Cavatappi Pasta with Turkey Italian Sausage, Mushrooms, Tomatoes, and Kale image

8 oz of cavatappi pasta (cooked per instructions)
5 links of turkey Italian sausage (casings removed)
8 oz of button mushrooms (sliced)
3 cloves of garlic (minced)
1 cup of grape tomatoes (halved)
1 cup of kale (chopped)
1/2 cup of chicken broth
Sea salt and freshly cracked pepper (to taste)
Parmesan cheese (shredded)

Steps:

  • Cook the pasta in salted water per instructions. Drain, reserving 1/4 cup of liquid.
  • While the pasta is cooking, heat a teaspoon of olive oil in a large skillet over medium-high heat. Remove the sausage from its casings and place it into the skillet and cook, breaking it up into smaller pieces. Cook until it browns, about 3 minutes.
  • Add the mushrooms and cook, stirring occasionally, for 3-4 minutes, or until the mushrooms are golden brown. Add the minced garlic, tomatoes, and kale, and cook for about 3 more minutes.
  • Add the broth to the skillet and season with sea salt and freshly cracked pepper, to taste. Add the cooked/drained pasta to the skillet, and toss to coat evenly. Add some of the reserved pasta water if needed.
  • Place into serving bowls and top with Parmesan cheese. Enjoy.

8 ounces cavatappi or other corkscrew pasta
12 ounces loose lean turkey sausage
1/4 cup extra-virgin olive oil
1 small onion, finely diced
1 large clove garlic, grated
2 teaspoons herbes de Provence
1 28-ounce can crushed tomatoes
Freshly ground pepper
1 cup part-skim ricotta cheese
1/2 cup shredded Italian cheese blend
1 teaspoon grated lemon zest, plus 1 tablespoon lemon juice
1 romaine lettuce heart, chopped

Steps:

  • Preheat the oven to 500˚ F. Bring a large pot of salted water to a boil. Add the pasta and cook 2 minutes less than the label directs for al dente. Reserve 1 cup cooking water, then drain.
  • Meanwhile, cook the sausage in 1 tablespoon olive oil in a large skillet over medium-high heat, breaking up the meat, until browned, 5 to 6 minutes. Remove to a plate using a slotted spoon.
  • Heat 1 more tablespoon olive oil in the skillet over medium-high heat. Add the onion and cook until tender, about 5 minutes. Add the garlic and herbes de Provence and cook 30 seconds. Stir in the tomatoes, sausage and 1/4 cup of the reserved cooking water; season with salt and pepper. Bring to a gentle boil, then reduce the heat and simmer until thickened, 3 to 5 minutes. If the sauce is too thick, add a bit more cooking water. Stir the pasta into the sauce.
  • Whisk the ricotta, 1/4 cup cheese blend, the lemon zest, 1/2 teaspoon each salt and pepper and 3 tablespoons cooking water in a bowl. Layer half of the pasta and ricotta mixture in an 8-inch square baking dish, then top with the remaining pasta, ricotta mixture and cheese blend. Bake until bubbly, 8 to 10 minutes.
  • Toss the lettuce with the lemon juice and remaining 2 tablespoons olive oil; season with salt and pepper. Serve with the pasta.

1 bunch black kale, washed, ribs removed
4 Italian sausages (mild or hot)
1/2 pound shiitakes (or brown mushrooms), washed, thinly sliced
4 garlic cloves, peeled, finely chopped
4 shallots, peeled, finely chopped
1 tablespoon olive oil
2 cups chicken stock or pasta water
1 tablespoon sweet butter
Sea salt and pepper
1/2 cup grated Parmesan or Romano cheese
1 box pasta (spaghetti, ziti, penne, or fusili)
1 tablespoon kosher salt for the pasta

Steps:

  • Make the pasta in boiling salted water, drain (reserve 2 cups of the pasta water if you're making the vegetarian version), drizzle with olive oil, season with sea salt and black pepper, toss and set aside.
  • Sauté with olive oil or grill the sausages to put a crust on the outside, drain on a paper towel, cut into 1/4-inch rounds, then set aside. In a hot pan lightly brown the kale with the olive oil and remove. Add the shiitakes, shallots, and garlic, and sauté until lightly browned. Turn down the heat to medium. Return the kale to the pan along with the sausages, stock, and butter. Braise for 15 minutes. The liquid should reduce by half.
  • Taste and adjust the seasoning with sea salt and pepper. Add the cooked pasta, toss to coat with the sauce. Serve with grated cheese.

2 tablespoons olive oil
1 clove garlic, peeled and minced
1 shallot, peeled and sliced
1/2 lb spicy italian sausage, casings discarded
1/2 lb kale, tough stems and center ribs discarded and leaves coarsely chopped
1/2 lb dried cavatappi, cavatelli or gemelli
28 oz can whole tomatoes in puree
1/3 cup half & half
1 oz finely grated Pecorino Romano

Steps:

  • Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then cook shallot & garlic a couple minutes, stirring well so that garlic doesn't burn. Add sausage, breaking up with a wooden spoon, until browned, 5 to 7 minutes.
  • Meanwhile, in a large pot, bring salted cooking water to a boil, then cook pasta uncovered until al dente.
  • While pasta cooks, add kale and 1/4 cup water to sausage in skillet and sauté, stirring frequently, for about 5 minutes until the kale is tender and wilting. Drain off a couple tablespoons of tomato purée from the can, then add entire can of tomatoes, breaking up w/ back of spoon so the tomatoes are in large chunky pieces. Simmer for a few minutes. Add a few swirls of half & half and stir into sauce. Add pasta to skillet, tossing until well-combined. Season with salt & pepper and top with grated parmesan.

1 tablespoon extra virgin olive oil
3/4 to 1 pound Italian sausage, sweet or hot, cut into 1-inch pieces
1 pound kale, leaves stripped from stems, stems reserved
3/4 pound trimmed and sliced mushrooms
1 tablespoon roughly chopped garlic
1 tablespoon hot paprika or dried red chili flakes, or to taste
Salt and pepper
2 cups chicken stock or water

Steps:

  • Put olive oil in large deep skillet or casserole, and turn heat to medium-high; a minute later, add sausage and cook without stirring until well browned on one side, about 5 minutes. Meanwhile, chop kale stems into 1/2-inch lengths and shred leaves.
  • Stir sausage and let it brown a bit more. Remove it with a slotted spoon (don't worry if it isn't cooked through). Cook mushrooms in remaining fat, stirring occasionally, until lightly browned, about 10 minutes. Remove with a slotted spoon and keep warm.
  • Add kale stems and cook, stirring frequently, until they begin to brown, in 3 or 4 minutes. Turn heat to medium and add garlic, paprika or chili flakes, kale leaves, salt and pepper; stir and cook about 1 minute. Return sausage to pan and add stock or water. Raise heat to high and cook about 5 minutes, stirring occasionally and scraping bottom of pan with wooden spoon. Add salt and pepper to taste, ladle stew into bowls and top with reserved mushrooms.
