Sweet Potato Cheese Sauce (+ more Dairy-free Cheese Sauce Recipes) image

This easy coconut-free sauce is so creamy and dreamy! It's AIP, Paleo, and Whole30.

2 cups cooked and cooled white sweet potato ((skin peeled off))
1 cup+ water
1/4 cup extra virgin olive oil
1/4 cup nutritional yeast flakes
1/2 juiced lemon or 2 tsp apple cider vinegar
1/4 tsp sea salt
1/2 tsp garlic powder

Steps:

  • Blend all ingredients in a high-speed blender until your sauce forms, add more water as needed to loosen and use in cooking or store for up to 5-days in the fridge.

Number Of Ingredients 9

2 c cauliflower florets
½ c reserved water from steaming
1 tbsp coconut oil
1.5 tsp lemon juice
½ tsp salt, or to taste
½ tsp turmeric
¼ tsp granulated garlic*
1 tsp gelatin (best if derived from grassfed cattle such as the Great Lakes brand)
⅛ tsp dry mustard powder or ¼ tsp of mustard (This is an option provided you aren't following the strict, elimination phase of AIP.)

Steps:

  • Steam cauliflower florets until soft. Drain and reserve ½ c steaming water.
  • Place cauliflower in a high-speed blender or food processor along with the reserved water. Add all other ingredients and process until smooth.
  • The sauce can be used right away or refrigerated for later use. If reheating, do so in a small saucepan over medium heat.
  • * I like to use Morton & Bassett Spices, which are free of many nasties.

1 large head cauliflower
1-1/2 teaspoons salt
3 tablespoons butter
3 tablespoons all-purpose flour
1/2 teaspoon dried thyme
1-1/2 cups milk
1-1/2 cups shredded cheddar cheese
Paprika
Minced fresh parsley

Steps:

  • In a large saucepan, bring 1 in. of water, cauliflower and salt to a boil. Reduce heat; cover and cook for 5-15 minutes or until cauliflower is crisp-tender. , Meanwhile, in a small saucepan, melt butter; stir in flour and thyme until blended. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat; add cheese, stirring until melted., Drain and pat cauliflower dry; place on a serving platter. Top with cheese sauce; sprinkle with paprika and parsley. Cut into wedges.
