Country Ham and Cheddar Pie with Whole Grain Mustard and Greens with Apricot Vinaigrette and Almonds image

1 package (2 sheets) all-butter frozen puff pastry, defrosted but still cold
1 large egg plus 2 tablespoons water, beaten
3 tablespoons whole grain mustard
1 tablespoon apricot jam
Freshly grated black pepper
8 ounces thinly sliced country ham or Black Forrest ham
6 ounces coarsely grated aged white Cheddar
3 tablespoons champagne vinegar
1 heaping tablespoon apricot jam
Kosher salt and freshly ground black pepper
1/4 cup extra-virgin olive oil
3 ounces baby mixed greens
1/4 cup lightly toasted sliced almonds

Steps:

  • For the pie: Place a rack in the center of the oven and preheat to 400 degrees F. Line a half-sheet pan with parchment paper. Set aside.
  • Unfold or unroll one sheet of the puff pastry on a lightly floured surface. Gently roll with a rolling pin until each side is increased by about 1/2-inch. Place the pastry on the prepared baking sheet and brush the pastry from edge to edge with prepared egg wash. Combine the mustard, apricot jam and a generous amount of black pepper in a small bowl, and spread over the egg wash, leaving about an inch border between the mustard and the edge of pastry. Place the ham evenly over the mustard and then evenly spread the cheese over the ham.
  • Roll out the second piece of puff pastry as the first, increasing the size by about 1/2-inch on each side. Gently place it on top of the ham and cheese and press the edges together with your fingers. Gently fold about 1/2-inch of the edges over, creating a thick crust. Press the edges with the tines of a fork. Dip the fork in flour if it sticks to the puff pastry during pressing. Lightly brush a layer of egg wash over the top and edges of the pie. Cut a few small slits into the top of the pie and bake until cooked through and golden brown, 30 minutes.
  • For the greens: Whisk together the vinegar and jam in a small bowl, and season with salt and pepper. Slowly whisk in the oil until emulsified. Put the greens in large bowl, toss with the vinaigrette, divide among the plates and top with the almonds.

1 1/2 teaspoons active dry yeast
2 tablespoons plus 1 teaspoon packed light brown sugar, divided
1/4 cup warm water (110-115°F)
1 cup warm milk (110-115°F)
2 1/2 to 3 cups all-purpose flour
1/2 cup finely chopped country ham (3 oz; preferably Newsom's or Benton's), divided
1/3 cup finely chopped sharp Cheddar, divided
6 cups water
4 teaspoons baking soda
1/2 cup Dijon mustard
2 tablespoons finely chopped seeded fresh jalapeños
1 tablespoon mild honey
1/2 stick unsalted butter, melted
1 to 2 tablespoons pretzel salt or coarse salt

Steps:

  • Stir together yeast, 1 teaspoon brown sugar, and warm water in a large bowl and let stand until foamy, 5 to 8 minutes. (If mixture doesn't foam, start over with new yeast.) In a separate bowl, stir remaining 2 tablespoons brown sugar into warm milk until dissolved.
  • Add 2 1/2 cups flour and milk mixture to yeast mixture and stir with a wooden spoon or rubber spatula until a soft dough forms, adding up to 1/2 cup additional flour, a little at a time, if necessary. Turn out dough onto a lightly floured surface and gently knead a few times to form a smooth ball. Transfer to a clean bowl. Cover with plastic wrap and let rise in a draft-free place at warm room temperature until doubled and bubbles appear on surface, about 2 hours.
  • Preheat oven to 400°F with rack in upper and lower thirds. Line two 4-sided sheet pans with parchment paper.
  • Turn out dough onto a lightly floured surface and cut into 4 equal pieces. Lightly dust your hands with flour, then gently roll and stretch 1 piece of dough to form a 12-inch-long rope. Flatten dough and arrange so a long side is nearest you, then roll out to a roughly 12- by 4-inch rectangle with a lightly floured rolling pin. Gently press one fourth of ham and cheese into lower third of rectangle, leaving a 1/2-inch border along bottom edge. Stretch bottom edge of dough up over filling and press tightly to seal, then roll up as tightly as possible to form a rope. Cut rope into 12 pieces and transfer to a sheet pan. Make 3 more ropes with remaining dough, ham, and cheese and cut into pieces, transferring to sheet pans. Let rest at room temperature, uncovered, 30 minutes (dough will rise slightly).
  • Bring water (6 cups) to a boil in a 4-to 5-quart saucepan. Reduce heat and stir in baking soda. Cook pretzel bites in batches in gently simmering water, turning once, until slightly puffed, about 20 seconds. Transfer with a slotted spoon to sheet pans.
  • Bake until puffed and golden-brown, about 15 minutes (cheese may ooze slightly).
  • Meanwhile, stir together mustard, jalapeños, and honey.
  • Brush warm pretzel bites with butter and sprinkle with pretzel salt. Serve warm or at room temperature with jalapeño mustard for dipping.

This was adapted from a recipe card picked up in a grocery store. Delicious - great for a cold day, with some soup! Feel free to change up the bread to what you prefer - the original called for marble rye, but I put in what we usually use. You can use other types of ham and regular cheddar, but the flavor of the smoked versions really contrast wonderfully with the sweetness of the onions and apple, so I would recommend trying them, if possible. I'm also putting a range on the meat, because we prefer smaller meat portions (the 1/4 lb), but I know a lot of people who like more meat, so you could easily use up to 1/2 lb, if desired. The original directions called for using a panini grill, but I don't have one, so I'm enclosing both methods.

1/4 large sweet onion, cut into thin slices
2 teaspoons maple syrup
4 slices whole wheat bread
1 tablespoon mayonnaise

Steps:

  • Cook onions until tender in a skillet prepared with non-stick cooking spray over medium-high heat.
  • When onion is browned, add syrup, stirring well, and cook for an additional minute.
  • Allow onion to cool. Spread 2 slices of bread with mayonnaise.
  • Layer remaining ingredients on top, ending with the second slice of bread on each sandwich.
  • Spray both sides of each sandwich with cooking spray before placing on panini grill or in skillet.
  • If using panini grill, grill the sandwiches for about 3 minutes, or until cheese is melted and bread is toasted.
  • If using a skillet, cook sandwich over medium heat for about 2 minutes on each side, flipping once, or until cheese is melted and bread is toasted. Use a second skillet to weight down the sandwich on top.

1 Tbsp. olive oil
1/2 cup chopped red peppers
4 pears, peeled, chopped
4 green onions, sliced
1/4 cup currants
1/4 cup water
2 Tbsp. HEINZ Apple Cider Vinegar

Steps:

  • Heat oven to 325°F.
  • Place ham in roasting pan; cover loosely with foil. Bake 1-1/2 hours.
  • Meanwhile, mix mustard, syrup and cloves until blended. Heat oil in small saucepan on medium heat. Add peppers; cook 3 to 5 min. or until crisp-tender, stirring frequently. Add pears, onions, currants, water, vinegar and 1/3 cup mustard mixture; mix well. Cook 20 min., stirring occasionally. Remove from heat; set aside until ready to use.

While we use a delicious aged Cheddar, this sandwich will be a success with other cheeses, too, as long as they have a big presence, such as a sharp Gouda (no subtle fontinas or mozzarellas); because the cheese is the star of the sandwich, it needs to stand up to the other flavors. Use just enough smoked ham to balance the cheese and poached pear. Use a very thin layer of mustard on the bread, right next to the cheese. The bread in this instance should be something nutty and fruity. The tartness of the dried cranberries in our bread is a great addition to the sandwich, so if you don't have them in your bread, you could add them to the poaching liquid when you prepare the pears.

2/3 cup sugar
2/3 cup cider vinegar
1 piece star anise
1 teaspoon black peppercorns
2 whole cloves
Pinch of ground peperoncino or red pepper flakes
1/2 cinnamon stick
2 Bartlett pears, peeled, cored, and cut into 1/8-inch slices
8 slices sharp Vermont Cheddar cheese
8 slices cranberry-pecan bread
8 slices smoked ham
1/4 cup Spiced Walnuts (page 199) if cranberry-pecan bread isn't available (optional)
Freshly ground black pepper
2 teaspoons Dijon mustard

Steps:

  • In a saucepan, combine the sugar, vinegar, 2/3 cup water, star anise, peppercorns, cloves, peperoncino, and cinnamon stick, and bring to a boil. Reduce the heat and simmer for 15 minutes. Add the pears, bring back to a simmer, and cook for 2 to 3 minutes, until tender. Remove from the heat and cool in the liquid. Unless used right away, transfer the pears and juices to a container. (Keeps in the refrigerator for 1 to 2 weeks.)
  • Preheat a sandwich press according to the manufacturer's specifications (see Note, page 96). Place 1 slice of cheese on each of 4 slices of bread. Top with the ham, followed by 4 to 6 slices of pear and the walnuts, if using. Season with pepper and top with the remaining cheese. Spread the mustard on the remaining slices of bread, close the sandwiches, and place in the sandwich press (no need to butter the press or the bread). Close the lid and apply slight pressure. Cook without disturbing for 5 to 8 minutes. Open the press and check for color and temperature: the cheese should be melted and the bread golden. If the bread is sticking to the press, allow it to cook for a bit longer and it will unstick itself. If the press seems to generate more heat on the bottom, flip the sandwich halfway through to ensure even cooking (making sure the ridges in the bread line up). Once cooked, remove, cut into halves, and serve.
