CHEESY BACON BRUSSELS SPROUTS
Brussels sprouts bring flavor to cooked bacon in this cheesy side dish, ready in just an hour's time.

- Heat oven to 350°F. In 3-quart saucepan, place Brussels sprouts; add enough water just to cover. Heat to boiling; boil 6 to 8 minutes or until crisp-tender. Drain and return to saucepan; set aside.
- Meanwhile, in 10-inch skillet, cook bacon over medium heat, stirring occasionally, until crisp. Remove bacon with slotted spoon; drain on paper towels and set aside. Drain all but 1 tablespoon bacon fat from skillet.
- Add butter to bacon fat in skillet. Heat over medium-high heat until butter is melted. Add onion; cook 2 to 3 minutes, stirring frequently, until crisp-tender. Add flour, thyme and pepper; cook and stir until well blended. Gradually stir in half-and-half and bouillon granules. Heat to boiling, stirring constantly; boil and stir 1 minute. Remove from heat; stir in Parmesan cheese.
- Pour sauce over Brussels sprouts in saucepan; mix gently. Spoon into 2-quart casserole. Bake uncovered 25 to 30 minutes, sprinkling with crumbled bacon and Cheddar cheese for last 10 minutes of baking, until hot and bubbly.

- Brown bacon in a medium skillet over medium high heat. Remove bacon to a paper towel lined plate. Add extra-virgin olive oil to the pan, 1 turn. Add shallots to the pan and saute 1 to 2 minutes. Add Brussels sprouts and coat in oil. Season with salt and pepper. Cook Brussels sprouts 2 to 3 minutes to begin to soften, then add broth. Bring broth to a bubble, cover and reduce heat to medium low. Cook 10 minutes, until tender. Transfer sprouts to a serving dish with a slotted spoon and top with cooked bacon bits.

- Cook and drain tortellini as directed.
- While tortellini is cooking, heat oil in 3 quart saucepan over medium-high heat. Cook chicken in oil, stirring frequently, until no longer pink. Remove from saucepan; keep warm.
- Melt butter in saucepan over medium-high heat. Cook bell pepper, shallots and garlic in butter, stirring frequently, until bell pepper is crisp-tender. Stir in flour and pepper. Cook over medium-high heat, stirring constantly, until mixture is bubbly, remove from heat. Stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute; remove from heat.
- Stir in mozzarella and swiss cheeses until melted. Stir in tortellini and chicken until coated. Sprinkle with parmesan cheese.

- Crumble the ground beef and Italian sausage into a large skillet. Cook over medium-high heat until browned. Drain.

- Bring a large pot of lightly salted water to a boil. Add pasta and cook according to package directions; drain. Adjust oven rack to the highest position and turn oven on to Broil. Generously butter or grease an 8x8 inch baking dish.
- Bring marinara and Alfredo sauces along with spinach and 1 tablespoon of Italian seasoning to a simmer over medium-high heat. Reduce heat to medium-low, and simmer for 10 minutes. Stir cooked tortellini into sauce, then pour into prepared baking dish. Sprinkle with Mozzarella cheese, Parmesan cheese, and remaining 1 teaspoon Italian seasoning.

- Preheat the oven to 375°F. In a large oven-safe cast iron skillet over medium heat, cook the bacon until crisp. Remove, cool, and crumble. Carefully spoon away all but about 2 tablespoons of the bacon grease.
- Increase the heat to medium-high and add the Brussels sprouts to the hot pan. Cook, stirring infrequently to allow the sprouts to develop a dark brown color and begin to get crispy around the edges. Cook until nearly tender. Season with salt.

- Bring a large pot of water to boil. Cut of the stems of brussels sprouts; cut each brussels sprout in half. Add brussels sprouts to boiling water and boil for 5 minutes. Remove using slotted spoon.
- Add cooked brussels sprouts, half of the chopped, cooked bacon, heavy cream and 1/4 teaspoon salt to the large skillet. Bring to boil. While constantly stirring, add shredded Parmesan cheese into boiling heavy cream, keep stirring until the cheese starts to melt coating brussels sprouts and bacon. Reduce heat to simmer and keep stirring, making sure the cheese does not stick to the bottom of the skillet. Gradually add milk to thin out the sauce and stir it in.
- Add cooked tortellini and the remaining half of chopped cooked bacon to the skillet with the cream sauce, on low heat. Stir everything, taste and add more salt, if needed.
