1/2 cup orange marmalade
1/2 cup sugar
8 large navel oranges
1 1/2 cups Champagne or sparkling white grape juice
1/3 cup toasted slivered almonds
Sprig of fresh mint

Steps:

  • Combine the marmalade and sugar in a small saucepan. Mix well, place over low heat and cook, stirring, until the sugar dissolves.
  • Cut the peel from the oranges, cut into slices and then quarter each slice, removing the white center pith from each. Put into a medium bowl.
  • Pour the sugar/marmalade mixture and Champagne or grape juice over the sliced oranges. Refrigerate for 8 hours.
  • Sprinkle with almonds before serving and add a sprig of mint.

canola oil cooking spray
3 oranges
1/4 cup sugar
2 (1/3 ounce) envelopes unflavored gelatin
1 cup boiling water
2 cups chilled champagne or 2 cups other sparkling wine
1/2 cup orange marmalade
1/2 teaspoon ground cinnamon
1/8 teaspoon ground cloves

Steps:

  • Coat six 8oz disposable plastic containers (such as GladWare) with cooking spray. Cut the peel and white pith from oranges. Working over a bowl, cut the oranges between the membranes to release segments, allowing them and the excess juices to fall into the bowl. Set aside.
  • Whisk sugar and gelatin in a medium bowl to blend. Add boiling water and whisk vigorously to until gelatin and sugar dissolve and mixture becomes very foamy, about 2 minutes. Strain the juices from bowl of orange segments into gelatin mixture and whisk to blend.
  • Refrigerate gelatin mixture until lukewarm, stirring occasionally, about 25 minutes. Whisk in chilled Champagne. Divide the gelatin among the prepared containers. Cover each and refrigerate until gelatin sets, at least 2 hours and up to 1 day.
  • Meanwhile stir marmalade, cinnamon and cloves in a small heavy saucepan over medium heat until the mixture simmers, about 5 minutes. Set aside and allow to cool completely. Stir in the orange segments.
  • To serve Champagne foam, invert each onto a dessert plate and serve immediately. Spoon the spiced orange mixture alongside.
  • *Note: I am not sure if these envelopes are .3 oz ones or not. It does not say in the recipe.

8 oranges
1 cup water
1 1/2 cups sugar
1/4 cup brandy
2 tablespoons Grand Marnier or 2 tablespoons Cointreau liqueur

Steps:

  • Peel oranges leaving no white pith.
  • Slice crosswise into thin slices, or cut into segments and place in a serving bowl.
  • Stir sugar and water together over a low heat until disolved and then boil for 2mins.
  • Cool, add Brandy and Grand Marnier or Contreau.
  • Pour over prepared oranges.
  • Serve at room temperature with whipped cream and/or ice cream.
  • Can be made ahead, (I have done this 2 - 4 days ahead) and stored in fridge. Bring to room temp to serve or if preferred serve chilled.

This citrusy dessert cocktail is a great way to use up any leftover Champagne or sparkling wine that may have gone flat.

Number Of Ingredients 7

15ml (3 teaspoons) Champagne or sparkling wine (this can be flat, left over from a party)
15g (about 3 1/4 teaspoons) caster or superfine sugar
25ml (5 teaspoons) Cocchi Vermouth di Torino
15ml (3 teaspoons) Campari
35ml (about 2 tablespoons plus 1 teaspoon) soda water
2 scoops of orange sorbet, preferably blood orange
A slice of orange (use blood orange, if in season)

Steps:

  • Put the Champagne or sparkling wine in a small pan and simmer until reduced by a third. Add the caster sugar and stir until dissolved, then leave to cool. (It's worth making a much larger quantity of this syrup and storing it in the fridge to make other drinks.)
  • Pour the vermouth, Campari, Champagne syrup, and soda water into a small shaker and shake for 10-15 seconds. Scoop the sorbet into a chilled float glass. Pour the liquid ingredients on top and garnish with the slice of orange.
