1/4 cup (1/2 stick) butter
1 cup chopped celery
1/2 cup coarsely chopped shallots (about 3 large)
2 pounds celery roots (celeriac), peeled, woody parts trimmed and discarded, cut into 1/2-inch cubes (about 5 1/2 cups)
1 10-ounce russet potato, peeled, cut into 1-inch pieces
5 cups low-salt chicken broth
1 1/2 teaspoons minced fresh thyme
1/4 cup whipping cream
Additional chopped fresh thyme

Steps:

  • Melt butter in heavy large pot over medium heat. Add celery; cover and cook until slightly softened, about 3 minutes. Add shallots; sauté uncovered 3 minutes. Stir in celery root cubes and potato, then broth and 1 1/2 teaspoons thyme. Increase heat to high; bring to boil. Reduce heat to medium-low, cover, and simmer until vegetables are very tender, about 40 minutes. Cool slightly.
  • Working in batches, transfer soup to blender and puree until smooth. (Can be prepared 2 days ahead. Cool slightly. Cover and refrigerate.)
  • Stir cream into soup and bring to simmer. Season to taste with salt and pepper. Ladle soup into bowls. Sprinkle with additional chopped thyme and serve.

2 lb celery root (sometimes called celeriac), peeled with a knife and cut into 1/2-inch cubes
3 celery ribs, chopped
1/2 lb shallots, chopped
1 stick (1/2 cup) unsalted butter
8 cups water
2 teaspoons salt, or to taste
1/4 teaspoon black pepper, or to taste
1/4 cup heavy cream
1 tablespoon fresh lemon juice, or to taste
6 oz fresh shiitakes, stems discarded and caps sliced 1/4 inch thick

Steps:

  • Cook celery root, chopped celery, and shallots in 1/2 stick butter in a 5-quart heavy pot over moderate heat, covered, stirring occasionally, until softened but not browned, about 15 minutes. Add water, salt, and pepper and simmer, uncovered, until vegetables are very tender, about 30 minutes.
  • Purée soup in batches in a blender until smooth (use caution when blending hot liquids), then return to pot.
  • Stir in cream and reheat bisque over low heat, stirring occasionally, about 5 minutes. Stir in lemon juice.
  • While bisque is reheating, melt 2 tablespoons butter in a 12-inch heavy skillet over moderately high heat until foam subsides, then sauté mushrooms with salt and pepper to taste, stirring, until golden brown, about 3 minutes. Transfer mushrooms with a slotted spoon to a plate and add remaining 2 tablespoons butter to skillet. Cook butter over moderate heat, swirling skillet, until browned, about 2 minutes, then transfer to a small bowl.
  • Serve bisque topped with mushrooms and drizzled with brown butter.

1 cup diced onion
1/2 cup diced parsnips or 1/2 cup carrot
1/2 cup diced celery
1 tablespoon minced shallot
1 teaspoon garlic
4 cups peeled roughly chopped celery root
5 cups chicken stock
1 teaspoon salt
1/8 teaspoon cayenne pepper
1 cup cream
2 tablespoons chopped fresh parsley leaves
1 (2 lb) lobsters (or 2 frozen tails)
2 tablespoons unsalted butter
1 tablespoon minced shallot
1/2 teaspoon minced garlic
1/4 teaspoon salt
1 tablespoon lemon juice
1/4 cup chopped celery leaves

Steps:

  • Set a 4-quart saucepan over medium-high heat. Add the olive oil and once hot, saute the onions, parsnips and celery until softened, about 4 to 5 minutes. Add the shallots and garlic to the pan and saute until fragrant, 45 to 60 seconds. Place the celery root, stock, salt and cayenne pepper in the saucepan and ring to a boil, reduce to a simmer and cook until the celery root is tender, about 35 to 40 minutes.
  • When the celery root is tender, remove the saucepan from the heat and puree the soup using an immersion blender (or in batches using a bar blender), until smooth. Taste, and re-season the soup if necessary and garnish with the parsley. Serve with 3 tablespoons of the sauteed lobster per soup bowl.
  • Set a large 2 to 3-gallon stockpot to boil over high heat. Once the water comes to a boil, immerse the lobster in the pot. Cook the lobsters for 3 minutes, remove, and chill immediately in ice water. Once the lobster is cool enough to handle, remove from the water and place on a kitchen towel draped over a cutting board. Use a mallet to crack the shells, and remove the meat from the tail, claws and knuckles. Dice the lobster meat into 1/2-inch pieces and set aside.
  • Set a 10-inch saute pan over medium heat and add the butter. Once the butter begins to foam, add the shallots and garlic. Saute the shallots and garlic until fragrant, about 1 minute. Add the lobster meat and season with the Essence and salt. Saute the lobster until cooked through, about 5 minutes. Add the lemon juice and raise the heat to high. Cook for 2 minutes. Add the celery leaves to the lobster and toss to blend. Remove from the heat and set aside for the soup.

1 tablespoon extra virgin olive oil
1 tablespoon unsalted butter
1 cup diced yellow onion
1/2 cup diced Yukon potato
1/2 cup diced celery
1 tablespoon minced shallot
1/2 Serrano pepper (seeded and minced)
1 teaspoon garlic
¼ cup white wine
5 cups peeled (roughly chopped celery root)
5 cups vegetable stock
1 teaspoon kosher salt
1/8 teaspoon cayenne pepper
1 teaspoon mustard
2/3 cup half-and-half
1/3 cup 2% milk
2 tablespoons coarsely chopped chervil leaves
4 frozen lobster tails
2 tablespoons unsalted butter
1/16 teaspoon Creole seasoning
Pinch kosher salt

Steps:

  • Set a heavy 4-quart saucepan over medium-high heat. Add the olive oil and butter and once melted, sauté the onion, potato, celery, shallot, Serrano, and garlic until softened and fragrant, about 10 minutes. Add the wine and simmer until the wine is completely absorbed, about 7 - 10 minutes.
  • Add the celery root, stock, salt, cayenne pepper, and mustard in the saucepan and simmer until the celery root is tender, about 35 to 40 minutes.
  • Remove the saucepan from the heat and puree the soup using an immersion blender (or in batches using a blender) until smooth. Stir in the half-and-half and milk. Taste, and re-season the soup if necessary and garnish with the chervil.
  • Serve with 3 tablespoons of the sauteed lobster per soup bowl for the meat eaters at the table.
  • Using kitchen scissors, cut the lobster shells in half, and firmly open up to butterfly the tails. Gently slice through the lobster meat just enough to open it up. Be careful not to cut all the way through the meat.
  • Melt the butter and stir in the seasoning and salt.
  • Turn the tails upside down on a broiler pan, and broil for 7 minutes. Flip over and baste with the seasoned butter. Slip back under the broiler for another 4 minutes or until done. Baste again with the season butter.
  • The lobster tails can be served as is with additional butter alongside the soup, or gently remove the meat from the shells, coarsely chop, and top each bowl of bisque with the meat of one tail.

3/4 cup butter
1/2 cup diced carrots
1/2 cup diced celery
1/3 cup finely chopped onions
Two lobsters, 1 and 1/4 pound each and separated into tail, claws, and chest pieces
1/4 cup cognac plus 1 tablespoon
2 cups white wine
2 cups water
2 cloves garlic, peeled and crushed
2 tablespoon roughly chopped tarragon
1 bay leaf
Drained tomatoes from a 28-ounce can
Salt and pepper
1/3 cup long grain white rice
1 cup light cream
1 cup milk

Steps:

  • Melt 1/4 cup butter in a large saucepan. Add the carrots, celery and onions and cook until soft, about 10 minutes. Add sections from 2 lobsters to pan and saute until shells turn red. Remove pieces from pan when cool enough and remove meat from tails and claws and reserve it.
  • Chop shells into smaller pieces and add to pan. Add 1/4 cup cognac and ignite. Then add the white wine, water, garlic, tarragon and bay leaf. Crush the drained tomatoes with hands and add to pot. Season with salt and pepper.
  • Simmer over low heat for 45 minutes, but do not allow liquid to boil. Remove as many pieces of shell as possible. Put soup through food mill and return milled broth to pan. Add the reserved lobster meat and 1/3 cup long grain white rice. Simmer over low heat another 45 minutes, or until reduced to 2 cups.
  • Pulse shells in a food processor until finely chopped. Melt 1/2 cup butter in a saute pan, add chopped shells and saute 5 minutes. Strain, reserving butter and discarding shells. Transfer reduced lobster-rice mixture to blender and puree. Strain the puree through a sieve over a mixing bowl and return broth to pot. Add the lobster butter and stir well. Add 1 tablespoon of cognac and heat for 5 to 7 minutes. Add the light cream and milk. Heat through, but do not boil.

I was in a jam to find a recipe for lobster bisque to take to our gourmet club's French dinner, and after studying, scrutinizing, and adapting the best of several different recipes for it, came up with this one.My gourmet club has some pretty accomplished cooks, and they all raved about it. I'm sure you'll enjoy it too!Sounds like a lot of directions, but comes together in less than 1 1/2 hrs!

1 lb butter
5 stalks celery, chopped
2 large shallots, finely chopped
1 large yellow onion, chopped
4 tablespoons tomato paste
5 -6 bay leaves
1 tablespoon paprika
2 cups flour
4 1/2 ounces lobster base
2 1/2 quarts hot water
1 quart heavy cream
1 tablespoon white pepper
1 cup dry sherry
2 frozen lobster tails, thawed
1/2 cup butter
1/4 cup olive oil
1 teaspoon granulated garlic
10 slices thick-sliced bread

Steps:

  • Melt 1/4 pound butter in large deep stock pot, over medium high heat.
  • Add celery, onion, shallot and saute till transparent.
  • Melt remaining 3/4 pound butter in same pot, and add flour, mix into a roux.
  • Cook till a light golden brown, approximately 3-4 min, stirring constantly.
  • Add lobster base(I use "Better Than Bouillon" brand)hot water, tomato paste, paprika, bay leaves and white pepper.
  • Stir using a wire whisk until mixture is smooth and starts to thicken.
  • Add heavy cream and dry sherry and reduce heat to low, stirring often.
  • Meanwhile, bring a large pot of water to boil, and add the lobster tails, and cook for 7-8 minutes.
  • When cooked, remove lobster tails to cool, then peel and coarsely chop the meat.
  • Then, add the lobster meat to the soup, and blend the soup in 3-4 batches in the blender till smooth.
  • Top each bowl of bisque with garlic croutons and a sprinkle of minced chives.
  • For quick garlic croutons:Melt butter and olive oil in large skillet over medium high heat.Add 1 tsp granulated garlic.Then remove crusts from 10 slices thick-cut bread (the kind sold for french toast)cut into 1 inch cubes, and add to skillet. Cook, stirring gently till lightly browned.Drain on paper towels.

4 cups seafood stock
4 whole lobster tails
5 sticks salted butter
½ medium white onion, diced
2 medium (blank)s carrots, diced
2 stalks celery, diced
3 cloves garlic, minced
½ cup cream sherry
¾ cup uncooked white rice
1 bay leaf
4 tablespoons tomato paste
1 tablespoon chopped fresh tarragon
1 teaspoon salt
1 teaspoon chopped fresh thyme
1 teaspoon ground black pepper
1 teaspoon paprika
½ teaspoon cayenne pepper
¾ cup heavy cream
salt and ground black pepper to taste

Steps:

  • Pour 4 cups seafood stock into a large pot and bring to a rolling boil. Add lobster tails and boil until flesh is opaque, about 5 minutes. Remove tails and reserve all broth. Shell all tail meat and set aside.
  • Melt butter in another pot over medium heat. Add onion, carrots, and celery. Saute until fragrant, 3 to 4 minutes. Add garlic and saute, 30 to 40 seconds. Pour in sherry; let it reduce by half. Pour in reserved seafood stock. Add rice and bay leaf. Bring to a boil, then reduce to medium-low. Let simmer until rice is tender, about 30 minutes. Remove bay leaf.
  • Blend all contents of the soup until smooth using an immersion blender. Add tomato paste, tarragon, salt, thyme, pepper, paprika, and cayenne. Let simmer over medium-low heat for 30 minutes more. Pour in cream and stir in well for that trademark pinkish/orange bisque color. Season with salt and pepper. Ladle soup into bowls and top with a generous lump of lobster meat.
