LEEKS WITH ANCHOVY BUTTER

Leeks With Anchovy Butter image

Leeks have gone in and out of favor throughout history. Here they're prepared as the more-esteemed asparagus: Blanched, then slathered with butter mixed with pungent anchovy (another looked-down-upon ingredient).

Provided by Amanda Hesser

Categories     weekday, side dish

Time 30m

Yield Serves 4

Number Of Ingredients 9

Salt
6 thin leeks, trimmed, halved lengthwise and washed
4 tablespoons butter, softened
4 anchovy fillets, drained
1 tablespoon chopped parsley
1 teaspoon chopped basil
1 tablespoon chopped shallot
1 teaspoon lemon juice, plus more to taste
Freshly ground black pepper

Steps:

  • Using cooking twine, tie the leeks into two bunches. Bring a large pot of salted water to a boil. Add the leeks and cook until tender, 6 to 8 minutes. Drop into ice water to stop the cooking. Drain, then press out excess water on a towel. Set cut-side up in a large baking dish.
  • Preheat the oven to 450 degrees. Place the butter, anchovies, parsley, basil, shallot and lemon juice in a large bowl. Mash with a fork or potato masher until well blended and the anchovies have dissolved into a paste. Season to taste with salt and pepper.
  • Spread the butter mixture over the cut sides of the leeks. Bake for 5 minutes or until warmed through. Squeeze over more lemon juice, if you like.

CHARRED LEEKS WITH ANCHOVY DRESSING

Charred leeks with anchovy dressing image

We've made leeks the star of our elegant, simple starter. Hazelnuts add crucial crunch and the anchovy dressing gives the dish an umami depth of flavour

Provided by Sophie Godwin - Cookery writer

Categories     Starter

Time 30m

Yield Serves 6 (as a starter)

Number Of Ingredients 9

400g leeks , trimmed
1 garlic clove , roughly chopped
6 anchovies , in oil
1 tsp Dijon mustard
1 lemon , juiced
2 egg yolks
130ml rapeseed oil
1 tbsp parmesan , finely grated
50g hazelnuts , toasted and chopped

Steps:

  • Heat the grill to its highest setting and bring a large pan of salted water to the boil. Wash the leeks, remove and discard the outer layers and add to the pan. Cook for 2 mins until starting to soften, then immediately transfer to a bowl of ice-cold water. Once cold, drain, pat dry and cut in half lengthways, put on a baking tray, cut-side down, rub over 2 tbsp of the oil and season.
  • Blitz the garlic and the anchovies in a mini food processor to form a paste. With the motor running, add the mustard, 2 tbsp lemon juice, the egg yolks and some seasoning, then gradually add the rest of the oil, drop by drop, until the sauce has thickened and emulsified. Stir in the Parmesan, taste for seasoning and add more lemon juice, if you like. Divide the dressing between two bowls. Add water to one bowl until it is a drizzling consistency. Store the other bowl in the fridge for another day - it works well with roast lamb or in sandwiches. Will keep in the fridge for 2 days.
  • Grill the leeks for 5 mins until charred, then transfer to a serving platter, scatter over the hazelnuts and parsley, and drizzle with the anchovy dressing.

CHARRED GREENS WITH CITRUS VINAIGRETTE

Charred Greens with Citrus Vinaigrette image

Provided by Michael Symon : Food Network

Categories     side-dish

Time 30m

Yield 4 to 6 servings

Number Of Ingredients 14

1 stick (8 tablespoons) unsalted butter
2 cloves garlic, grated, plus 1 unpeeled clove, smashed
1 small baguette, torn into medium pieces
Kosher salt and freshly ground black pepper
Juice of 2 lemons
1/2 cup extra-virgin olive oil
4 white anchovies, minced
1 tablespoon Dijon mustard
1 teaspoon crushed red pepper flakes
2 pounds lacinato kale, ends trimmed
1 pound red endive, halved lengthwise
1 pound escarole, halved lengthwise
1 cup sliced chives (about 1 1/2-inch pieces)
Freshly grated Parmesan, for serving

Steps:

  • Set up your grill for even medium-high heat. If using a charcoal grill, distribute the coals evenly. If using a gas grill, heat both sides evenly.
  • In a small saucepan set on the grill, melt the butter with the clove of smashed garlic. Remove the garlic.
  • Place the torn baguette in a mixing bowl and pour the melted garlic butter over the top. Toss to coat the bread and season with salt and pepper. Put the croutons in a cast-iron pan and place on the grill. Cover the grill and bake until golden brown and crisp, 5 to 7 minutes.
  • In the meantime, in a mason jar, add the lemon juice, olive oil, grated garlic, anchovies, Dijon and red pepper flakes. Season with salt and pepper and vigorously shake to combine.
  • Remove the croutons from the grill and set aside. Brush the kale leaves and the cut side of the endive and escarole with some of the lemon vinaigrette. Place on the grill, cut-side down, and char for about 2 minutes.
  • Remove from the grill, slice into bite-sized pieces and put in a large serving bowl. Add the croutons and chives and dress with the remainder of the vinaigrette. Add Parmesan and toss to combine. Serve.

BROILED LEEKS VINAIGRETTE

Broiled Leeks Vinaigrette image

A classic French first course, cooked leeks dressed with a mustardy vinaigrette can be wonderful or dull, depending on the size of the leeks. Don't use giant ones; choose medium to small leeks for tender results. A few minutes under the broiler adds flavor to this version, which is served warm.

Provided by David Tanis

Categories     dinner, lunch, appetizer

Time 1h

Yield 4 to 6 servings

Number Of Ingredients 11

8 medium leeks, about 4 pounds
3 tablespoons red wine vinegar
2 tablespoons Dijon mustard
1 garlic clove, minced
Salt and pepper
Extra-virgin olive oil
2 cups coarse breadcrumbs
2 tablespoons chopped thyme
1/2 cup grated Parmesan
4 tablespoons chopped parsley
3 hard-cooked eggs (9-minute eggs), roughly chopped

Steps:

  • Bring a large pot of salted water to a simmer. Prepare the leeks: Trim leeks of outer layer and roots. Cut crosswise to divide leeks into white bottoms and green tops (remove and discard the tough gray-green parts). Soak leeks in a large bowl of lukewarm water, swishing to dislodge sand. Lift from water and drain.
  • Add the white pieces to the pot and simmer for 8 to 10 minutes. Using tongs, remove the white pieces, then cook the green pieces for 4 to 5 minutes. Both white and green pieces should be tender when probed with a paring knife. Blot dry. Transfer to a baking dish in one layer. Let cool.
  • Make the vinaigrette: In a small bowl, whisk together vinegar, mustard and garlic. Season with salt and pepper, then whisk in 6 tablespoons olive oil. Set aside.
  • Heat oven to 375 degrees. In a mixing bowl, combine breadcrumbs, thyme and Parmesan. Add 2 tablespoons olive oil and salt and pepper; toss well. Spread crumbs on a baking sheet. Bake for 8 to 10 minutes, until crisp and golden. When cool, mix in 2 tablespoons parsley.
  • Heat broiler. Brush leeks lightly with olive oil and place several inches from flame. Broil for about 5 minutes, until browned and lightly charred.
  • Spoon vinaigrette evenly over leeks. Top with crumbs and egg. Sprinkle with remaining parsley. Serve warm.
