Make this cheat's Vanilla Slice recipe in just 5 minutes! With vanilla instant dessert mix sandwiched between two layers of crisp biscuits, it's a no-fuss recipe guaranteed to impress.

100 g vanilla instant dessert mix (aka instant pudding mix)
300 ml thickened cream (aka heavy cream)
150 ml milk (full cream)
18 SAO biscuits (or baked puff pastry sheets (lattice biscuits now discontinued))
icing sugar / powdered sugar (to garnish)

Steps:

  • Pour the milk and cream into a large mixing bowl or the bowl of a stand mixer. Add the vanilla instant dessert mix and beat until thick and creamy (around 1-2 mins).
  • Line a square baking dish with baking paper and place a 3x3 grid of SAO biscuits into the tray. Pour whipped dessert mix into the centre, gently pressing it out towards the edges and smoothing out the top as you go.
  • Top with another 3x3 grid of SAO biscuits. Pop in the fridge for 1 hour to set.
  • Sprinkle with icing sugar, then cut into slices by gently running a knife between the biscuits.

Vanilla Slices for a crowd, very easy to prepare, as good as the real thing, and everyone loves them!

1 (250 g) packet SAO biscuits
1 (85 g) packet vanilla instant pudding mix
500 -600 ml thickened cream
1 cup icing sugar
1 teaspoon margarine
2 tablespoons lemon juice
aluminum foil

Steps:

  • line a lamington tin or even a roasting pan with foil with enough extra to fold back over the top. Dimensions must be in multiples of SAO biscuits; either 3x4 or 4x3.
  • place SAO Biscuits in a 3x4 or 4x3 pattern on bottom (if need be use rolled paper to make a 'wall' to hold the edge.
  • Pour thickened cream into bowl and pour pack of vanilla instant pudding mix over the top (can add a few drops of vanilla extract or essence for added flavour). Whisk quickly and make sure all powder is dissolved, it thickens quickly.
  • pour mix over base of biscuits, spread as evenly as you can.
  • place an equal number of SAO biscuits over the filling, pressing down to even it out if need be.
  • make a tangy lemon icing with icing sugar, melted marg (about 1 teaspoonful) and enough lemon juice and maybe a little boiling water - spread over the top of the top layer of SAO biscuits then seal with the extra foil left over.
  • Leave in fridge overnight.
  • take all out of foil and cut each SAO in half plus cut between each biscuit square. Makes 24.
  • Tip: must be left overnight, but 24 hours is better.

1/4 cup caster sugar
1/4 cup custard powder
1 cup cream
1 1/2 cups milk
1 teaspoon vanilla essence
1/4 cup passion fruit pulp
25 g butter
1 1/2 cups icing sugar

Steps:

  • Preheat oven to 210 deg celcius.
  • Line oven trays with baking paper and place one pastry sheet on each tray.
  • Prick with a fork and bake 10-15 mins Combine custard powder, sugar and cream in a saucepan over medium heat.
  • Gradually add milk, stirring continuously until thick.
  • Add vanilla.
  • Cut cooked pastry to size of a brownie pan.
  • Layer pastry-custard-pastry in tray.
  • Make icing by combining butter, passionfruit and icing sugar over simmering water and mix until smooth.
  • Pour over top of slice.
  • Refrigerate.

  • Preheat oven to 180°C (fan forced) and defrost puff pastry sheets. Line two baking trays with baking paper and lay the pastry sheets on top. Place another baking tray on top of your pastry sheet to prevent pastry rising too much during baking. Bake in oven for approximately 20 minutes, or until the pastry is golden. Remove from oven and allow to cool completely.
  • Line a 23cm square tin with aluminium foil, extending it over the sides so you can use it as handles to remove the slice when cool. Place one sheet of pastry in base of tin, top side down.
  • Combine sugar, corn flour and custard powder in a saucepan. Gradually add half the milk and whisk until smooth. Add the rest of the milk, and cream and stir over medium heat until mixture starts to boil and thicken. Allow to boil, stirring constantly for 1 minute. Reduce heat to low, add butter and Queen Natural Concentrated Vanilla Extract and whisk until butter is melted. When the mixture is smooth, remove pan from heat, then whisk in egg yolks until combined.
  • Spread vanilla custard over pastry inside the tin, then place the second pastry sheet on top and allow to cool. Refrigerate for 6 hours or overnight.
