Cauliflower replaces the potatoes in this comforting casserole, which I've been making for 30 years. Whenever we have leftover ham, my husband asks me to make this dish. -Sue Herlund, White Bear Lake, Minnesota

4 cups chopped fresh cauliflower
1/4 cup butter, cubed
1/3 cup all-purpose flour
2 cups 2% milk
1 cup shredded cheddar cheese
1/2 cup sour cream
2 cups cubed fully cooked ham
1 jar (4-1/2 ounces) sliced mushrooms, drained
TOPPING:
1 cup soft bread crumbs
1 tablespoon butter, melted

Steps:

  • Place cauliflower in a large saucepan; cover with 1 in. water. Bring to a boil. Reduce heat; cover and simmer for 5-10 minutes or until tender. , Meanwhile, in another large saucepan, melt butter. Stir in flour until smooth; gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat. Stir in the cheese and sour cream until melted. , Drain cauliflower. In a large bowl, combine the cauliflower, ham and mushrooms. Add cheese sauce and toss to coat. Transfer to a greased 2-qt. baking dish. , Combine topping ingredients; sprinkle over casserole. Bake, uncovered, at 350° for 40-45 minutes or until heated through.

1 large cauliflower, steamed and broken into small florets
1/2 lb diced black forest ham
2 large egg yolks, lightly beaten
1/2 cup sour cream
1/2 cup heavy cream (I'm sure lighter cream will work as well)
1/4 teaspoon nutmeg
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/2 cup fine dry breadcrumb (unseasoned)
1/4 cup grated parmesan cheese
2 tablespoons unsalted butter, cut into bits

Steps:

  • Preheat oven to 375. Butter a 5 cup gratin dish and set aside.
  • For the cauliflower mixture:.
  • Take steamed cauliflower florets and arrange in a single layer in the gratin dish.
  • Sprinkle the ham evenly over the cauliflower.
  • Whisk together the egg yolks, sour cream, heavy cream, nutmeg, salt and pepper and pour evenly over ham and cauliflower.
  • For the topping:.
  • Toss the crumbs and parmesan well to combine, then scatter evenly over the cauliflower mixture. Dot well with butter.
  • Bake uncovered 25-30 minutes, until bubbling and lightly browned.
  • Serve at once.

1 (3-pound) head cauliflower, cut into large florets
Kosher salt
4 tablespoons (1/2 stick) unsalted butter, divided
3 tablespoons all-purpose flour
2 cups hot milk
1/2 teaspoon freshly ground black pepper
1/4 teaspoon grated nutmeg
3/4 cup freshly grated Gruyere, divided
1/2 cup freshly grated Parmesan
1/4 cup fresh bread crumbs

Steps:

  • Preheat the oven to 375 degrees F.
  • Cook the cauliflower florets in a large pot of boiling salted water for 5 to 6 minutes, until tender but still firm. Drain.
  • Meanwhile, melt 2 tablespoons of the butter in a medium saucepan over low heat. Add the flour, stirring constantly with a wooden spoon for 2 minutes. Pour the hot milk into the butter-flour mixture and stir until it comes to a boil. Boil, whisking constantly, for 1 minute, or until thickened. Off the heat, add 1 teaspoon of salt, the pepper, nutmeg, 1/2 cup of the Gruyere, and the Parmesan.
  • Pour 1/3 of the sauce on the bottom of an 8 by 11 by 2-inch baking dish. Place the drained cauliflower on top and then spread the rest of the sauce evenly on top. Combine the bread crumbs with the remaining 1/4 cup of Gruyere and sprinkle on top. Melt the remaining 2 tablespoons of butter and drizzle over the gratin. Sprinkle with salt and pepper. Bake for 25 to 30 minutes, until the top is browned. Serve hot or at room temperature.

This Low-Carb Ham and Cauliflower Casserole Au Gratin is definitely a treat for low-carb and Keto comfort food.

6 cups raw cauliflower flowerets, cut fairly small
1/2 tsp. salt (for water to cook cauliflower)
2 cups diced ham
4 oz. cream cheese, softened
3/4 cup Greek yogurt (see notes)
2 T finely-grated Parmesan cheese
1/4 cup thinly sliced green onions
fresh ground black pepper to taste
3/4 cup grated cheddar cheese (see notes)

Steps:

  • Preheat oven to 350F/180C.
  • Fill a medium-sized pot half full with water, add 1/2 tsp. salt, and start to bring to a boil.
  • Cut up the cauliflower into small flowerets, discarding the leaves and core.
  • Put cauliflower pieces into the water and cook at a low boil until the cauliflower is starting to get barely sort. Check it often and don't overcook; the cauliflower will soften more in the oven.
  • While cauliflower is cooking, cut the ham into very small cubes and slice green onions.
  • Put cream cheese into a glass dish or measuring cup and soften it in the microwave for a few minutes. (Or you can soften it on top of the pre-heating oven if you don't have a microwave.) When cream cheese is soft stir in the Greek yogurt (or sour cream), Parmesan, and sliced green onions.
  • When cauliflower is cooked enough to start to soften, pour into a colander placed in the sink and let it drain well (at least 5 minutes; don't rush this step)
  • Put the drained cauliflower back into the pot you cooked it in and mash with a potato masher until it's barely mashed with quite a few chunks left.
  • Stir in the sauce mixture and combine well with the cauliflower; then gently mix in the diced ham.
  • Season to taste with fresh-ground black pepper. (I didn't use salt because the ham and the Parmesan are both salty.)
  • Spray glass or crockery casserole dish with non-stick spray or olive oil. (I used a glass casserole dish that was about 8" x 10".) Pour cauliflower mixture into the dish, spread out evenly, and sprinkle with the cheese.
  • Bake 30-35 minutes, or until the cheese is melted and lightly browned and all the mixture is hot throughout and starting to bubble. Let sit 10 minutes for any liquid to be absorbed, then serve hot.
  • I am assuming that this freezes well, but I still haven't tried freezing it because I never have any leftovers.

1 bag (24 oz) Value Size frozen cauliflower & three cheese sauce
1 box (10 oz) frozen prepared rice
6 tablespoons butter
1 medium onion, finely chopped (1/2 cup)
3 tablespoons Gold Medal™ all-purpose flour
1 teaspoon ground mustard
1 cup milk
2 cups chopped fully cooked ham
2 large poblano chiles, roasted, stemmed, peeled, seeded, sliced
1/2 cup Progresso™ plain panko crispy bread crumbs

Steps:

  • Heat oven to 350°F. Spray 2 1/2-quart shallow casserole with cooking spray. Cook frozen cauliflower as directed on bag. Cook frozen rice as directed on package. Set aside.
  • In 4-quart saucepan, melt 3 tablespoons of the butter. Cook onion in butter about 4 minutes, stirring occasionally, until softened. Stir in flour and mustard with whisk; cook about 1 minute. Slowly stir in milk. Cook and stir until bubbly and slightly thickened. Stir in cooked cauliflower, ham and chile slices. Spoon into casserole.
  • In small microwavable bowl, microwave remaining 3 tablespoons butter uncovered on High about 1 minute or until melted; stir in bread crumbs. Sprinkle over vegetable mixture in casserole.
  • Bake 25 to 30 minutes or until bubbly around edge. Let stand 5 minutes before serving.

2 cups cubed cooked ham
1 1/2 cups mushrooms, sliced
2 tablespoons butter or 2 tablespoons margarine
2 tablespoons flour
1 cup milk (2% is OK)
salt and pepper
1 cup aged cheddar cheese, grated
1/2 cup sour cream
1 tablespoon dry breadcrumbs
salt and pepper

Steps:

  • Mix cooked cauliflower ham and mushrooms.
  • Season with salt and pepper.
  • Melt butter in a sauce pan and stir in the flour.
  • Stir in the milk and cook until it has thickened.
  • Stir in the sour cream and cheese; stir until the cheese has melted and the sauce is smooth Put ham and cauliflower in to an ungreased 3 quart casserole dish.
  • Pour sauce over top.
  • You make now let this sit in the fridge until 40 minutes before dinner or continue to the finish- Preheat oven to 350°F.
  • Sprinkle with crumbs.
  • Put in the oven for 30-40 minutes or until heated through.
