zucchini casserole dish and adds a Mexican flair.

- Preheat oven to 350 degrees F (175 degrees C).
- Heat olive oil in a large skillet; cook and stir zucchini, onion, and bell pepper in hot oil until tender, about 5 minutes. Remove from heat and stir in green chiles, eggs, salt, cumin, garlic powder, and cayenne pepper; set aside. Mix sour cream and flour in a bowl.
- Layer half the corn tortillas in a 9x13-inch baking dish. Spread half the zucchini mixture and half the sour cream mixture on top; sprinkle with half the Cheddar cheese. Repeat the layers.
- Bake in preheated oven until cheese is melted, about 30 minutes.

CORN TORTILLA QUICHE

- In a large skillet, cook the sausage until no longer pink; drain. , Place four tortillas in a greased 9-in. pie plate, overlapping and extending 1/2 in. beyond rim. Place remaining tortilla in the center. Layer with sausage, Monterey Jack and cheddar cheeses and chilies. , In a large bowl, combine the eggs, cream, cottage cheese and chili powder; slowly pour over chilies. Bake at 350° for 45 minutes or until a knife inserted in the center comes out clean. Sprinkle with cilantro. Cut into wedges.

TORTILLA CHIP CRUST FOR SAVORY PIE (QUICHE, MEXICAN PIE, ETC.)
Great use for those extra little pieces at the bottom of the bag, or chips that are going slightly stale. It's extremely easy, made with the same method as a graham cracker crust. I find that a blender or food processor works best for getting these crushed finely enough - roughly the same as graham cracker crumbs. If you're using salted chips, be sure to omit or adjust any salt in your recipe.

- Pat into the bottom and up the sides of a 9-inch pie plate.

TORTILLA-CHIP CASSEROLE

- Heat oil in a large nonstick skillet and add crumbled ground turkey. Cook over medium heat until turkey has lost its pink color.
- Meanwhile, trim and split jalapeno. With food processor on, put garlic and jalapeno through feed tube, and mince. Cut up whole onion into eighths, and add to food processor. Chop coarsely by pulsing. Add to turkey, and continue cooking.
- In food processor, coarsely chop whole peppers, and add to skillet with cumin and coriander. Cook for a couple of minutes to soften peppers.
- Drain tomatoes well, crush whole tomatoes with hands, and add to skillet along with salt, if desired, and pepper. Cook about 5 minutes over high heat to reduce liquid.
- Drain beans and rinse in cold water; grate cheese.
- Remove skillet from heat and spoon out turkey mixture. Arrange beans on skillet bottom; top with a layer of chips, then turkey mixture, then cheese; cover skillet and cook over low heat for 3 or 4 minutes, until cheese melts and mixture is heated.

CASSEROLE QUICHE WITH CRISP-FRIED TORTILLA PIECES
I have been making this for many years. I got it from a Sunset magazine circa 1992. It's great to serve any time, for guests and family alike.You can start preparing the day before if you like, although it's not hard to put together. I have been "modernizing" this of late, and love to sprinkle Smoked Paprika in the meat while it's cooking, what an aroma!Use your choice of bell pepper colors. I hope you enjoy this as much as I have over the years. **You may make the tortilla pieces 1 day ahead of time. You may like to sprinkle the hot tortilla chips with smoked paprika,chile powder, or your favorite Mexican seasoning. I didn't specify as to what type of tortillas to use; use whichever type, corn or flour, that suits your family's likes.

- Cut each tortilla into 8 wedges. Fry in hot vegetable oil until crisp. Drain on paper towels and sprinkle with salt, if desired. Store in an air-tight container(I use a zippered bag).
- Crumble beef into a wide frying pan.Cook over medium heat, stirring occasionally, until meat is browned. Add onion,garlic, and bell pepper; cook for 5 minutes. Stir in salsa, oregano, cumin, and chile powder; season to taste with salt.
- Arrange about half of the tortilla wedges in a greased shallow 3qt. casserole; top evenly with about half of the meat mixture, then half the cheese. Distribute chile strips over the cheese. Top with remaining meat mixture and cheese. Tuck the remaining tortilla wedges, with points up, around edge of dish. Beat together eggs, milk, and ¼ teaspoons salt; pour over top. Bake in a 375°F oven until top feels set when lightly touched (25 to 30 minutes). Garnish with olives, if using.
