KARTOFFELSALAT - GERMAN POTATO SALAD

Kartoffelsalat - German Potato Salad image

This recipe is from German Deli.com and they recommend using Schaller and Weber bacon, but any smoked bacon (not maple "flavor") will do. This salad can be served hot or cold.

Provided by DeSouter

Categories     Potato

Time 50m

Yield 8 serving(s)

Number Of Ingredients 9

5 lbs potatoes (baking potatoes are NOT recommended, as they are too flaky)
1/2 cup diced smoked bacon
1/2 cup vegetable oil
3 tablespoons white vinegar
1 teaspoon sugar
1 teaspoon sea salt
1/4 teaspoon fresh ground pepper
3/4 cup sliced green onion
1/4 cup chopped chives

Steps:

  • Place unpeeled potatoes in cold salt water and bring to a boil.
  • Boil gently until potatoes are tender, but still firm.
  • Do not overcook.
  • Pour off the boiling water and allow potatoes to cool until easy to handle.
  • (The drained, unpeeled Potatoes can also be placed in a refrigerator overnight).
  • Peel cooled potatoes, slice, then place in a large bowl.
  • Slowly sauté the bacon in a skillet until the bacon pieces are crisp and golden brown.
  • Do not burn the bacon and do not drain the fat in the skillet.
  • Remove the skillet from the heat and add the oil, vinegar, sugar, salt and pepper.
  • Pour this mixture over the sliced potatoes in the bowl.
  • Add the green onions and the chives.
  • Gently toss the potatoes so all ingredients are evenly blended.

CHEF-BOY-I-BE-ILLINOIS' SCHWABISCH KARTOFFELSALAT GERMAN POTATO

Chef-Boy-I-Be-Illinois' Schwabisch Kartoffelsalat German Potato image

A college friend of mine was from the Schwabisch area of what was formerly West Germany. He made a German potato salad that was unlike the type we usually think of, which has a hot vinaigrette made from bacon grease, vinegar and sugar. I absolutely loved his potato salad and want to share it with you. It's served at room temperature, and is best if it has a chance to sit and marinade for 30 minutes or so. The warm potatoes then have a chance to soak up the vinaigrette. Try this in place of your usual mayonnaise-based American potato salad with your next grilled burger!

Time 30m

Yield 4-6 serving(s)

Number Of Ingredients 7

1 lb new potato
1/2 cup strong beef broth
1/4 cup red wine vinegar
1 tablespoon mustard
4 green onions, thinly sliced
1/2 cup chopped dill pickle
salt and pepper

Steps:

  • Steam the potatoes until tender, remove skins then slice.
  • Add remaining ingredients and taste for salt.
  • You can add more or less vinegar to your taste. We prefer it slightly tart.
  • For beef broth, I combine 1 tablespoon beef bouillon to 1/2 cup water and place in microwave for 1 minute to dissolve. You could also use canned, but you need strong broth for this.

BERLINER KARTOFFELSALAT / BERLINER POTATO SALAD

Berliner Kartoffelsalat / Berliner Potato Salad image

This is my moms recipe for the mayo based version that you will find all over northern Germany, while southern Germany prefers the vinegar based/hot version. Make sure to let the salad rest for at least 2 hours so that all the flavors can blend and soak into the potatoes.

Provided by Berliner Goere

Categories     Potato

Time 1h

Yield 12 serving(s)

Number Of Ingredients 9

2 lbs potatoes
5 -6 baby dill pickles, chopped
1 medium onion, chopped
1 medium granny smith apple, chopped
16 ounces mayonnaise (I often use the fat free kind)
6 tablespoons pickle juice
1 tablespoon sugar
1/4 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Make sure onion, pickles and apple are chopped the same size.
  • Boil the whole potatoes with their skins on until tender about 20-30 minutes.
  • Remove from pot and let rest until cool enough to handle but still warm, then peel and dice into preferred size.
  • In a bowl combine all the ingredients except potatoes.
  • Put potatoes into a big bowl, pour"sauce" over them and stir together carefully (potatoes break apart easily while still warm).
  • Cover bowl and let rest in fridge for at least 2 hours (overnight is even better).
  • Taste test and add more pickle juice, salt, pepper, sugar or mayo if/as needed.

THE OTHER KIND OF GERMAN POTATO SALAD

The Other Kind of German Potato Salad image

A few years ago in an on-line fabric swap, one of the gals from Germany shared with me that THIS is the kind of potato salad served in the Bavarian part of Germany today. Quite different from what we Americans call "German" potato salad. As my dad would say: puts hair on your chest!

Provided by Debber

Categories     Lunch/Snacks

Time 2h10m

Yield 8-10 serving(s)

Number Of Ingredients 8

6 -8 medium potatoes
1/2 cup vinegar
1/2 cup sugar
1/4 cup salad oil
1 -2 onion, chopped
1 cup mayonnaise
2 large dill pickles, diced
2 hard-boiled eggs, chopped

Steps:

  • Cook the potatoes in boiling water; slice and keep warm.
  • While the potatoes are cooking, prepare the marinade: combine vinegar, sugar, salt & pepper to taste, oil, and onion in a small bowl; stir until sugar dissolves (or you give up).
  • Pour marinade over warm potatoes; stir to mix; allow to "work" for at least several hours (overnight is better) at room temperature.
  • Just before serving, add mayonnaise, pickles and eggs.
  • NOTE: My quilting friend pointed out that the pickles and eggs were strictly optional, and even the mayo wasn't "required.".

CHEF-BOY-I-BE-ILLINOIS' BAKED COD CASSEROLE

Chef-Boy-I-Be-Illinois' Baked Cod Casserole image

Fall weather puts me in the mood for comfort food such as casseroles, but I don't want all the calories that usually come with them. So I paired cod with potatoes and used an Italian inspired tomato sauce to bring it all together. My partner and I really enjoyed this last night and I hope you will too. You can use any type fish you like, as long as it flakes easily when cooked. I think I'm going to try smoked salmon next time. For the potatoes, I like to use Yukon gold, but any low starch potato will work well.

CHEF-BOY-I-BE ILLINOIS' SCALLOPED POTATOES AND HAM

Chef-Boy-I-Be Illinois' Scalloped Potatoes and Ham image

An easy and delicious way to use that leftover Easter, Thanksgiving or Christmas Ham. Rather than the ordinary recipe that uses cream, or sour cream, mine uses beef broth for a rich, yet healthy, comfort dish. There is just something about the salty, smoky flavor of leftover ham combined with potatoes and cheese. Enjoy!

Provided by Chef-Boy-I-Be Illin

Categories     One Dish Meal

Time 1h15m

Yield 4-6 serving(s)

Number Of Ingredients 11

5 medium yukon gold potatoes, thinly sliced
1 medium onion, thinly sliced
2 medium carrots, grated
1/2 lb leftover ham, cubed
1 (10 1/2 ounce) can beef broth
1 cup shredded sharp cheddar cheese
1/4 cup flour
1 teaspoon thyme
1 teaspoon rosemary
1 teaspoon sage
pepper

Steps:

  • Preheat oven to 400 degrees F.
  • A food processor makes the grating and slicing easy! In a bowl, combine the processed vegetables with the flour, spices and cheese. Use your hands to really toss around so the flour coats everything.
  • Add the cubed ham and toss one more time.
  • Put half the mixture in bottom of 2 quart casserole, pour 1/2 of the broth over.
  • Put rest of mixture in casserole and pour rest of broth over.
  • Top with extra cheese if desired.
  • Cover with foil and bake for 45 minutes.
  • Remove foil and reduce heat to 350 degrees and bake for another 15 minutes.
  • Test potatoes for desired tenderness with a knife.

FAMILY FAVORITE POTATO SALAD! (GERMAN KARTOFFELSALAT)

Family Favorite Potato Salad! (German Kartoffelsalat) image

This is my version of both my mother's and German grandmother's potato salad. A family favorite that is a requirement at all gatherings! I hope you enjoy.

Provided by BecR2400

Categories     Potato

Time 55m

Yield 10 serving(s)

Number Of Ingredients 19

8 medium russet potatoes, scrubbed but not peeled
1/2 cup white onion, finely chopped
1 apple, chopped
2 stalks celery & leaves, very thinly sliced
4 dill pickles, chopped
1 tablespoon sweet pickle relish, heaping
2 teaspoons sugar
1 tablespoon cider vinegar
1 tablespoon pickle juice
1 tablespoon extra virgin olive oil
2 teaspoons yellow mustard (such as French's)
1 cup mayonnaise (such as Hellman's or Best Foods)
1/2 teaspoon kosher salt
1/2 teaspoon ground black pepper
2 tablespoons parsley, finely chopped, divided use
5 hardboiled egg, divided use
fresh tomato, slices for garnish (or grape tomatoes or cherry tomatoes)
fresh torn lettuce leaf, for garnish
paprika, for garnish

Steps:

  • In a large covered pot, bring potatoes to a boil in enough salted water to cover by at least 1 inch. Lower heat to a simmer, and cook about 25-30 minutes or until potatoes are tender when pierced with a fork, but still firm. (Cooking time will vary according to the size and freshness of the potatoes).
  • Drain potatoes in colander, and briefly run cold water over the potatoes. Transfer drained potatoes back into the empty covered pot and set on a very low flame for just a minute or two, being careful not to scorch them. This will help to dry the potatoes and to ensure that they are not wet or soggy. Return potatoes to colander, and let them cool to the touch.
  • Peel and then slice the potatoes into one inch pieces.
  • In a large bowl, stir together the onions, apples, celery, dill pickles, sweet relish, and one tablespoon of the chopped parsley.
  • In a separate bowl, whisk together the sugar, vinegar, pickle juice, olive oil, mustard, mayonnaise, and the salt and pepper. Pour over the onion mixture, stirring well to coat evenly.
  • Add the potatoes and 3 chopped hardboiled eggs. Fold and stir gently to combine. Transfer to a wide and shallow serving dish.
  • Garnish with 2 quartered hardboiled eggs, tomato slices, and the torn lettuce. Sprinkle with remaining parsley and the paprika.
  • Cover and keep refrigerated until serving time.
