3 cups Corn Chex
3 cups Rice Chex
3 cups cheddar miniature pretzels
1/4 cup butter, melted
1 envelope cheesy taco seasoning
2 cups white cheddar popcorn

Steps:

In a large microwave-safe bowl, combine cereal and pretzels. In a small bowl, mix melted butter and taco seasoning; drizzle over cereal mixture and toss to coat., Microwave, uncovered, on high 3-3-1/2 minutes or until heated through, stirring once every minute. Stir in popcorn. Transfer to a baking sheet to cool completely. Store in an airtight container.

2 tablespoons vegetable oil
1/4 cup popcorn kernels
2 cups crisp rice-and-corn cereal (such as Crispix)
1 1/2 cups salted sesame sticks
1 1/2 cups cheddar-filled pretzel sandwiches
1 stick unsalted butter
1 teaspoon garlic powder
1 teaspoon mustard powder
1/2 teaspoon sugar
1/4 teaspoon paprika
Kosher salt and freshly ground pepper
4 cups puffed cheese balls

Steps:

Preheat the oven to 325 degrees F. Line a baking sheet with foil and set aside. Heat the vegetable oil and 3 popcorn kernels in a large saucepan over medium heat. When the kernels pop, add the remaining popcorn and cover the pan. Cook, shaking the pan frequently, until the popping has almost stopped, 3 to 5 minutes. Remove from the heat and let stand for a few minutes, covered. Uncover and discard any unpopped kernels.
Transfer the popcorn to a large bowl and add the cereal, sesame sticks and pretzel sandwiches; toss well. Melt the butter in a small saucepan over medium heat; whisk in the garlic powder, mustard powder, sugar, paprika, 1/2 teaspoon salt and a few grinds of pepper. Pour the butter mixture over the snack mix and toss well to coat.
Spread the snack mix in a single layer on the prepared baking sheet. Bake, gently stirring halfway through, until the popcorn is crisp, 15 to 20 minutes. Let cool. Transfer to a large bowl, add the cheese balls and toss to coat.

2 cups bite-size pretzel twists
2 cups bite-size cheese crackers
3 tablespoons butter or margarine, melted
1 (1 ounce) package ranch dressing and seasoning mix
½ cup grated Parmesan cheese

Steps:

In large microwaveable bowl, microwave butter uncovered on High about 30 seconds or until melted. Stir in cereal, pretzels and crackers until evenly coated. Stir in dressing mix and cheese until evenly coated.
Microwave uncovered on High 3 minutes, stirring each minute. Spread on waxed paper or foil to cool, about 15 minutes. Store in airtight container.

This is an adaptation of another snack mix recipe, but I was missing some of the ingredients so I improvised with what I had on hand, and it turned out awesome! I used hot taco seasoning mix to spice it up some.

5 cups Cheerios toasted oat cereal
2 cups Cheez-It crackers
2 cups pretzels
1 cup goldfish crackers
1 cup crunchy Cheetos cheese-flavored snacks
2 cups dry roasted peanuts
1/2 cup butter or 1/2 cup margarine
1 (1 1/4 ounce) envelope Ortega taco seasoning
1/4 cup parmesan cheese

Steps:

Heat oven to 300°F.
In a large roasting pan, combine all ingredients except butter and seasoning mix.
Mix melted butter and seasoning mix in a small bowl until well blended. Pour over cereal mixture; toss to coat.
Bake 25-35 minutes, stirring two or three times, until lightly browned. Sprinkle with parmesean cheese. Spread on paper towels or waxed paper until cooled, about 15 minutes. Store in tightly sealed containers. Makes about 12 cups.
