Steps:

  • Bobby's Perfect Patty
  • Shape 6 ounces of 80 percent lean ground beef chuck into a uniform patty, no more than 3/4 inch thick (don't overwork the meat). Make a depression in the center with your thumb so the burger won't bulge; the indent will rise as the patty cooks. Preheat a grill or cast-iron grill pan to high. Brush the burger with canola oil and season with salt and pepper. Grill until golden brown and slightly charred, turning once (7 minutes for medium-rare). Avoid pressing with a spatula! Add cheese for the last minute of cooking.
  • Provolone
  • Oozy cheese makes this burger: Two slices of aged provolone are added during the last minute of grilling.
  • Hot Peppers
  • Bobby likes his Philly cheesesteaks with lots of pickled hot peppers, so he loads them on here, too.
  • Roasted Peppers
  • In place of classic griddled bell peppers, Bobby uses roasted red peppers, sliced into strips.
  • Onions
  • Bobby sautes thin rings of Spanish onion in canola oil until soft and golden to top off the burger.

Here's what you need: ground beef, salt, pepper, white onion, provolone cheese, sesame bun, green leaf lettuce, white onion

¾ lb ground beef
½ tablespoon salt
½ tablespoon pepper
2 tablespoons white onion, diced, divided
1 slice provolone cheese, quartered
1 sesame bun, butter-toasted
1 green leaf lettuce
1 tablespoon white onion, diced

Steps:

  • In a large bowl, combine the ground beef, salt, and pepper.
  • In a ramekin, spread two-thirds of the beef patty evenly along the bottom and the sides.
  • Place half the diced onion and provolone in the well.
  • Preheat the oven to 425°F (220°C).
  • Place the rest of beef patty on top and pat to flatten.
  • Place the ramekin on a baking sheet along with a sesame bun, face down.
  • Bake for 25 minutes.
  • Assemble the burger with the sesame bun, lettuce, and the rest of the onion.
  • Enjoy!

2 pieces white sandwich bread, crusts removed and cut into ¼-inch pieces
⅓ cup milk
2½ teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 garlic cloves, minced
1½ tablespoons Worcestershire sauce
2 tablespoons ketchup
3 pounds 80 to 85% lean ground beef
3 scallions, white and green parts, very finely sliced (optional)
8 hamburger buns

Steps:

  • Preheat the grill to high heat.
  • In a large bowl, mash the bread and milk together with a fork until it forms a chunky paste. Add the salt, pepper, garlic, Worcestershire sauce and ketchup and mix well.
  • Add the ground beef and scallions and break the meat up with your hands. Mix everything together until evenly combined. Divide the mixture into 8 equal portions and form compact balls. Flatten the balls into ¾-inch patties about 4½ inches across. Form a slight depression in the center of each patty to prevent the burgers from puffing up on the grill.
  • Oil the grilling grates. Grill the burgers, covered, until nicely browned on the first side, 2 to 4 minutes. Flip burgers and continue cooking for a few minutes more until desired doneness is reached. Before serving, toast the buns on the cooler side of the grill if desired.
  • Freezer-Friendly Instructions: The uncooked burgers can be frozen for up to three months. (Freeze the burgers on a baking sheet or plate so their shape sets, then transfer them to a sealable plastic bag for easy storage.) Defrost the burgers overnight in the refrigerator prior to serving and then cook as directed.

1 tbsp Grill Mates Montreal Steak Seasoning
1 medium onion thinly sliced
1 medium green bell pepper cut into thin strips
4 slices provolone cheese
4 hamburger rolls

Steps:

  • Mix ground beef and Seasoning until well blended. Shape into 4 patties.
  • Grill over medium heat 4 to 6 minutes per side or until burgers are cooked through (internal temperature of 160°F). Grill onions and bell peppers in grill basket or grill rack 3 to 4 minutes or until tender and lightly browned, stirring frequently. Add cheese slices to burgers 1 minute before cooking is completed.
  • Serve burgers on rolls topped with grilled onion and bell pepper mixture.

1/2-1 medium onion, sliced
1/2-1 red pepper, sliced
1/2-1 green pepper, sliced
6 slices provolone cheese
6 hamburger buns
1 teaspoon garlic or 1 teaspoon garlic salt
1 teaspoon onion salt
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Turn grill or stove onto medium-high.
  • Take ground hamburger and make into 6 patties.
  • Mix all seasonings and season patties equally.
  • Put patties on grill or stove. When about 70-80% toward your wanted doneness, add provolone and vegetables. Cook the rest of the way.
  • Put patties in hamburger buns. Serves ~great~ with a cold drink, enjoy!
