Steps:
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels; crumble.
- Preheat oven to 400 degrees F (205 degrees C). Place a piece of aluminum foil over a baking sheet; spread fries in a single layer on baking sheet.
- Bake in preheated oven until golden brown and crisp, 15 to 20 minutes.
- Preheat broiler.
- Sprinkle fries with cheese and crumbled bacon.
- Broil until cheese is melted, 1 to 2 minutes. Serve with Ranch dressing.

- Toss half a 28-ounce bag frozen crinkle-cut fries with 1 tablespoon olive oil and 1/4 teaspoon each kosher salt, pepper, garlic powder, onion powder and paprika. Spread on a baking sheet and bake at 425˚ until crisp, about 30 minutes. Heat 1/2 cup half-and-half in a saucepan over medium heat until steaming; add 4 ounces diced sharp cheddar cheese and 2 diced slices American cheese. Cook, whisking, until smooth. Whisk in 1/2 teaspoon Worcestershire sauce. Season with salt and pepper. Serve with the fries.

- Have your GH (Grown Helper) put fries in oven on a cookie sheet. While fries are baking in the oven, have a GH place a sauce pot on the stove and heat it over medium heat. Add butter and melt it. Add the flour and stir. Cook butter and flour together for 1 minute or so. This is called "roux" (like Tiger and Roo with Pooh Bear) and it helps to thicken up sauces. Use a whisk to stir as the milk goes into the pot. Keep stirring until the milk gets thicker. Use a wooden spoon or heat-safe spatula to stir in the cheese. When all of the cheese melts, take the sauce off the heat and stir in 3 squirts of ketchup. This is your SECRET ingredient. When everyone asks what you put in your cheese sauce that makes it taste so good, just say milk and cheese, you can NEVER tell what secret ingredients you add! Tell your GH to keep the secret, too or they can never help you again!
- Pour the sauce over the fries or serve the sauce on the side if you like to dipping better.
CHEDDAR FRIES
Steps:
- Preheat oven to 400°F. Line large rimmed baking sheet with silicone baking mat or parchment paper. (If your baking sheet is nonstick you can leave it unlined.)
- Peel potatoes and cut into 1⁄4-inch-wide strips (you should have about 52). Place on prepared baking sheet. Spray with nonstick spray, sprinkle with salt and pepper, and toss until coated evenly. Arrange potatoes to form single layer, making sure potatoes do not touch or overlap.
- Bake 20 minutes. Turn fries over and spread out. Bake until golden brown, about 20 minutes longer.
- Gather fries together; sprinkle with Cheddar. Bake until cheese is melted, about 5 minutes. Transfer fries in pan to wire rack and let cool several minutes before serving.
- Serving size: about 13 fries

- In a medium bowl, toss together cheese and flour. Heat a large nonstick skillet over medium-low heat. Sprinkle about 1 1/2 tablespoons cheese mixture into skillet to form a 4-inch round.
- Cook until cheese is starting to melt and become firm, 1 1/2 to 2 minutes. Using a small offset spatula, turn; continue cooking until it is firm and slightly golden, 15 to 30 seconds more.
- Immediately drape frico over a rolling pin, and let cool slightly to set the shape. Repeat with remaining cheese mixture. If skillet gets too hot and frico begin to color too quickly, remove from heat for several minutes before proceeding.
SARASOTA'S SMOKY SPICY WHITE CHEDDAR CHEESE FRIES
I never really cared for chili cheese fries, not sure why. But cheese fries I loved. I used to make this for my son and he absolutely loves them. I guess it is more fries with a cheese dip. But I often pour the sauce right over the fries. A combination of smoky bacon, white cheddar and chipotles make this a great cheese sauce. If ambitious, make your own fries - personally, I buy a good "frozen" brand, thin cut without seasoning, and then I add my own seasoning. I try to make this easy. There is nothing better that a grilled bratwurst (for me) or just a good hot dog with chili. I prefer my chili on the dog rather than my fries ... and a side of these cheese fries. The seasoning is simple and just tossed with the fries before baking and then the cheese sauce is very basic. Smoky and spicy.

- Bacon -- For the bacon, I do mine right in the microwave. On a paper plate lined with 2 paper towels, then the bacon and top with 2 more paper towels - 4 minutes (approximately) and it is done and crispy. Let it cool and then chop up. Now, you can saute, oven bake or use any method you want. You just want the bacon crispy and diced.
- Fries -- In a large bowl, add the fries (slightly thawed; just enough so the spice and oil will stick to the fries), and add the olive oil and toss well. Add to a pan lined with parchment paper or foil (for easy clean up) and sprinkle with the seasoning. Toss lightly. Cook according to package directions until crispy brown.
- Cheese Sauce -- As the fries cook, in a small pot, melt the butter and shallot on medium low and cook for just a minute. Then stir in the flour to make a roux and cook just a minute to reduce the flour taste. Slowly whisk in the milk and bring to medium heat to thicken the sauce and then add in the cheese, chipotle, chopped cooked bacon, salt and pepper to taste.
- Serve -- A few ways to serve this. First, you can put the fries in a small casserole dish, pour the cheese sauce over, and broil for just a few minutes until golden brown. Second, you can just pour the sauce over the crispy fries and serve as it, or last; Third, you can serve the cheese sauce as a dip. Either way they are good. Cheesy, Smoky, Spicy. ENJOY!

- Prepare french fries as directed on the package.
- Stir cornstarch and water in a small cup until cornstarch dissolves; set aside. Bring milk and margarine to a boil in a saucepan, stirring constantly. Reduce the heat and whisk the cornstarch mixture into the milk mixture, bring to a simmer over medium heat. Cook and stir until the mixture is thick and smooth. - Preheat oven to 375 degrees. Brush a large rimmed baking sheet with oil; set aside.
- In a pie plate or shallow bowl, combine cornflake crumbs, cayenne, and 1 tablespoon salt. In a large bowl, toss potatoes with oil to coat. One or two at a time, dip potatoes in crumbs, turning to coat all sides; transfer to prepared baking sheet. Bake potatoes, turning once, until crispy on the outside and tender on the inside, 40 to 50 minutes. Remove from oven, and season with more salt.
- Meanwhile, in a medium bowl, combine beef, cheddar, 1 teaspoon salt, and 1/2 teaspoon pepper. With a fork, mix very gently to combine. Gently shape meat into 4 patties, each 4 inches in diameter and 1 inch thick; season with salt and pepper.
- Fifteen minutes before potatoes are finished baking, heat a large nonstick skillet over medium-high. Place burgers in skillet, and cook until browned on both sides and done to taste (4 to 6 minutes per side for medium-rare). Serve on hamburger buns with crispy oven fries, Burger Sauce, and desired garnishes.
