Special Cauliflower Side Dish image

This is my favorite way to prepare cauliflower. The topping adds color and enhances the flavor with a little zip. -Rita Reinke, Wauwatosa, Wisconsin

Number Of Ingredients 8

4 cups fresh cauliflowerets
2 tablespoons plain yogurt
2 tablespoons mayonnaise
1 teaspoon Dijon mustard
1/4 teaspoon dill weed
1/4 teaspoon salt
1/4 teaspoon garlic powder
1/2 cup shredded cheddar cheese

Steps:

  • Preheat oven to 350°. Place cauliflower in a steamer basket; place in a large saucepan over 1 in. of water. Bring to a boil; cover and steam 6-8 minutes or until crisp-tender. , Meanwhile, in a small bowl, combine yogurt, mayonnaise, mustard, dill, salt and garlic powder., Transfer cauliflower to an ungreased 3-cup baking dish; top with yogurt mixture and cheese. Bake, uncovered, 8-10 minutes or until heated through and cheese is melted.

Number Of Ingredients 5

2 (16 ounce) packages frozen cauliflower
¼ cup butter
¼ teaspoon ground black pepper
½ teaspoon salt
1 clove garlic, minced

Steps:

  • Place cauliflower in a pot with enough water to cover. Bring to a boil and cook 10 minutes, or until tender. Drain and return cauliflower to pot.
  • Stir butter, black pepper, salt, and garlic into cooked cauliflower.
  • Mash cauliflower mixture with a potato masher or whisk until a smooth consistency similar to mashed potatoes.

1 head cauliflower, quartered
1 tablespoon butter
1 cup minced onion
3 tablespoons butter
½ cup Italian-seasoned dry bread crumbs
salt and black pepper to taste

Steps:

  • Place the cauliflower into a large pot and cover with water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until fork-tender, 5 to 7 minutes. Drain and allow to steam dry for a minute or two; chop into bite-size pieces.
  • Melt 1 tablespoon butter in a skillet over medium-high heat. Cook the onion in the butter until the onion is browned, about 5 minutes. Add 3 tablespoons of butter and cook until the butter is melted. Stir in the bread crumbs and cook until the mixture bubbles. Mix the cauliflower into the skillet and cook until the cauliflower is warm, 3 to 5 minutes. Season with salt and black pepper; serve hot.

100 g cashews
25 g butter
1/4 teaspoon curry powder
1/4 teaspoon cumin
1/4 teaspoon garam masala
1/4 teaspoon turmeric
mayonnaise (done to eye)
1 cauliflower

Steps:

  • Fry cashews in melted butter with curry, cumin, marsala and turmeric--watching cashews very carefully frying until golden brown (they burn easily).
  • Wash cauliflower and break into individual florets.
  • When cashews are cooked, mix with mayonnaise and pour over cauliflower; refrigerate (must be eaten same day).
