CHEESEBURGER PUFFS
Cheeseburger Puffs are so delightful. These mouthwatering and irresistible appetizers can be served for tailgating parties and potlucks. But they're also marvelous for weekend meals when you've been busy shuttling kids around all day for sporting events or practice. They taste like Cheeseburger in a soufflé form and drizzled with barbecue sauce before serving. These fantastic appetizers will get rave reviews whenever you make them.

Steps:
- Preheat oven to 375º.
- Generously grease muffin tins.
- Brown onion and ground beef in skillet over low to medium heat until no pink remains.
- Drain well.
- Add barbecue sauce.
- Continue cooking over low heat until sauce thickens.
- Cool completely.
- Set aside.
- Combine flour, baking powder, onion powder and parsley in a small mixing bowl.
- Add milk and egg.
- Whisk ingredients until combined.
- Stir in shredded cheese and beef mixture.
- Allow mixture to stand and absorb for 10 minutes.
- Divide beef mixture among 9 muffin tins.
- Cut each cheddar cheese string into 3 even pieces.
- Press the cheese piece into the center of each muffin.
- Cover with batter.
- Bake at 375 º for 19-21 minutes, or until lightly browned and mixture puffs up.
- Allow puffs to cool abut 10 minutes before removing from tins.
- Remove muffins from tins.
- Garnish with a pickle or pickle slice on top.
- Secure with toothpicks.
- Place Cheeseburger Puffs on a serving platter.
- Drizzle with additional barbecue sauce, to serve.

MUFFIN-TIN CHEESEBURGERS

- Heat oven to 350°F. Brush 12 regular-size muffin cups with melted butter. Press half of a bun, cut side up, into each muffin cup, pressing to 1/4-inch thick; set aside.
- Meanwhile, in 12-inch nonstick skillet, cook bacon over medium heat until crisp; with slotted spoon, transfer to paper towel-lined plate to drain. Pour off and discard all but 1 tablespoon drippings. Add beef, onion and seasoned salt to drippings in skillet; heat to medium-high heat. Cook 5 to 7 minutes, stirring frequently, until beef is brown and cooked through; drain.
- Divide mixture evenly among muffin cups. Gently press mixture down into cups. Top each with 1 teaspoon ketchup. Divide cheese, then sesame seed among muffin cups.
- Bake 7 to 9 minutes or until cheese is melted. Immediately top with cooked bacon, followed by relish and mustard or Sriracha sauce, as desired.

CHEF JOHN'S PARTY CHEESE PUFFS
These beautiful cheese puffs, gougeres, are as easy as they are delicious. Usually Gruyere cheese is used but I had some very sharp farmhouse Cheddar cheese in the fridge, so I decided to use that. As long as you are using a very sharp, full-flavored cheese I don't think you can go wrong. I love gougeres with Gruyere, but I think the extra-sharp Cheddar was just as good.

- Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with a silicone baking mat.
- Stir water, butter, and salt together in a pot; bring to a simmer. Reduce heat to medium and whisk flour into butter mixture until a paste-like dough forms, 2 to 3 minutes. Transfer dough to a bowl to cool until warm, 5 to 10 minutes.
- Whisk 1 egg, thyme, and black pepper into cooled dough until egg is completely incorporated. Add remaining egg and whisk until completely incorporated into dough. Stir 3/4 the cheese into dough until combined. Scoop 1-inch balls of dough onto prepared baking sheet. Top each with remaining cheese.
- Bake in the preheated oven until golden and puffed, 15 to 20 minutes.

CUTE CREAM PUFFS RECIPE BY TASTY

- Preheat the oven to 425˚F (220˚C). Line 2 baking sheets with parchment paper. Chill a large bowl in the freezer.
- Add the melted chocolate to a small piping bag or zip-top bag and cut ⅛ inch (3 mm) off the tip of the bag.
- Pipe 10 sets of ears, eyes, noses, mouths, and paws onto 1 of the parchment-lined baking sheets. Chill in the refrigerator until ready to use.
- Make the puffs: in a medium pot, bring the butter, water, milk, sugar, and salt to a boil over high heat.
- Once the liquid begins to boil, remove the pot from the heat and immediately add the flour, stirring constantly with a wooden spoon until the liquid is absorbed and the mixture begins to form a ball.
- Return the pot to the heat and cook for another 30 seconds to remove excess moisture. Remove the pot from the heat. Working quickly, add the eggs one at a time, stirring until each one is fully incorporated before adding the next. Continue stirring until the dough starts to pull away from the sides of the pan and is thick and glossy. Transfer the batter to a piping bag or zip-top bag fitted with a round tip.
- Pipe 1-inch (2-cm) dollops of batter on the prepared baking sheet, spacing them at least 1-inch (2-cm) apart.
- Dip a fingertip in the egg wash and gently press down any points, then brush the egg wash lightly all over the puffs.
- Bake for 10 minutes. Reduce the oven temperature to 350˚F (180˚C), and continue to bake for 20 minutes more, until golden brown.
- Transfer the puffs to a wire rack and cool until able to handle. Cut the tops off of the puffs with a serrated knife. Let cool completely.
- Make the whipped cream: add the heavy cream and powdered sugar to the chilled bowl and beat with an electric hand mixer or whisk until stiff peaks form. Transfer the whipped cream to a piping bag or zip-top bag fitted with a round tip.
- Pipe mounds of whipped cream into the puffs. Add the tops of the puffs and decorate with the chocolate faces.

These are slightly similar to the sausage balls made with bisquick and shredded cheese. I even like them cold. They can be frozen. Recipe came from plainchicken.com. Great appetizer or tailgate snack. I will try adding jarred jalapenos or cooked onion next time.

- Preheat oven to 400 degrees.
- Cook and crumble ground beef.
- In a bowl, combine bisquick bacon and cheese.
- Stir in cooked beef.
- Add buttermilk and stir in with a fork until just moistened.
- Shape into 1 1/2 inch ball. It will be a bit sticky.
- Place 2 inches apart on ungreased baking sheet.
- Bake 12-15 minutes until puffed and golden brown.
- Cool on wire racks.

PUFF PASTRY CHEESEBURGERS
This recipe comes from Paula's Party. I was watching her show the other night and saw her son Jamie make these. They looked so good that I wanted to share the recipe with everyone :) NOTE: I narrowed down the onions for our taste but original calls for 1/2 cup diced onions.

- Take out frozen puff pastry and let sit at room temperature for 30 to 40 minutes.
- Preheat oven to 350°F.
- Mix hamburger, diced onion,steak seasoning, steak sauce together until well blended.
- Make into 5 patties
- Grill or fry in frying pan using a little olive oil until burgers are medium well done.
- On a flat surface place a little flour out and place the puff pastry sheet on top and slightly roll to flatten lightly.
- Cut into 5 rectangles evenly, if possible.
- Again roll each rectangle out to fix one burger on.
- Place burgers on each rectangle and add a slice of cheese.
- Cover burgers by bringing ends together to cover the burger completely.
- Place on a lightly greased baking sheet.
- Whisk together egg yolk and water.
- Brush over the covered burgers.
- Place in preheated oven and bake for 15 minutes or until lightly browned.
- For a Garnish: squeeze a little ketchup zig zagging over the burgers and squeeze a little mustard the opposite way. Enjoy!

These double-stacked cheeseburgers bring all the savory-sweet flavors of grilled Korean barbecue. - In a medium bowl, combine vinegar, 1 teaspoon salt and 1 teaspoon sugar, stirring to dissolve the sugar. Add cucumbers and toss to coat, then let stand at room temperature.
- Heat broiler to high and set oven rack set 6 inches from heat. In a small bowl, combine soy sauce, scallions, garlic, 1/2 teaspoon pepper and remaining 2 tablespoons sugar. Mix well, stirring until the sugar is dissolved. Transfer 1 tablespoon of the marinade to a small bowl and stir in mayonnaise and ½ teaspoon sesame oil. Set aside.
- In a medium bowl, combine beef and 3 tablespoons of the scallion marinade. Gently mix to incorporate. Form into 8 thin patties (each about 4 ½ inches wide) and arrange in a single layer on a rimmed baking sheet. Brush tops with half of the remaining marinade. Flip and brush with the remaining marinade. Broil until golden and caramelized on top, about 4 minutes.
- Arrange cheese on 4 patties, top with the remaining patties and let stand until cheese melts, about 1 minute.
- Pour off all the liquid from the cucumbers and stir in the remaining 2 teaspoons sesame oil.
- Smear the cut side of the buns with some of the seasoned mayonnaise. Arrange bottom buns on plates. Layer with lettuce, onion, tomato, double-stack burgers, pickles and top bun. Serve with extra pickles on the side.
