Cabbage Salad is a versatile side dish made with crunchy cabbage, bell pepper, onion, herbs and a sweet and tangy vinegar based dressing.

8 cups shredded green cabbage (one medium head)
1 cup diced white onion (about 1 small)
1 small green pepper (seeded and diced)
2 tablespoons fresh chopped flat-leaf parsley (plus some for garnish)
1 cup white vinegar
½ cup granulated sugar
½ cup canola oil
1 teaspoon yellow mustard
1 teaspoon celery salt (can substitute regular salt)
¼ teaspoon pepper

Steps:

  • Mix vegetables with ½ cup sugar. Let stand while making dressing.
  • Measure dressing into a saucepan and bring to a boil over medium heat. Boil 3 minutes and pour over cabbage while hot.
  • Cover bowl and refrigerate 24 hours before serving.
  • Garnish with more fresh parsley.

3 tablespoons champagne vinegar
1 tablespoon chopped fresh parsley
1 teaspoon dry mustard
1 teaspoon dried oregano
1/2 teaspoon chopped fresh thyme
1/2 clove garlic, grated
3/4 cup extra virgin olive oil
Kosher salt and pepper
Kosher salt and pepper
1/2 head iceberg lettuce, cut into bite-size pieces (about 6 cups)
1/2 head romaine, cut into bite-size pieces (about 8 cups)
8 white button mushrooms, rough chopped
2 carrots, peeled and roughly chopped
1 stalk celery, peeled and thinly sliced
4 ounces blue cheese crumbles (1/2 cup)
4 ounces deli sliced turkey breast, roughly chopped
2 to 4 anchovies packed in oil, whole
Pepperoncini, to garnish
Anything else that looks tasty in the fridge: throw it in!

Steps:

  • For the vinaigrette: In a medium bowl, whisk together the vinegar, parsley, mustard, oregano, thyme and garlic. While whisking, slowly add the olive oil. Season with salt and pepper and you're ready to rock.
  • For the salad: Toss together the iceberg, romaine, mushrooms, carrots, celery, cheese and turkey in a large bowl, and place in the refrigerator until ready. Before serving, put a healthy amount of dressing, mix well and top with the anchovies and pepperoncini...you just cleaned your fridge!

2 large onions, peeled and sliced very thin
4 tablespoons unsalted butter
3 large tart apples, peeled and sliced 1/8 inch (I use granny smith)
1 red cabbage
1 green cabbage
1 1/2 cups champagne, room temperature
2 tablespoons sugar
1 teaspoon lemon, zest of
1 teaspoon salt
2 tablespoons fresh lemon juice

Steps:

  • Melt the butter in a large heavy saucepan and add the onions.
  • Cook and stir over medium heat until they soften.
  • Add the apple slices and saute for 5 minutes.
  • Core the cabbages and slice them very very thin.
  • Add to the saucepan with 1/3 of the champagne, the sugar, lemon zest,salt and lemon juice.
  • Bring to a boil and simmer gently, covered for 15 minutes.
  • Add the remaining champagne and a grind or two of pepper and simmer, uncovered for 10 minutes.
  • Serve immediately.
  • The cabbage stays fairly crisp because of the acid in the champagne and lemon.

1 small pear, sliced into bite-sized pieces (with peel)

½ cup raw walnut halves
2 ounces Pecorino Romano cheese, cut into small chunks
1 teaspoon coarsely ground black pepper
⅛ cup extra-virgin olive oil
1 tablespoon champagne vinegar

Steps:

  • Slice savoy cabbage into bite-sized pieces and put into a large salad bowl.
  • Sprinkle pear pieces with lemon juice and toss to coat. Add to savoy cabbage. Sprinkle with walnuts and Pecorino Romano cheese. Season with pepper and drizzle with extra-virgin olive oil and champagne vinegar. Toss salad and serve.

  • In a large bowl, mix 1 1/2 qts. finely shredded green cabbage (about 2/3 lb.) with 3/4 tsp. salt; let sit 30 minutes. Toss with 3 tbsp. finely chopped chives and 2 tbsp. Champagne vinegar.

2 tbsp each sunflower seeds and linseeds
2 tsp grated root ginger
1 tsp clear honey
2 tbsp lemon juice
4 tbsp light olive oil

Steps:

  • Prepare all the ingredients for the salad and mix them in a large bowl.
  • Put all the dressing ingredients into a small bowl. Season and whisk until slightly thickened. Pour over the salad and toss until evenly coated.

1/2 cup chopped onion
3 tablespoons mayonnaise

1 cup white sugar
