Savor Cat Cora's Crispy Baked "Fried" Chicken recipe from Food Network Magazine: Corn flakes make it crispy, while paprika, cayenne and sage give it spice.

8 chicken pieces (preferably 2 breasts, 2 thighs, 2 legs and 2 wings)
1/2 cup all-purpose flour
Kosher salt and freshly ground pepper
4 cups cornflakes
2/3 cup buttermilk
2 tablespoons Dijon mustard
1/4 teaspoon cayenne pepper
1 1/2 teaspoons paprika
3/4 teaspoon ground sage
Serving suggestion: Easy Greens, recipe follows

Steps:

  • Preheat the oven to 425 degrees. Place a rack in a roasting pan or on a baking sheet.
  • Rinse the chicken in cold water; pat dry. In a wide bowl or on a plate, season the flour with salt and 1/4 teaspoon pepper. Dredge each chicken piece through the flour so it's fully coated, tap against the bowl to shake off excess flour and set aside. Discard the flour.
  • Here comes the part kids like best: Crush the cornflakes by placing them in a big resealable plastic bag, carefully pressing the bag to push out the air. Seal up the bag (with as little air inside as possible) and run over the flakes with a rolling pin. Open the bag and pour the crushed flakes into a wide bowl or onto a plate.
  • In a large bowl (big enough to dredge the chicken pieces), mix the buttermilk, mustard, cayenne pepper, paprika and sage. Give each floured chicken piece a good buttermilk bath and then roll in the cornflake crumbs.
  • Arrange the chicken pieces on the rack and place in the hot oven. Cook for 15 to 20 minutes, lower the heat to 375 degrees and cook for another 25 to 30 minutes, until cooked through and crispy. The juices should run clear when the meat is pierced with a knife. Serve with Easy Greens.

5 tablespoons unsalted butter, plus more for the pan
3/4 cup all-purpose flour
3/4 cup yellow cornmeal
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
1 cup buttermilk (shake before measuring)
2 large eggs

Steps:

  • Preheat the oven to 425 degrees F and position a rack in the middle. Butter an 8-inch-square baking pan.
  • Melt the butter in the microwave in a microwave-safe dish in three 15-second intervals on high or in a small pan on the stove. Set it aside to cool.
  • In a bowl, whisk together the flour, cornmeal, baking powder, baking soda and salt.
  • In a large bowl, whisk together the buttermilk and the eggs. Add the melted butter. Add the flour-cornmeal mixture and stir just until combined. Pour the batter into the pan. Bake until the cornbread just begins to brown and a toothpick inserted in the center comes out clean, 18 to 23 minutes. Cool for about 10 minutes before serving.

1/2 cup dry coleman's mustard (about a 2-oz. can)
1/2 cup granulated sugar
1 pinch kosher salt
1 tablespoon all-purpose flour
1/2 cup apple cider vinegar
9 ounces prepared yellow mustard
1 tablespoon unsalted butter, melted
1 cup pomegranate juice
1 cup balsamic vinegar (a good balsamic, but not your most expensive bottle)

Steps:

  • Mix together the dry mustard, sugar, salt and flour.
  • Stir the vinegar, yellow mustard and butter into the mixture until well combined.
  • Refrigerate the mustard for at least 24 hours, which intensifies the heat.
  • To make a glaze for turkey, combine ½ cup of the mustard with 1 cup of pomegranate balsamic reduction (recipe follows).
  • Pomegranate Balsamic Reduction.
  • Heat over medium-low heat for 15-20 minutes or until the reduction is syrupy, but not as thick as molasses.

4 tablespoons honey
2 tablespoons sugar (to rim the glasses)
3 -4 limes (medium-to-large & very juicy)
3 -4 lemons (medium-to-large & very juicy)
12 -14 mint sprigs (rinsed in cool water)
6 ounces light rum (3/4 cup)
4 cups ice cubes
4 ounces club soda (1/2 cup)
ouzo

Steps:

  • Place a sheet of aluminum foil in your freezer so you have a spot to chill your sugar-rimmed glasses.
  • Pour 2 tablespoons of sugar into a small, flat saucer. Halve 1 of the limes crosswise. Cut one half into slices and set aside for garnish.
  • Holding a glass upside down so lime juice doesn't run down the outside, rub the cut surface of one of the limes around the glass's rim. Immediately dip the glass into the saucer of sugar to coat the rim all the way around. Gently shake off any excess sugar and carefully place the glass upright into your freezer on the sheet of foil.
  • Repeat with the other 3 glasses using same lime half.
  • Juice the remaining limes and the lemons and set aside. You should have 6 to 8 tablespoons of the lime and lemon juice mixture.
  • If you'd like to add fine mint ribbons to your drinks, stack 4 to 6 mint leaves per serving, roll the leaves up like a cigar, and cut across the roll, slicing the mint into fine strips. Set these aside and with your hands, tear apart 5 or 6 mint sprigs and toss them into a cocktail shaker.
  • Pour in the lime and lemon juice, rum, and the remaining honey. Using a wooden spoon, muddle this together, crushing the mint leaves to release all that fragrant mint oil. Cap shaker and shake well.
  • Remove sugar-rimmed glasses out of the freezer toss a handful of ice into each glass. Strain the drinks from the cocktail shaker into the glasses. Divide the mint ribbons, if you like, among the four glasses, and top off each glass with a splash of club soda.
  • Garnish each with a slice of lime and sprig of mint. Finish with a splash of Ouzo.

1 large head fennel, finely chopped (about 2 cups)
2 cups orange juice
1/4 cup firmly packed brown sugar
1/4 teaspoon ginger, ground
1 large orange
1 tablespoon fresh cilantro, finely chopped
1 teaspoon salt

Steps:

  • Mix fennel, orange juice, sugar and ginger in large saucepan. Bring to boil on medium heat. Reduce hear to low; simmer 45 minutes.
  • Meanwhile, finely grate orange peel. Remove orange sections and coarsely chop. Stir grated peel and chopped orange into fennel mixture.
  • Simmer 15 minutes longer or until mixture is reduced and somewhat thick, Stir in cilantro and salt. Cover.
  • Refrigerate until ready to serve.

1/2 cup flour
1 teaspoon salt
1/4 teaspoon black pepper
2 cups corn flakes
1/2 cup buttermilk
1 tablespoon Dijon mustard
1/4 teaspoon mustard seeds, ground
1 teaspoon ground red pepper
1 teaspoon paprika
1/2 teaspoon rubbed sage
1 tablespoon sesame seeds

Steps:

  • Preheat oven to 425 degrees.
  • Pour 2 teaspoons olive oil nto baking dish large enough to hold 6 chicken pieces. Rub oil over dish with your fingers so it's completely but lightly coated. Set aside.
  • Rinse chicken in cold water and pat dry.
  • In wide bowl or plate, season flour with salt and pepper. Dredge each piece of chicken through flour so it's completely coated. Tap chicken against bowl to jar loose excess flour and set pieces aside. Discard flour.
  • Crush corn flakes by placing them in large resealable plastic bag, carefully pressing bag to push out air. Seal up bag and run over flakes with a rolling pin. Open bag and pour crushed flakes into a wide bowl or plate.
  • In large bowl, mix buttermilk, mustard, ground mustard, red pepper, paprika, sage and sesame seeds. Give each floured chicken piece a good buttermilk bath and then roll in corn flake crumbs.
  • Arrange chicken pieces in oiled baking dish and slide the dish into hot oven. Cook for 15-20 minutes, lower heat to 375 and cook for another 25-30 minutes until cooked through and crispy. Juices should run clear when meat is pierce with a knife. Serve.

1 1/2 lbs boneless skinless chicken thighs
1/2 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper
1 tablespoon extra virgin olive oil
1/4 cup minced shallot
1/4 cup marsala wine
3/4 cup chicken stock
1 teaspoon Dijon mustard
1 teaspoon fresh tarragon, minced
1/4 cup sour cream

Steps:

  • Cut chicken into 1 inch chunks and season with salt and pepper. Heat oil over medium heat in a large saucepan. Add shallots and saute about 3 minutes, or until they are a light golden color. Turn heat to medium high, add chicken, and cook until golden and almost cooked through, about 5 minutes. Transfer the chicken and shallots to a plate.
  • Turn heat to high and use Marsala to deglaze the pan, scraping up any browned bits from the bottom. Boil until liquid is reduced by half. Add chicken stock and boil until liquid starts to look syrupy. Reduce heat and pour any juices that have accumulated on the plate into the pan. Add the mustard and tarragon and simmer for 3 minutes. Turn off heat and whisk in sour cream until smooth. Turn heat to low and taste, add additional salt and pepper if needed.
  • Add chicken and shallots back to pan and warm through, do not allow to boil. Serve with noodles or rice.
