Keto Cheese Shell Tacos image

These crispy, delicious, healthy, and gluten-free keto cheese shell tacos will become your all-time favorite choice for taco nights. You won't be able to resist these cheese shells filled with flavorful beef mince, avocado, tomatoes, chopped onions, fresh parsley, and creamy garlic sauce.

Provided by Romana Levko

Categories     Main Course     Snack

Time 15m

Number Of Ingredients 11

5 oz mozzarella (or cheddar cheese)
1/2 cup beef mince
1/4 tsp chili powder
1/4 tsp pepper flakes
1/2 tsp onion powder
1/2 medium onion (diced)
1/2 cup napa cabbage (chopped)
1/2 avocado (diced)
3 large cherry tomatoes
3 tsp garlic cream sauce
salt and pepper to taste

Steps:

  • Place a non-stick skillet over medium-low heat as you divide the shredded mozzarella cheese into three equal portions.
  • Then, evenly sprinkle one portion of the mozzarella cheese on the skillet and let it cook for about 2-3 minutes.
  • When the bottom of the cheese turns brown, set the skillet aside for about half a minute to let it cool down a bit. Then, carefully remove the cheese with a plastic spatula and place it over a spoon or between two sections of the oven rack to form the shell.
  • Repeat steps 2 and 3 to make two more cheese taco shells.
  • As the cheese hardens into taco shells, fry the beef mince in a skillet until thoroughly cooked. Add your choice of spices-mine were chili powder, pepper flakes, onion powder, salt, and pepper.
  • To make the sauce, simply take some heavy cream, mix in minced garlic cloves, and add some salt.
  • Now it's finally time to make the tacos. Simply take a cheese taco shell and put chopped napa cabbage, fried beef mince, avocado, tomatoes, onion, and some chopped fresh parsley inside. Lastly, pour some sauce on top, and it's ready to serve!

CHEESE SHELL TACOS RECIPE BY TASTY

Cheese Shell Tacos Recipe by Tasty image

Here's what you need: cheddar cheese, ground beef, small onion, garlic, jalapeño, taco seasoning, water

Provided by Jake Laycock

Categories     Appetizers

Yield 4 servings

Number Of Ingredients 7

3 cups cheddar cheese, or cheese of choice, freshly shredded
1 lb ground beef
1 small onion, diced
3 cloves garlic, chopped
1 jalapeño, seeded and diced
1 packet taco seasoning
⅓ cup water, if needed

Steps:

  • Preheat your oven to 350˚F (180˚C).
  • Freshly shred the cheese. Place your cheese in neat piles on an ungreased baking sheet.
  • Bake for about 8 minutes, until all the individual shreds melt into one disc. Be careful not to let the cheese color too much.
  • Once they are all melted, let them cool for 2 minutes on your baking sheet, then lift them onto paper towels to blot off any excess grease.
  • To form the shells, lay them over a propped up utensil. (Or you can use anything in your kitchen, a wide bowl or saucepan could work too!) Set these aside to cool.
  • To make the taco filling, brown the ground beef on high heat. Make a well in the center, add in the onion, jalapeños, garlic, and sprinkle in the taco seasoning packet. Stir to combine. Add water if you need it for a nice saucy filling.
  • Use a fork to hold your cheese shell in place and fill with the beef mixture, and toppings of your choice.
  • Enjoy!

HOMEMADE DORITOS LOCOS TACOS RECIPE BY TASTY

Homemade Doritos Locos Tacos Recipe by Tasty image

Have a craving for your favorite fast food taco but want to try it at home? This homemade Doritos Locos Taco recipe is perfect for you. Ground Doritos make a perfect cheesy taco shell, while the well-seasoned meat mixture closely replicates the original. Serve this up for a few guests and see if they think homemade is better than fast food.

Provided by Katie Aubin

Categories     Lunch

Time 40m

Yield 12 tacos

Number Of Ingredients 30

2 cups Doritos Nacho Cheese-Flavored Tortilla Chips
1 cup all purpose flour
½ cup masa harina
2 tablespoons nacho cheese powder, plus more for dusting
½ teaspoon kosher salt
1 teaspoon baking powder
½ cup vegetable shortening, melted
¾ cup water
nonstick cooking spray, for greasing
½ medium yellow onion
3 cloves garlic
olive oil, to taste
1 lb ground beef
2 teaspoons ground cumin
½ teaspoon ground coriander
¼ teaspoon cayenne
1 teaspoon garlic powder
1 tablespoon granulated onion
1 teaspoon paprika
1 teaspoon chili powder
1 teaspoon ground beef bouillon
½ teaspoon msg
¼ teaspoon sugar
kosher salt, to taste
2 cups water, divided
2 tablespoons cornstarch
½ cup sour cream
½ cup iceberg lettuce, shredded
½ cup shredded cheddar cheese
1 tomato, diced

Steps:

  • Make the taco shells: Add the Doritos, flour, masa harina, nacho cheese powder, salt, and baking powder to a food processor. Process until the Doritos are broken down into fine crumbs. With the processor running, slowly pour in the melted lard and water. Continue processing until the dough comes together in a ball.
  • Transfer the dough to a piece of plastic wrap. Shape into a disc, wrap tightly, then refrigerate for 30 minutes.
  • Preheat the oven to 400°F (200°C). Grease 2-3 baking sheets with nonstick spray.
  • Working with one dough ball at a time (keep the rest covered so they don't dry out), place between 2 sheets of parchment paper or plastic wrap. Use a heavy skillet to press down evenly into a thin tortilla.
  • Transfer the tortilla to the griddle and cook for 1-2 minutes per side, until lightly browned.
  • Transfer the cooked tortilla to a large bowl lined with a kitchen towel and cover to keep warm while you cook the rest of the tortillas. The steam will help keep them moist and soft.
  • Arrange the tortillas in a single layer on the prepared baking sheets. Bake for 3 minutes, until crisp. While still hot, carefully fold the tortillas into taco holders to set the shell shape. Dust with more nacho cheese powder. Let cool while you make the filling.
  • Add the onion and garlic to a food processor and drizzle with oil. Pulse until finely minced, scraping down the sides as needed.
  • Transfer the onion mixture to a large pan and sweat over medium-low heat until soft and translucent, 5- 7 minutes.
  • Add the ground beef, cumin, coriander, cayenne, garlic powder, granulated onion, paprika, chili powder, beef bouillon, MSG, sugar, and salt. Stir well to combine. Increase the heat to high and use a masher or whisk to break the meat into small pieces. Cook until the beef is golden brown and caramelized, about 5 minutes.
  • Deglaze the pan with ½ cup of water, stirring to scrape up any browned bits. 12. Continue cooking for about 10 minutes, until the liquid reduces.
  • In a liquid measuring cup or medium bowl, whisk together the cornstarch and remaining 1½ cups water. Add to the beef mixture and bring to a simmer. Cook until the mixture thickens, about 5 minutes.
  • Use an immersion blender to purée about a quarter of the meat in the pan, then stir everything together.
  • To assemble, spoon the meat mixture into the taco shells. Top with sour cream, shredded lettuce, cheese, and diced tomatoes.
  • Serve immediately.
  • Enjoy!

SOFT CHEESE TACOS

Soft Cheese Tacos image

I grew up in Oklahoma City eating soft cheese tacos at Ninos Mexican Restaurant. I've spent years searching the internet for this recipe, and at 62 years old, I've finally found it.

Provided by Janet Casey

Categories     World Cuisine Recipes     Latin American     Mexican

Time 40m

Yield 6

Number Of Ingredients 13

2 tablespoons unsalted butter
1 large onion, chopped
1 jalapeno pepper, seeded and chopped, or more to taste
4 cloves garlic, minced
1 (14.5 ounce) can chicken broth
2 tablespoons cornstarch
4 cups shredded American cheese
1 (14.5 ounce) can diced tomatoes
1 (4 ounce) can diced green chile peppers
½ teaspoon ground cumin
½ teaspoon cayenne pepper
12 corn tortillas, warmed
3 cups shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat butter in a pot over medium-low heat. Cook and stir onion and jalapeno pepper in the hot butter until onion is translucent, about 5 minutes. Add garlic to onion mixture and cook until fragrant, about 30 seconds.
  • Whisk chicken broth and cornstarch together in a bowl until smooth; pour into the onion mixture. Cook, stirring constantly, until broth thickens, about 2 minutes. Reduce temperature to low and slowly stir American cheese, 1/4 cup at a time, into broth mixture until cheese is completely melted and sauce is smooth, 5 to 10 minutes.
  • Stir diced tomatoes, green chile peppers, cumin, and cayenne pepper into cheese sauce and keep pot over low heat. Divide cheese sauce in half, reserving 1/2 of the sauce for another use.
  • Sprinkle about 1/4 cup Cheddar cheese down the center of 1 tortilla and roll tortilla around cheese. Place rolled tortilla, seam-side down, in a baking dish. Repeat with remaining tortillas and Cheddar cheese. Cover dish with aluminum foil.
  • Bake in the preheated oven until cheese is melted, 10 to 12 minutes. Remove foil and pour the reserved 1/2 of the cheese sauce over tacos.
