SPICED VANILLA CHAI CAKE

Spiced Vanilla Chai Cake image

Layers of fluffy, moist vanilla chai cake that's perfectly flavored with chai tea and a homemade chai spice mix. Top it with vanilla chai buttercream for the ultimate Autumn flavor palette.

Provided by Whitney

Number Of Ingredients 23

4 tsp ground cinnamon
2 tsp ground ginger
1 tsp ground cardamom
1/2 tsp ground allspice
1/4 tsp ground cloves
1 1/4 Cups (296ml) whole milk
1 chai tea bag
2 3/4 Cups (290g) cake flour, sifted before measuring
2 1/4 tsp baking powder
1/2 tsp baking soda
4 tsp chai spice mix (recipe above)
1 1/4 tsp salt
1 Cup (226g) unsalted butter, room temperature
1 3/4 Cups (358g) granulated white sugar
3 eggs, room temperature
1/2 Cup (112g) sour cream, room temperature
1 Tbsp pure vanilla extract
2 Cups (452g) unsalted butter, room temperature
7 Cups (840g) powdered sugar
1 Tbsp chai spice mix (recipe above)
2 tsp pure vanilla extract
2 Tbsp whole milk, room temperature
1/4 tsp salt

Steps:

  • In a small bowl, whisk together the cinnamon, ginger, cardamom, allspice, and cloves and set aside.
  • Preheat the oven to 350°F. Prepare three 6-inch or two 9-inch cake pans by spraying the sides with a cooking spray (Baker's Joy is my favorite) and fitting a wax or parchment paper circle to the bottom of the pan. Alternatively, you can grease and lightly flour the pans.
  • Place the chai tea bag into a mason jar. In a small saucepan over medium-high heat, warm the whole milk, stirring constantly, until it begins to boil. Pour the boiling milk over the chai tea bag in the mason jar and let steep for 20 minutes before removing the tea bag. Allow the mixture to cool completely to room temperature before moving on.
  • Sift the cake flour and then measure by spooning and leveling it in your measuring cup. Add the cake flour, baking powder, baking soda, 4 teaspoons of the chai spice mix, and salt into a bowl and whisk to combine. Set aside.
  • In the bowl of your stand mixer (a handheld mixer works fine too!), cream the butter for on high for two minutes until it's light and fluffy. Add in sugar and continue to mix on medium-high for another two minutes, scraping down the bowl and paddle as needed. Add the eggs one at a time, then add vanilla and sour cream and mix for one minute on high, scraping down the bowl and paddle once more.
  • With the mixer on low speed, add in the dry ingredients and mix until just combined. Add the (room temperature!) chai milk mixture slowly and mix until just incorporated. Scrape down the sides and bottom of the bowl and give it a few stirs to make sure there are no lumps (without over-mixing). The batter will be slightly thick, but pourable.
  • Pour batter evenly into prepared cake pans (no more than 2/3 of the way full) and bake for 30-35 minutes. They're done when they spring back to the touch and a toothpick inserted into the middle comes out clean. Let the cakes cool in the pan for five minutes before turning them out onto a wire rack for an additional few hours of cooling. Make sure they're entirely room temperature before applying any frosting.
  • With a hand mixer or paddle attachment on your stand mixer, cream the butter on medium-high until it's creamy and light (almost white) in color. About 7 minutes.
  • Whisk 1 Tbsp of the Chai Spice Mix into the measured powdered sugar. With the mixer on low, add the powdered sugar mixture a few cups at a time, scraping down after each addition and making sure each addition is fully incorporated before adding the next one.
  • Add vanilla, milk, and salt and mix on medium-low for another two minutes until fully incorporated.
  • Once the Vanilla Chai Cakes have cooled completely, fill and frost the layers with Vanilla Chai Buttercream. To create the design pictured, add crushed Speculoos Cookies to the sides of the cake by placing them into the palm of your hand and gently pressing them onto the buttercream finish. Then, fit one piping bag with Wilton Tip 4B and another piping bag with Wilton Tip 1M before filling each with Vanilla Chai Buttercream. Pipe rosettes and stars onto the top of the cake in a crescent moon shape, add some cinnamon sticks, and sprinkle more crushed Speculoos Cookies on top.

OVERNIGHT CINNAMON ROLL BREAD WITH CHAI FROSTING

Overnight Cinnamon Roll Bread with Chai Frosting image

Overnight Cinnamon Roll Bread with Chai Frosting. Turning your rolls into a beautiful bread keeps things simple and easy, yet every bite is still delicious!

Provided by Tieghan Gerard

Time 1h35m

Number Of Ingredients 18

1 cup warm whole milk
1 packet instant dry yeast
1 tablespoon honey
2 large eggs, beaten
4 tablespoons salted butter, melted
3½ to 4 cups all-purpose flour
½ teaspoon kosher salt
6 tablespoons very softened salted butter, plus more for greasing
¾ cup packed light brown sugar
1½ teaspoons ground cinnamon
4 ounces cream cheese, at room temperature
4 tablespoons salted butter, at room temperature
1½ teaspoons pure vanilla extract
1½ cups confectioners' sugar
½ teaspoon ground cinnamon
¼ teaspoon ground allspice
¼ teaspoon ground ginger
1/4 teaspoon ground cardamon

Steps:

  • 1. In the bowl of a stand mixer fitted with the dough hook attachment, combine the milk, yeast, honey, eggs, butter, 3½ cups of flour, and the salt. Beat until the flour is completely incorporated, 4 to 5 minutes. If the dough seems sticky, add the remaining ½ cup of flour.2. Cover the bowl with plastic wrap and let sit at room temperature until doubled in size, about 1 hour.3. Make the rolls. Butter a 9x5-inch loaf pan and line with parchment paper. In a small bowl, combine the brown sugar and cinnamon and set aside.4. When the dough has doubled in size, turn it out onto a lightly floured work surface, punch it down, and roll it into a ball using your hands. Roll the dough into a rectangle (approximately 12 x 18 inches).5. Spread the softened butter over the dough and sprinkle it with the cinnamon sugar. Starting with the edge of dough closest to you, roll the dough into a log, keeping it tight as you go. Pinch along the edges of the log to seal it.6. Cut the log into 6 rolls and place them cut side up in the prepared pan. Cover and let rise 45 minutes to 1 hour in a warm place or up to overnight in the fridge. Bring the dough to room temperature before baking.7. Preheat the oven to 350 degrees F. Place the pan on a rimmed baking sheet and bake until browned on top, 30 to 35 minutes. If the bread is browning too quickly, cover it with foil. Let cool 5 minutes before turning it out onto a rack.8. Make the frosting. In the bowl of a stand mixer fitted with the paddle attachment or in a medium bowl with an electric hand mixer, beat together the cream cheese, butter, and vanilla until fluffy. Gradually beat in the confectioners' sugar, cinnamon, allspice, ginger, and cardamom until combined.9. Spread the frosting over the warm bread. Serve immediately. Store any leftovers refrigerated in an airtight container for up to 3 days.

1 1/2 tsp ground cinnamon
1 tsp ground cardamom
1/2 tsp ground allspice
1/4 tsp ground cloves
1 tsp ground ginger
3/4 cup unsalted butter (room temperature)
1 cup granulated sugar
1/2 cups light brown sugar (packed)
3 large eggs ( room temperature)
1 tsp vanilla
1 cup Chai tea milk
1 cup unsalted butter (room temperature)

4 cups powdered sugar (sifted)
2 tsp vanilla
cornstarch or meringue powder (optional)
cape gooseberries
whole allspice
whole star anise

whole green cardamom pods

Steps:

  • Bring milk and tea to a boil in a small pot over med-high heat. Turn heat off and steep for 10mins. Strain and measure out 1 cup. Top up with milk if needed.
  • Preheat oven to 350F. Grease and flour three 6" cake rounds and line with parchment.
  • In a medium bowl, whisk flour, baking powder, spices, and salt until well combined. Set aside.
  • Using a stand mixer fitted with a paddle attachment, cream butter and sugars on med-high until pale and fluffy (approx 3mins).
  • Reduce speed and add eggs one at a time fully incorporating after each addition. Add vanilla.
  • Alternate adding flour mixture and Chai milk, beginning and ending with flour (3 additions of flour and 2 of milk). Fully incorporating after each addition.

  • Slowly add chilled cream cheese one cube at a time (about 1 tablespoon at a time). Beat well until blended and ensure no lumps of cream cheese remain.
  • If needed, add cornstarch or meringue powder 1 tablespoon at a time to stiffen the frosting (I didn't but this is an option).
  • Run mixer on low for a couple of minutes to remove any air bubbles.
  • Place one layer of cake on a cake stand or serving plate. Top with 2/3 cup of frosting and spread evenly. Repeat with remaining layers and apply a thin coat of frosting all over the cake. Chill for 20mins.
  • Use the remaining frosting to frost the cake and do a rustic swirl on the sides and top with a large offset spatula if desired.
  • Decorate top with whole spices and gooseberries if desired.

CHAI LATTE CUPCAKES

Chai Latte Cupcakes image

Soft and moist chai latte cupcakes prepared with chai tea, chai spices, and topped with whipped chai buttercream. This simple cupcake recipe tastes exactly like your favorite coffeehouse chai latte drink.

Provided by Sally

Categories     Cupcakes

Time 3h20m

Number Of Ingredients 23

2 and 1/2 teaspoons ground cinnamon
1 and 1/4 teaspoons ground ginger
1 and 1/4 teaspoons ground cardamom
1/2 teaspoon ground allspice
1 bag chai tea
1/2 cup (120ml) whole milk, at room temperature
1 and 3/4 cups (207g) cake flour* (spoon & leveled)
3 and 1/2 teaspoons chai spice mix (above)
3/4 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup (115g) unsalted butter, softened to room temperature
1 cup (200g) granulated sugar
3 large egg whites, at room temperature*
2 teaspoons pure vanilla extract
1/2 cup (120g) sour cream or plain yogurt, at room temperature
1 and 1/2 cups (345g) unsalted butter, softened to room temperature
5.5 - 6 cups (660-720g) confectioners' sugar
2 teaspoons chai spice mix, divided
1/4 cup (60ml) heavy cream
2 teaspoons pure vanilla extract
pinch of salt
optional for garnish: cinnamon sticks + mix the remaining chai spice mix

Steps:

  • Mix all of the chai spices together. You'll have 5 and 1/2 teaspoons to use between the cupcake batter, buttercream, and garnish.
  • Bring milk to a boil or heat in the microwave for 1-2 minutes. Pour over tea bag and steep for 20-30 minutes. This chai milk is the milk you'll use in the cupcake batter. This can be done the day before and refrigerated overnight. Make sure the chai milk is room temperature before adding to the cupcake batter.
  • Preheat the oven to 350°F (177°C). Line a 12-cup muffin pan with cupcake liners. Line a second pan with 2-3 liners - this recipe makes 14-15 cupcakes. Set aside.
  • Whisk the cake flour, 3 and 1/2 teaspoons of chai spice mix, the baking powder, baking soda, and salt together. Set aside.
  • Using a handheld or stand mixer fitted with a whisk attachment, beat the butter and sugar together on high speed until smooth and creamed, about 2 minutes. Scrape down the sides and up the bottom of the bowl with a rubber spatula as needed. Beat in the egg whites on high speed until combined, about 2 minutes. Beat in the sour cream and vanilla extract. Scrape down the sides and up the bottom of the bowl as needed. With the mixer on low speed, add the dry ingredients until just incorporated. With the mixer still running on low, slowly pour and mix in the chai milk *just* until combined. Do not overmix. Batter will be slightly thick and smell incredible!
  • Pour/spoon the batter into the liners. Fill only 2/3 full to avoid baking over the sides. Bake for 20-22 minutes, or until a toothpick inserted in the center comes out clean. For around 35 mini cupcakes, bake for about 11-13 minutes, same oven temperature. Allow the cupcakes to cool completely before frosting.
  • With a handheld or stand mixer fitted with a paddle attachment, beat the butter on medium speed until creamy, about 2 minutes. Stop the mixer and add 5 and 1/2 cups (660g) confectioners' sugar, the heavy cream, 1 and 3/4 teaspoons chai spice mix, the vanilla extract, and a pinch of salt. Beat on low speed for 30 seconds, then increase to high speed and beat for 2 minutes. If frosting looks curdled or greasy, it's best to beat in more confectioners' sugar to smooth it out. Beat in up to 1/2 cup (60g) more confectioners' sugar to smooth out if needed. If frosting seems too thick to pipe or spread, beat in another Tablespoon (15ml) of cream. Taste and beat in another pinch of salt if frosting is too sweet.
  • Frost cooled cupcakes and serve. I used Wilton 8B piping tip, stuck a cinnamon stick in some of them, and sprinkled with a mix of the remaining chai spice mix and a pinch of granulated sugar.
  • Cover and store leftovers in the refrigerator for up to 5 days.

PUMPKIN CINNAMON ROLLS WITH MAPLE CHAI FROSTING

Pumpkin Cinnamon Rolls with Maple Chai Frosting image

Pumpkin Cinnamon Rolls with Maple Frosting (make that maple chai frosting) have been on my mind for a an entire year but I was afraid to attempt them. I mean seriously, don't cinnamon rolls from scratch just seem scary? I know they did to me.

Categories     Breakfast

Time 45m

Number Of Ingredients 26

3 1/2 cups all-purpose flour
1/4 cup granulated sugar
1/4 cup firmly packed dark brown sugar
1 tablespoon instant dry yeast
1 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon ground ginger
3 ounces unsalted butter, softened, cut into 1/2-inch cubes (3/4 stick)
2/3 cup coconut milk
1 large egg
2/3 cup pumpkin puree
3/4 cup firmly packed light brown sugar
1/4 cup granulated sugar
1/2 teaspoon cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon freshly grated nutmeg
1/4 teaspoon salt
1 ounce unsalted butter, melted (1/4 stick)
1 ounce unsalted butter, melted (1/4 stick)
1/2 stick butter at room temperature
1 cup powdered sugar (sifted)
1/2 tsp vanilla
1/2 teaspoon chai spice mix
Small sprinkle which ends up being 1/8 teaspoon cinnamon
1 teaspoon pure maple syrup
1 teaspoon milk

Steps:

  • Butter one 10-inch round cake pan, line the bottom with parchment paper, and butter the parchment. Dust the parchment with flour and knock out the excess flour. In the bowl of a standing mixer fitted with the paddle attachment, mix the flour, sugars, yeast, salt, cinnamon, ginger, and cardamom on medium speed. Add the butter and mix until incorporated, about 1 minute. Add the milk and egg and mix on low speed until incorporated. Add the pumpkin puree and mix on medium speed for 3 minutes. The dough will be light orange in color and feel soft and sticky. Remove the dough from the bowl, carefully form it into a large ball, smooth the top with your hands, and place it in a clean, lightly greased bowl. Cover with plastic wrap and let the dough rest for 30 minutes. Meanwhile, make the filling.
  • In a small bowl, stir together the sugars, cinnamon, cloves, nutmeg, and salt. Add the melted butter and stir until combined.
  • Dust a work surface with a sprinkling of flour. Using a rolling pin, roll the dough into a large rectangle approximately 20 by 10 inches, brush the dough with half the melted butter, and sprinkle the filling over the butter, leaving a 1?4-inch border around the edges. Use the palms of your hands to press the filling lightly into the dough. Roll up the long side of the rectangle to form a tight log and place it seam side down. Slice the log into ten 2-inch rolls. Place one roll in the center of the cake pan, then fill in the rest of the pan with the other rolls. Brush the tops of the rolls with the remaining melted butter, cover with plastic wrap, and set aside until the rolls have almost doubled in size, about 45 minutes.
  • Preheat the oven to 350 degrees F and position the rack in the center.
  • Bake for 25 to 30 minutes, or until the tops of the rolls are browned. In order to pour your icing over still-warm rolls for the best effect, prep all the frosting ingredients while the rolls are baking and put together the frosting (this will only take about 5 minutes) immediately after the rolls come out of the oven.
  • Beat butter until fluffy. Gradually add powdered sugar, then add milk or tea and flavorings. Increase amount of spice, or sugar until desired consistency and flavor are reached. Then place in the microwave for 10-20 seconds until it melts down and is pourable. Drizzle over cinnamon rolls when they are fresh out of the oven and enjoy.
  • Invert the pan of rolls onto a serving plate or leave them in the pan for a rustic look. Pour the frosting over the warm rolls. It's okay if a little bit of the frosting drips down the sides-it's even encouraged. (Alternatively, use an offset spatula to apply the icing.) Serve immediately.
