CHEESY BEANS AND RICE
After my dad had heart-trouble years ago, my mom adapted an old recipe to come up with this colorful all-in-one dish. It has been a favorite for a long time. Even our kids like it, and they can be quite picky! -Linda Rindels of Littleton, Colorado

Steps:
- Cook rice according to package directions. Transfer to a large bowl; add the beans. In a nonstick skillet, saute onion in oil for 4-5 minutes. Stir in the tomatoes, chili powder and salt. Bring to a boil; remove from the heat., In a 2-qt. baking dish coated with cooking spray, layer a third of the rice mixture, cheese and tomato mixture. Repeat layers. Layer with remaining rice mixture and tomato mixture. , Cover and bake at 350° for 30 minutes or until heated through. Uncover; sprinkle with remaining cheese. Bake 5-10 minutes longer or until cheese is melted.

- Preheat oven to broil. Lightly oil an 8×8 or 2 quart baking dish or coat with nonstick spray. In a large saucepan of 2 cups water, cook rice according to package instructions. Stir in salsa, lime juice and cilantro Spread rice mixture into the prepared baking dish. Top with beans and cheeses. Place into oven and bake until bubbly and cheeses have melted, about 5 minutes. Serve immediately, garnished with cilantro, if desired.

- Preheat oven to 375°. In large bowl, mix prepared rice, pinto beans, black beans, tomatoes, olives, salsa, green chilies, 2 cups cheese, cumin, cayenne, salt, and pepper. Pour into 9″ round or square cake pan or deep dish pie plate. Bake for 20 minutes or until heated through. Sprinkle on remaining 1 cup cheese and return to oven until cheese is melted. Serve with tortilla or corn chips, flour tortillas, sour cream, salsa, guacamole, avocado slices. Can add ground beef or chicken.

- Stir in condensed soup until fully combined. Add Colby-Jack cheese and taco seasoning; cook until cheese has melted. Add cayenne and cook until warm, about 5 more minutes.

- Melt butter in a large skillet over medium heat. Saute shrimp until firm and pink, 3 to 4 minutes. Remove shrimp from skillet and set aside.
- Add mushrooms, celery, bell pepper, and onions to the skillet. Saute until all vegetables are tender, 7 to 8 minutes.
- Stir in flour, bouillon, seafood seasoning, garlic, and cayenne. Slowly add milk, stirring constantly. Bring to a boil and continue stirring until mixture starts to thicken. Add cooked rice, Cheddar cheese, and shrimp. Season with salt and pepper and stir to combine. Serve.

- In a medium skillet, heat oil over medium heat. Add onion, garlic and jalapeno peppers; saute until onions are soft, about 3 minutes.
- Add beans and smush with the back of a spoon or potato masher until softened and heated through, another 2-3 minutes.
- Remove from heat; stir in shredded mozzarella or Oaxaca cheese, sour cream, cumin and cayenne pepper, stirring until cheese is melted.
- Season with salt and pepper to taste.
- Transfer to a serving dish and sprinkle Cotija or feta on top. Serve warm or at room temperature with chips and/or vegetables.
- Leftover dip can be refrigerated and reheated in a microwave.
