Cheese Tortellini Bake with Roasted Broccoli image

Using store-bought marinara sauce and tortellini makes this Cheese Tortellini Bake a cinch to put together.

2 medium crowns broccoli (broken into florets)
2 cloves garlic (peeled and sliced)
Olive oil mister
Salt and pepper to taste
1 9-ounce package cheese tortellini
1 teaspoon Italian seasoning
1 cup good quality marinara sauce
1/2 cup shredded mozzarella cheese

Steps:

  • Preheat the oven to 400ºF.
  • Spray a large baking dish with cooking spray. Place the broccoli and garlic in the dish, spray with oil, and sprinkle with salt and pepper to taste. Roast the broccoli for about 20 minutes or until tender and just beginning to brown, stirring occasionally. Don't turn off the oven.
  • While the broccoli is roasting, cook the tortellini according to the package instructions and drain well. (If you don't drain the tortellini well, the bake will be watery, so make sure it's really dry!)
  • Add the tortellini to the baking dish with the broccoli and toss with the Italian seasoning and marinara sauce. Top with cheese and bake for about 10 minutes, or until the cheese has melted.

2 cups heavy whipping cream
1 cup fresh broccoli florets
2 packages (9 ounces each) refrigerated cheese tortellini
2-1/2 cups shredded Parmesan cheese, divided
1/4 teaspoon coarsely ground pepper
2 teaspoons minced fresh parsley

Steps:

  • In a large saucepan, cook cream and broccoli, uncovered, over medium-low heat for 5-6 minutes or until broccoli is crisp-tender. Meanwhile, cook tortellini according to package directions. , Stir 2 cups cheese and pepper into broccoli mixture. Bring to a boil. Reduce heat; simmer, uncovered, for 8-10 minutes or until mixture is thickened, stirring occasionally. , Drain tortellini; add to sauce and toss to coat. Sprinkle with parsley and remaining cheese.

1 bunch broccoli
1 lb meat-filled tortellini or 1 lb cheese tortellini
1/4 cup unsalted butter
1/4 cup flour
1 1/2 cups chicken broth
1/2 cup milk
1/2 teaspoon salt
pepper
2 (14 1/2 ounce) cans diced tomatoes with basil oregano and garlic
10 -12 slices American cheese
1/4 cup parmesan cheese

Steps:

  • Preheat oven to 350 degrees.
  • Wash broccoli and cut into bite size pieces.
  • Cook broccoli in boiling water for 4 to 5 minutes and drain.
  • Cook tortellini according to package directions and drain.
  • Mix broccoli and tortellini together and set aside.
  • In a medium size pan heat butter until melted.
  • Stir in flour salt and pepper.
  • Mix chicken broth and milk together and add slowly to flour/butter mixture.
  • Cook and stir until thickened.
  • Spray and 9 x 13 baking dish with non-stick cooking spray.
  • Layer in pan: 1/2 tortellini broccoli mixture, 1/2 the white sauce, 1/2 the American cheese slices and 1 can of tomatoes.
  • Repeat layers and top with Parmesan cheese.
  • Cook, uncovered, for 45 minutes or until bubbly and hot.
