MEXICAN PAELLA WITH CAULIFLOWER RICE
A deliciously tempting, grain-free paella made Mexican style with flavorful chorizo. This recipe has a wonderful earthy background flavor and a deep color. It makes a beautiful presentation for dinner.

- Place paella pan or large flat-bottomed pan over medium-high heat. Cook and crumble chorizo sausage, stirring to break up chunks, until browned, about 5 minutes. Add chicken; cook and stir with sausage until chicken is no longer pink instead and is browned. Transfer chicken and sausage to a plate.
- Reduce heat to medium and add 2 cups of the cauliflower rice. Cook, stirring for 5 minutes to brown the cauliflower slightly (this brings out a nutty flavor). Add the diced onion and bell pepper. Season with a pinch of salt, and pepper to taste. Add the minced garlic. Cook 2 minutes longer.
- Pour canned tomatoes into pan. Add bay leaves, thyme leaves, saffron, and basil. Mix well. Transfer sausage and chicken mixture back to pan. Add water, tomato paste, and bouillon. Stir to combine all ingredients. Bring to a boil; reduce heat to medium-low and cover. Simmer 15 minutes.
- Remove lid and fold in peas and remaining 1 cup of cauliflower rice. Place frozen tilapia filets on top of the paella mixture, cover and steam for another 10 minutes. Remove lid and check for doneness. Gently break apart fillets with wooden spoon, and stir to incorporate chunks of fish into paella.
- Serve from the pot at the table!

ROASTED VEGETABLE PAELLA

- Preheat the oven to 425 degrees. Position two racks evenly spaced in the oven.
- Put the bell peppers, fennel, eggplants, and red onion in a large bowl, add 1/2 cup olive oil, 1 tablespoon salt, and 1 teaspoon black pepper, and toss. Divide the vegetables between two sheet pans and spread in one layer. Roast for 45 minutes, tossing occasionally.
- Meanwhile, heat 3 tablespoons of olive oil over medium heat in a 14- to 16-inch paella pan or large (11-inch) Dutch oven, such as Le Creuset. Add the yellow onions and saute for 6 to 8 minutes, until tender. Add the garlic and saffron and cook for one minute. Add the rice and cook for 2 minutes, stirring to coat the rice with oil. Place the jarred peppers (including their liquid) and paprika in the bowl of a food processor fitted with the steel blade and process until pureed. Pour the mixture into the paella pan, stirring to combine, and bring to a boil. Add 1 cup of the hot stock and 2 teaspoons salt and cook uncovered over medium heat for 6 to 8 minutes, stirring occasionally, until the liquid is mostly absorbed, as you would cook risotto. Continue to cook the rice over medium heat for about 20 minutes, stirring in 1 cup of hot stock at a time whenever the liquid is absorbed, until the rice is al dente
- Add the vegetables to the paella, add one more cup of stock, and stir carefully. If the paella is dry, add more hot stock. Off the heat, stir in the Manchego cheese, olives, and scallions. Taste for seasonings and serve hot.
VEGETABLE PAELLA

- Heat 3 cups water in a saucepan over high heat until steaming; reduce the heat to low and cover to keep hot. Heat 1 tablespoon olive oil in a paella pan or very large skillet over medium-high heat. Add the cauliflower and season with salt and pepper. Cook, stirring occasionally, until browned in spots, about 2 minutes. Transfer to a bowl.
- Add 2 more tablespoons olive oil to the skillet. Add the mushrooms in an even layer and season with salt and pepper. Increase the heat to high and cook, stirring, until browned and tender, 4 to 5 minutes.
- Add the remaining 1 tablespoon olive oil, the scallion whites, garlic and paprika; stir until the paprika is toasted, 30 seconds. Stir in the wine and cook until the pan is almost dry, about 1 minute. Add 3 cups hot water, the cauliflower, rice, 1 teaspoon salt and a few grinds of pepper. Stir once to distribute the ingredients but don?t stir again. Bring to a boil, then reduce the heat to medium low; cover with a lid or foil and cook until the liquid is absorbed and the rice is tender, about 14 minutes.
- Uncover and arrange the roasted pepper and olives on top. Increase the heat to medium to crisp the bottom, moving the pan for even browning, about 1 more minute. Top with the parsley and scallion greens.

- Place cauliflower florets into a food processor or blender. Pulse for about 10-20 seconds until cauliflower resembles a rice texture. Do not over pulse, or it will become mushy. Set aside.
- Heat a large skillet over medium heat. Add 1 tbsp oil, then saute garlic and onion for 3-4 minutes. If using raw chorizo, add it here and cook for 4-5 minutes. Now add bell pepper and cauliflower rice. Continue to saute for 5-6 minutes, consistently stirring.

- Cut a large head of cauliflower into 4 quarters, remove the leaves from the stalk and rinse the cauliflower under cold running water, shake off any excess water and then cut off the stalks from the cauliflower pieces and pulse in a food processor for about 20 seconds to get the cauliflower rice
- Finely mince 4 cloves of garlic, roughly dice 1 red bell pepper, cut 1 tube of squid into small squares and season 15 jumbo shrimp that have been peeled and deveined with sea salt and freshly cracked black pepper
- Heat a paella pan with a medium-high heat and add a 1/4 cup of extra virgin Spanish olive oil, 1 minute after adding the oil add the shrimp seasoned side down and cook for 1 minute per side, then remove the shrimp from the pan and set aside, add the diced bell peppers and mix with the oil, about 3 minutes later make a well in the middle and add the cut squid, mix around with the oil and cook for 1 minute, then make another well in the pan and add the minced garlic, 30 seconds after adding the garlic add a generous 1/2 teaspoon of smoked paprika, season with sea salt and a kiss of freshly cracked black pepper and mix everything together, then add 1/2 cup of tomato puree and season again with sea salt and mix together
- About 3 minutes after adding the tomato puree add 4 cups of the cauliflower rice into the pan along with 1 packet of saffron in powder form and some sea salt and mix everything together until well combined, then lower the fire to a LOW heat and add the shrimp back into the pan along with 8 fresh mussels, cover the pan with foil paper and cook for about 8 minutes, then remove the pan from the heat and let it rest for about 5 minutes

- Sauté the onion over a medium high heat until soft, about 3-5 minutes. Add the chicken and chorizo sausage. Season and cook until it is all evenly seared.
- Add the tomato, garlic, saffron, cauliflower and a little splash of broth (not the entire 1/2 cup). Be very careful with the broth as all the veggies release their own liquid and you don't want the dish to be too watery. Only add more if needed.
- When the cauliflower is just about cooked, after about 6-8 minutes, add the scallops, shrimp and peas and cook for another minute.
