Steps:
- Heat oven to 475 degrees F.
- Put cauliflower and onions, then oil, salt and pepper in a heavy-bottomed roasting pan; toss to mix and coat.
- Roast 40-45 minutes, tossing vegetables every 15 minutes, until lightly charred and tender.
- Add olives, cheese and parsley; toss to combine.
- Transfer to a large serving bowl.
- Serve hot, warm or at room temperature.
BAKED CAULIFLOWER
I created this recipe myself. The cheddar cheese and bread crumb topping makes it a pretty casserole for a holiday dinner. You can easily double the amounts if you're having a larger group.

Steps:
- In a large skillet, saute onion in 2 tablespoons butter and oil until onion is tender. Add garlic; cook 1 minute longer. Stir in the cauliflower, salt, pepper and nutmeg; saute for 2 minutes., Transfer to a greased 1-qt. baking dish. Melt remaining butter; toss with bread crumbs. Sprinkle over cauliflower mixture. , Cover and bake at 350° for 15 minutes. Uncover; bake for 10 minutes or until heated through. Sprinkle with cheese; bake 3-5 minutes longer or until cheese is melted.

ROASTED CURRIED CAULIFLOWER AND ONION
A delicious, simple dish of roasted curried cauliflower and onion with the flavors of India. It is quite flavorful so I recommend serving it with a milder main dish, with some plain yogurt on the side and chapatis (Indian flat bread).

Steps:
- Preheat the oven to 400 degrees F (200 degrees C).
- Place cauliflower florets in a large roasting pan. Pull apart onion quarters into separate layers and set aside.
- Heat a small skillet over medium heat. Cook and stir coriander seeds and cumin seeds in the hot pan until slightly darkened, about 5 minutes. Remove from heat, crush coarsely with a mortar and pestle, and transfer to a medium bowl.
- Add oil, vinegar, curry powder, garlic, paprika, chili powder, cumin, and salt to the crushed seeds; whisk to combine. Pour dressing over cauliflower; toss to coat. Spread in a single layer in the pan and sprinkle with pepper.
- Roast in the preheated oven, stirring occasionally, about 20 minutes. Add onions and stir thoroughly. Continue to roast, stirring occasionally, until vegetables are tender, about 15 minutes more. Garnish with cilantro.

CAULIFLOWER CHEDDAR BAKE
"NEBRASKA, where I grew up, is a farming state, and we always had lots of vegetables at our table. This recipe has got to be one of the easiest and best-tasting ways to serve cauliflower. I have to admit that cauliflower is not a favorite vegetable with a lot of people-especially children-and that's why the addition of cheddar cheese makes it a winner every time!"

- In a large saucepan, place 1 in. of salted water; add the cauliflower. Bring to a boil. Reduce heat; cover and simmer for 4-6 minutes or until crisp-tender. Drain. , Stir in the cheese, sour cream, onion, 2 tablespoons butter and salt. Transfer to a greased 1-1/2-qt. baking dish. , Combine the bread crumbs and remaining butter; sprinkle over the top. Bake, uncovered, at 350° for 30 minutes or until heated through.

- Cut cauliflower into bite-sized pieces.
- Prepare creamed onions according to package directions. In saucepan, place 1 1/2 cups water, 2 tablespoons butter and the 2 packages frozen onions. Cover and bring to boil over medium-high heat. reduce heat and simmer, covered, 4 minutes, stirring occasionally.
- Remove from heat. Stir until sauce thickens. Add cauliflower, shredded cheese, almonds and parsley into creamed onions. Turn into 1 1/2 quart casserole.
- Bake, uncovered, in 350° oven for 35 minutes or until bubbly and heated through.
- Top with French-fried onions. Bake 5 minutes more. Garnish with a few additional French-fried onions at serving time.
