CHEESY BREAKFAST PIZZA WITH SAUSAGE HAM AND EGGS
This cheesy breakfast pizza with sausage ham and eggs is a great spin on traditional breakfast. Perfect solution for any morning or evening meal!

- Preheat oven to 400 degrees. Cook breakfast sausage until there is no more pink. Break the sausage up with a spoon as it cooks. Once it is done, set it aside on a bed of paper towels for access grease to drain.
- Cut ham into small bite size pieces. Use the same pan the sausage cooked in, and sear it for 5-7 minutes, until it begins to brown. Remove the ham from the pan and set it aside.
- Mix-up (scramble) the eggs in a medium size bowl. Add the salt and pepper to the egg mixture. Pour the eggs into a non-stick skillet and scramble them until they are semi soft. Try not to cook them all the way through, as they will finish cooking in the oven.
- Place the butter in a skillet over medium heat. Once it begins to melt, sprinkle in the flour. Continue stirring the flour into the butter until it is fully absorbed.
- Slowly pour the milk into the flour mixture. Whisk it together until it is smooth. If the mixture is too thick, add a teaspoon of milk at a time.
- Mix the sharp cheddar cheese, and all of the seasonings into the sauce. Stir until fully combined, and the cheese is melted.
- Spread at least one cup of the cheese sauce onto the pizza dough. Smooth it out into one even layer. Add more sauce if desired.
- Begin layering the remaining ingredients over the cheese sauce. Add the eggs, sausage, and ham into even layers across the entire pizza.
- Sprinkle remaining cheese over the top and bake in the oven for 10 minutes, or until crust is golden brown.

- Separate crescent dough into 16 triangles and place on a greased 14-in. round pizza pan with points toward the center. Press onto the bottom and up the sides of pan to form a crust; seal seams. Bake at 375° for 11-13 minutes or until golden brown., Meanwhile, in a large skillet, cook the sausage, onion and green pepper over medium heat until sausage is no longer pink; drain. Prepare gravy according to package directions. Stir into sausage mixture; set aside., In a small bowl, whisk the eggs, milk, salt and pepper. In a large skillet, heat butter over medium heat. Add egg mixture; cook and stir until almost set. Spread gravy mixture over crust. Top with eggs, mushrooms and cheeses. Bake 5-10 minutes longer or until eggs are set and cheese is melted. I like to fix this fun dish when we invite our children and grandchildren for brunch. There's never a slice left! The recipe is quick and easy to prepare, using refrigerated crescent rolls to form the crust. The ham makes it hearty.

- Unroll crescent roll dough and place on an ungreased 12-in. pizza pan. Press onto the bottom and 1/4 in. up the sides, sealing seams and perforations. - Preheat the oven to 400 degrees F. Line a sheet pan with parchment paper.
- Add the butter to a nonstick skillet over medium heat. Beat 6 of the eggs together in a bowl. When the butter has melted, add the beaten eggs and the chives to the skillet, then a pinch of salt and pepper. Scramble the eggs until cooked through, about 2 minutes. Remove from the heat and add to a bowl to cool slightly.
- Add the ham, mozzarella and Cheddar to the eggs and mix to combine. Set aside.
- Make an egg wash with the remaining egg and a splash of cold water in a small bowl.
- Lay out the sheets of puff pastry and cut into twelve 3-by-5-inch rectangles. Divide the egg mix among six of the puff pastry rectangles, leaving borders empty around the edges. Brush the borders with the egg wash and top each with another puff pastry rectangle. Using a fork, crimp the edges to seal. Transfer to the lined baking sheet. Brush the tops with the egg wash and sprinkle with the poppy seeds. Bake until golden, about 20 minutes.
- Serve hot and enjoy.

- Preheat oven to 425F degrees. Spray a large baking sheet (10"x 15") with nonstick cooking spray.
- Spread the pizza crust into the pan. Stretch it out to all the edges. Brush olive oil evenly on top of the crust. Poke the crust really well with a fork (this will keep it from puffing up too much.)
