RED, GREEN AND WHITE CHRISTMAS SALAD
A festive salad filled with Christmas colours to compliment any festive spread! Perfect for making ahead.

Steps:
- Fill a large pot with water and bring to boil.
- Cut the woody ends off the asparagus, then cut the asparagus into 3. Separate the asparagus heads from the stems.
- Trim the beans and place in a separate pile.
- Remove the strings along each side of the snow peas.
- Place the beans in the boiling water. When the water comes back to the simmer again, leave the beans to simmer for 30 seconds. (Note 1)
- Add the asparagus stems in. Once it comes back up to a simmer, count 30 seconds again. Then add the snow peas and asparagus heads, bring it back up to a simmer and count to 30 seconds.
- Immediately drain the greens and run cold water over the greens for 10 seconds to stop the cooking process.
- Once cool, set aside to dry. Roughly dry with a paper towel if serving immediately.
- Combine the Dressing ingredients in a jar and shake well to mix.
- Place the greens in a bowl and toss with the Dressing.
- Transfer to a serving bowl, crumble over feta and scatter with dried cranberries. Serve immediately.

- In large bowl, combine strawberries, balsamic vinegar, salt, and pepper.
- Let stand 10 minutes, stirring often. Add baby-greens-and-herbs mix and coarsely shredded cooked chicken; toss to combine.
- Divide among 4 plates. Top with herbed goat cheese.

- To make dressing: In a mini food processor or blender, add scallions, 1 teaspoon jalapeño pepper, cilantro, lime juice and salt; pulse to combine. Continue to process while adding olive oil. Once dressing is well blended, taste and adjust spice/heat level with additional jalapeño, being careful not to add too much at one time.
- In a small bowl, mix avocado with about half the dressing and set aside. This will prevent the avocado from browning.
- Assemble salad by arranging lettuce leaves in bottom of a large serving bowl. Add tomatoes, then cilantro leaves; crumble ricotta salata over the top and sprinkle with scallions. Place avocado in center; serve remaining dressing on the side.

- For the quick pickle: In a small saucepan over medium heat, combine the vinegar, water, sugar and salt and bring to a simmer. Remove from the heat and allow to cool for 5 minutes.
- In a small bowl, pour the brine over the cucumbers and allow to sit at room temperature for 30 minutes.
- For the salad: In a large bowl, whisk together the oil, vinegar, mustard and salt. Add the grapes, blueberries, radicchio and endive and toss well to coat. Drain the cucumbers and add them to the bowl along with the gorgonzola picante and pistachios. Toss one last time and serve.

- Combine the ginger, honey and 1 cup water in a small saucepan. Bring to a boil, remove from the heat and let sit until cooled to room temperature. Drain, discarding the ginger, and stir in the lime juice.
- Put the watermelon in a large bowl, and add the ginger-honey syrup. Cover and refrigerate to chill, at least 1 hour up to 4 hours, tossing the watermelon occasionally.
- Meanwhile, preheat the oven to 350 degrees F. Spread the coconut out on a baking sheet, and bake until lightly golden, 6 to 8 minutes; let cool.
- When ready to serve, drain most of the liquid off the watermelon. Add the blueberries and lime zest, and toss to combine. Sprinkle with the toasted coconut.

- In a large bowl, dissolve one package of raspberry gelatin in 1 cup boiling water. Stir in 1 cup cold water. Pour into a 13-in. x 9-in. dish; chill until set. In a small bowl, soften unflavored gelatin in the remaining cold water; set aside. , In a large saucepan, combine cream and sugar; whisk over medium heat until sugar is dissolved. Add cream cheese and softened unflavored gelatin; cook and stir until smooth. Cool. Stir in pecans and vanilla. Spoon over raspberry gelatin. Refrigerate until completely set. , In a large bowl, dissolve second package of raspberry gelatin in remaining boiling water. Stir in blueberries. Carefully spoon over cream cheese layer. RED, WHITE, AND BLUE (BERRY) GREEN SALAD
This recipe is more about assembly than actual cooking. (I mostly wanted to post my pics, which are pretty!) I had store-bought Romaine and Aerogarden -grown mixed greens, as well as strawberries and blueberries, needing to be eaten, so I made this salad (a variation of the usual strawberry-feta salads). I also put Recipe#49956 on it, but any bottled raspberry vinegrette will work. Also, it would be good with sliced chicken, avocado, onion, etc on top, or made with spinach. Feel free to enjoy it on the 4th, or any day!

- Combine olive oil, preserves, white wine vinegar, Dijon mustard, and sea salt in the bowl of a small food processor. Pulse several times, until dressing is combined. Pour into a serving container and set aside.
- Wash lettuce and dry in a salad spinner. Use some of the outer, larger leaves to line a medium salad bowl, with the red color of the leaves to the outside of the bowl.

RED AND GREEN CABBAGE SALAD

- Cut away and discard the core of both the green and red cabbage. Cut away the tough bottom or center portions of the outer leaves.
- Shred the cabbage pieces as finely as possible. There should be about 4 cups of each color.
- Put the mustard and vinegar in a mixing bowl large enough to hold all the cabbage shreds. Start beating with a wire whisk. Add the oil or oils while beating with the whisk. Stir in the shallots and add salt and pepper to taste.
- Meanwhile, bring enough water to the boil to cover the cabbage when it is added. Add the cabbage and bring to a full rolling boil. Drain immediately. Empty the cabbage into a clean towel or cheesecloth, and when it is cool enough to handle, press to extract as much liquid as possible. Add the cabbage to the mixing bowl with the sauce. Toss to blend. Serve warm or at room temperature.

- Roasted Tomatoes: Preheat oven to 400 degrees. Trim tomatoes and slice vertically in half. Place in roasting pan and drizzle with 2T olive oil or dot with 2T butter. Sprinkle liberally with salt and pepper. Roast for 35 to 45 minutes, until tomato skins wrinkle and brown. Let cool. While tomatoes are cooling, place baby greens in a large salad bowl. Pinch basil leaves from the stem, as close to the base of the leaf as possible and leave whole. Add to greens. Seed and quarter cucumber. Slice approximately 1/4" thick and add to greens. When tomatoes are cool, chop in 1/4" dice and add to salad. Sprinkle Parmesean on top, pour dressing on salad and toss gently.
