This is great for a special brunch or even a quick and easy dinner. Other breakfast meats can be used, but the deli ham is the easiest since it is already fully cooked.

⅓ cup milk
3 slices cooked ham, diced
2 green onions, minced
salt and pepper to taste
4 ounces Cheddar cheese, shredded
4 (10 inch) flour tortillas
½ cup salsa

Steps:

  • Beat together eggs and milk. Heat a lightly oiled skillet (or non-stick pan) over medium high heat and cook egg mixture, stirring occasionally, until firm. When almost done, stir in ham, green onions, salt and pepper.
  • Spoon 1/4 of the egg mixture on top of each tortilla. Sprinkle the eggs with cheese, fold over the tortilla to make a roll and top with salsa if desired.

2 tablespoons vegetable oil
1 1/2 cups frozen hash browns (not patties)
8 large eggs
1/4 teaspoon chipotle chile powder
Kosher salt and freshly ground black pepper
1/4 cup chopped fresh cilantro
4 large burrito-size flour tortillas
1 avocado, halved, pitted and sliced
1/2 cup shredded Monterey Jack cheese
1/2 cup shredded sharp Cheddar
Salsa, for serving

Steps:

  • Heat the oil in a large nonstick skillet over medium-high heat. Add the hash browns and cook, stirring occasionally, until golden brown and crisp, 8 to 10 minutes.
  • Meanwhile, beat the eggs in a medium bowl with the chipotle powder, a sprinkle of salt and a few grinds of pepper until well blended. Pour the eggs over the cooked potatoes and cook, stirring, until the eggs are fluffy and just set, about 3 minutes. Remove from the heat and stir in the cilantro.
  • Warm a tortilla in a large nonstick skillet over medium heat it is until pliable. Top with one-quarter of the avocado slices, one-quarter of the egg mixture and 2 tablespoons each of the Monterey jack and Cheddar. Fold in the two sides and roll up tightly from the bottom to the top. Repeat with remaining tortillas and burrito filling. Serve with salsa on the side.

3/4 pound ground beef
1 onion, chopped
1 jalapeno chile, finely chopped

4 flour tortillas (10-inch)

Steps:

  • Peel potatoes; cut into 1/2-inch dice. In a large saucepan, heat oil over medium heat. Add potato; cook, stirring occasionally, until golden brown, about 6 minutes.
  • Add beef, onion, and jalapeno; cook, breaking up meat with a spoon, until beef is thoroughly browned, about 4 minutes. Add tomatoes and juice, cumin, paprika, and 1 teaspoon salt; cook until liquid has evaporated, about 6 minutes.
  • Heat tortillas, one at a time, in a dry skillet over medium-high heat, turning once, until lightly browned, about 10 seconds.
  • Leaving space on bottom and sides, layer tortillas with sour cream, lettuce, beef mixture, cheese, and cilantro, if using; squeeze lime juice on top. Fold bottom upward, covering filling by 2 inches. Fold each side to overlap, leaving the top end open. Serve garnished with lime wedges.

This burrito delivers the best of breakfast in every bite: eggs, hash browns, chorizo and cheese.

8 ounces fresh chorizo, casings removed
1 cup frozen hash browns (not patties)
8 large eggs

A few dashes of hot sauce
1/4 cup chopped fresh cilantro
4 large burrito-size flour tortillas
1 avocado, sliced
1 1/4 cups prepared pico de gallo
1/2 cup shredded Mexican-blend cheese

Steps:

  • Heat the oil in a large nonstick skillet over medium-high heat. Add the chorizo and cook, breaking it up into small pieces, until cooked through and crisp, about 5 minutes. Transfer to a paper-towel-lined plate using a slotted spoon. Add the hash browns to the skillet and cook, stirring occasionally, until the potatoes are golden brown and crisp, 8 to 10 minutes. Beat together the eggs, a pinch of salt, a few grinds of pepper and a few dashes of hot sauce in a medium bowl until well blended. Return the chorizo to the pan and pour the eggs over the potatoes and chorizo and cook, stirring, until the eggs are fluffy and just set, about 3 minutes. Remove from the heat and stir in the cilantro.
  • Working with one tortilla at a time, warm in a large nonstick skillet set over medium heat until pliable. I created this to use up left over mashed potatoes instead of throwing them out. You can also use whole cooked potatoes and just mash them. We always have leftover mahed potatoes at thanksgiving and other holidays. These are easy to make and taste great! I have used instead of chicken broth leftover turkey gravy tasted good. The kids liked them so much I make them all the time. I serve them with a side refried beans and some sour cream.

1 1/2 lbs potatoes
1 1/4 ounces taco seasoning mix
1/2 cup sour cream
1 cup cheddar cheese
1/4 cup chicken broth
1/4 cup milk
1 (16 ounce) jar salsa
6 tortillas

Steps:

  • In a large bowl mix all ingredients except salsa and torillas together with a hand mixer. Mixture should be creamy not runny. (If mixture is dry and not creamy add small amounts of milk until creaminess is achived).
  • Spray a large cake pan with nonstick spray. Prepare tortilla according to package so they are flexable. Add mixture to tortillas about 3 tablespoons. Roll tortillas and line them into the cake pan. Pour jar of salsa over them and bake in the oven at 350 degrees for 20 minutes. You can top with more shredded cheddar when taken out of oven.
  • Freeze any leftover. Reheat in microwave 1-3 minutes.

12 Uncooked tortillas
1 lb Bacon
6 Eggs
1/4 cup Milk
3 cup Fresh Mushrooms (sliced)
2 cup Cheese (grated)
Salt
Oil (for frying)

Steps:

  • Preheat oven to 400F. Lay out each slice of bacon on a baking sheet, lined with parchment paper.
  • Place the sheet covered with bacon into the oven, bake until golden and crispy. Lay out the cooked bacon on a paper towel to get rid of any extra grease.
  • Whisk milk together with eggs and season with salt. Heat the pan up with oil, on a medium high heat, and pour in egg mixture.
  • While the eggs are cooking, keep on stirring and breaking eggs into small pieces. Remove from heat once they're cooked.
  • Slice mushrooms. In a hot skillet, fry them with a bit of oil until they turn golden brown. Season with a bit of salt.
  • Build burritos by placing a little bit of each ingredient in the middle.
  • Fold the sides of the tortilla inwards and roll the burrito tightly together.
  • Fry the sides of each of the flour tortillas on a hot skillet, until the burrito becomes crispy and golden brown. Serve while the burritos are still warm.
