APPLE AND CELERY SLAW

4 stalks celery, julienned
2 green apples, julienned
1 jalapeno, halved lengthwise and thinly sliced
1/2 head green cabbage, thinly sliced
1/2 head purple cabbage, thinly sliced
1/2 cup olive oil
1/2 tablespoon Dijon mustard
1 tablespoon sugar
1 teaspoon white vinegar
1/4 teaspoon cayenne pepper
1/8 teaspoon salt
1/8 teaspoon celery salt
2 cups fresh cilantro leaves, barely chopped

Steps:

  • Combine the celery, apples, jalapeno and green and purple cabbage in a bowl. In a separate bowl, mix the olive oil, mustard, sugar, vinegar, cayenne, salt and celery salt. Pour over the cabbage mix and toss to combine. Cover and refrigerate for 2 hours.
  • Before serving, toss in the cilantro leaves.

As does the apple cider vinaigrette, making this a great choice when watching the waist line. The longer the slaw sits, the more the flavors have time to deepen - it's really good when left in the fridge overnight, and makes great leftovers!

½ head red cabbage, thinly sliced
1 cup shredded celery root
1 carrot, grated
2 green onions, chopped
¼ cup olive oil
¼ cup apple cider vinegar
1 clove garlic, minced
1 teaspoon balsamic vinegar
½ teaspoon celery seeds
sea salt to taste
ground black pepper to taste

Steps:

  • Combine red cabbage, celery root, carrot, and green onions in a large bowl.
  • Place olive oil, apple cider vinegar, garlic, balsamic vinegar, celery seeds, salt, and black pepper in a jar. Seal and shake to mix well. Pour dressing over red cabbage mixture and toss to combine.

2 cups peeled, grated celery root
1 red apple, cut into 1/3-inch dice
1 green apple, cut into 1/3-inch dice
4 teaspoons lemon juice
1 tablespoon orange juice
8 scallions, finely chopped
Zest of 2 lemons, removed in thin strips with a lemon zester
Zest of 1 orange, removed in thin strips with a lemon zester
1/2 cup mayonnaise (preferably homemade)
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/2 cup chopped mint leaves, plus mint sprigs for garnish

Steps:

  • Toss the celery root and apples with the lemon juice and orange juice (to prevent discoloration). Toss again with the scallions, zests, mayonnaise, salt and pepper. Just before serving, toss again with the chopped mint leaves. Garnish with mint sprigs and serve.

1 celery root (celeriac), peeled and julienned
1/2 small fennel bulb, trimmed and thinly sliced into crescents
1 Granny Smith apple, julienned (do not peel)
Juice of 1 lemon
Kosher salt and freshly ground black pepper
1/4 cup mayonnaise
1/4 cup sour cream
1 tablespoon apple cider vinegar
1 teaspoon honey
1 teaspoon Dijon mustard
1/3 cup dried cranberries

Steps:

  • Combine the celery root, fennel, apple and lemon juice in a large bowl and season with salt and pepper. Toss everything together and set aside for at least 30 minutes and up to 2 hours. This not only tenderizes and marinates the vegetables so they become pliable but also stops them from turning brown.
  • Combine the mayonnaise, sour cream, vinegar, honey and mustard in a small bowl. Season with salt and pepper.
  • Pour the dressing over the vegetable and toss well. Fold in the dried cranberries. Taste and season with salt and pepper if needed.

Steps:

  • Cut cheese into matchsticks and put in a large bowl. Peel celery root and apples and cut into matchsticks. Add celery root, apples, and lemon juice to cheese, tossing gently.
  • In a small bowl stir together remaining ingredients and add to slaw, tossing gently. Slaw may be made 1 day ahead and chilled, covered. Add additional horseradish to taste before serving if necessary. Season slaw with salt and pepper.

1 large celery root
2 granny smith apples, julienned
1/2 cup apple cider vinegar, divided
4 trumpet royale mixed mushrooms (or some other large mushroom)
kosher salt
extra-virgin olive oil
1 cup creme fraiche
2 tablespoons prepared horseradish
1 1/2 cups mache lettuce
1/2 red onion, sliced thinly in rings

Steps:

  • Combine the celery root and apples in a large bowl, toss with 1/2 of the apple cider vinegar and season with salt. Let it sit for about 1 hour. This will soften the celery root and apple.
  • Preheat a large sauté pan over medium-high heat. Cut the mushrooms in half lenghtwise and season with salt. When the pan is hot, coat with oil and arrange the mushrooms, cut side down in the pan. Sauté until the mushrooms are soft and golden brown. Flip the mushrooms over an repeat this process on the other side.
  • While the mushrooms are cooking, drain the excess liquid from the celery root and apple mixture, if there is any. Return the celery root and apple to the bowl, add the creme fraiche and horseradish and about 1/2 of the remaining vinegar and season with salt, to taste. Stir to combine. Taste, and add the remaining vinegar if you like things very acidic; adjust the salt if needed.
  • Divide the slaw between 4 serving plates. Lay 2 halves of the grilled mushrooms on top of the slaw and dress with mache and a sprinkling of onions.

2 cups tart apples, cored and sliced thin
1 cup purple cabbage, sliced
¼ cup flat leaf Italian parsley, roughly chopped
2 cups celery hearts, chopped including leaves
1 Tablespoon fresh chopped chives or scallions
Salt
Pepper
Dressing Ingedients:
2 cups apple cider
1/ 4 cup sherry wine vinegar
1 tbs Dijon Mustard
½ cup olive oil

Steps:

  • 1. Place the apple cider in a sauce pan and reduce until it measures ½ cup of liquid. It will be slightly syrupy. Let cool. Add the sherry wine vinegar, mustard and olive oil to the apple cider and whisk to combine. Taste and season with salt and pepper. 2. Place all the sliced vegetables in a bowl and season with salt and pepper. Toss to combine with the seasoning. Let sit for five minutes and then toss with the dressing. Serve immediately.
