Steps:
- Stir the relish, mustard, chives and honey together in a small bowl.
- Cut the apple off its core and thinly slice into half-moons. Toss the apples with the lemon juice to keep them from browning.
- Spread the rolls on both sides with the relish mixture. Build sandwiches with the Cheddar, apples, ham and arugula.
APPLE, HAM AND CHEDDAR BISCUIT CUPS
A tablespoon of butter in the pan, melty melty, then the apple plus brown sugar plus cinnamon. What happens is the sugar caramelizes into the butter, and this almost toffee-like stickiness gets the apple super sweet and browned. And then we add savory. The ham. The chopped rosemary. A pinch of salt. Cook it until the ham gets little sear marks here and there. That combo right there of sweet and savory is the juicy secret to life and love.

- Preheat the oven to 375 degrees F.
- Melt the butter in a medium skillet over medium heat. Add the apples, sugar, cinnamon and a pinch of salt. Saute until the apples are tender and start to stick when you scoot them around the pan, about 5 minutes. The butter and sugar will caramelize and become slightly sticky. Add the ham and rosemary. Saute until the ham gets some nice sear marks here and there, 3 to 5 minutes.
- Meanwhile, roll out the biscuits until 3 1/2 inches wide and gently press them into 10 cups of a muffin tin. Spoon the filing evenly into each cup, then top each with the Cheddar. Bake until the cheese is melted and starting to lightly brown and bubble, about 15 minutes.
- Pop each biscuit out of the tin and transfer to a platter or cutting board. Garnish with rosemary and serve immediately.
HAM, CHEDDAR, AND APPLE TEA SANDWICHES
Yield: 6 tea sandwiches • Preparation: 25 minutes • Thaw: 15 minutes

- Using a 2-inch square cutter, cut 12 shapes from frozen bread, discarding crusts. Cover with damp paper towels, and let bread thaw slightly (approximately 15 minutes). Core apple, but leave whole and unpeeled. Cut 6 (¼-inch) crossways slices from apple. Set aside. In a small bowl, combine mayonnaise and mustard, stirring well. Spread mayonnaise mixture in an even layer onto bread squares. Using 6 bread squares (mayonnaise side up) as a base, assemble 6 sandwiches, stacking ingredients in the following order: arugula, ham slice (folded into quarters), cheese slice, apple slice, and another bread square (mayonnaise side down). Garnish each tea sandwich with arugula, if desired.

- Preheat oven to 375 degrees. Spread half the bread slices with mustard. Layer with cheddar, ham, apple, and more cheddar, dividing evenly. Top with remaining bread slices. Lightly butter both sides of sandwiches.
- Heat a large nonstick skillet over medium heat. Working in batches, cook sandwiches, turning once, until bread is golden, about 4 minutes per side. Transfer sandwiches to a rimmed baking sheet. Bake in oven until cheddar is melted, about 5 minutes. Cut each sandwich in half on the diagonal, and serve warm.
