FETTUCCINE WITH WALNUTS AND PARSLEY

Steps:
- Cook the pasta al dente according to package directions, then drain in a colander.
- Meanwhile, toast the walnuts in a small dry skillet over medium-high heat until fragrant, stirring frequently, 3 to 5 minutes.
- In the pot the pasta was cooked in, heat the olive oil over low heat, add the garlic stirring until soft and fragrant, 3 to 4 minutes (be careful not to burn it). Return the pasta to the pot, add the broth, all but 2 tablespoons of the walnuts, the parsley, salt and pepper and toss to combine, cooking over low heat for 1 to 2 minutes. Add 1/2 cup Parmesan and toss to combine. Arrange 1/2 cup of arugula leaves on each of 4 serving plates. Top each with about 2 cups of pasta. Sprinkle with remaining cheese, the reserved walnuts and more parsley. Serve hot.

Steps:
- Cook pasta in large saucepan as directed on package, omitting salt and adding cauliflower to the boiling water for the last 3 min. Drain, reserving 1/2 cup cooking water.
- Heat half the dressing in large nonstick skillet on medium heat. Add onions and garlic; cook and stir 7 min. or until onions are softened. Stir in reserved cooking water; bring to boil. Simmer on medium-low heat 2 min. or until sauce is reduced by half.
- Add pasta mixture and remaining dressing; cook and stir 2 min. or until heated through. Remove from heat. Add herbs and cheese; mix well.
- Sprinkle with nuts and crushed pepper.

- Place the soaked and drained walnuts, broth, nutritional yeast, carrots, bell pepper and spices into a blender.
- Purée until very creamy and smooth. Taste, adding more salt/seasonings as desired.

- Cook and drain fettuccine as directed on package.
- Meanwhile, in 12-inch skillet, heat oil and butter over medium heat. Cook onions and 1 tablespoon parsley in oil mixture about 4 minutes, stirring occasionally, until onions are tender.

- Preheat the oven to 400 degrees F (200 degrees C). Brush one side of each slice of bread with melted butter, and place butter side up on a baking sheet. Bake for 7 minutes, or until lightly toasted.
- In a small bowl, stir together the blue cheese, softened butter, salt and pepper. Spread this mixture over the tops of the toasted bread slices, then sprinkle with chopped walnuts.

- Set oven to 350 degrees.
- Grease a 2-1/2-quart baking dish.
- Cook fettuccine in a large pot of boiling salted water until eldente.
- Meanwhile, in a saucepan, combine soup, cream cheese, mushrooms, whipping cream, 1/4 cup Parmesan cheese, butter and garlic powder.
- Stir in cheeses; cook until melted.
- Drain the pasta well and add to the sauce.
- Transfer the mixture to prepared baking dish.

Steps:
- Cook the fettucini according to instructions.
- While the noodles are cooking melt the butter in a skillet and saute the garlic for 1 minute, add parsley and continue sauting for 4 additional minutes (use medium low heat you do not want to burn the butter etc).
- Add cream slowly and simmer 5 minutes.
- When the noodles are done drain well and return them to the pot.
- Pour the cream mixture over the noodles, add the cheese& toss.
- Serve piping hot.
