SMOKY FOOTBALL CHEESE BALL WITH PECAN-BACON CRUST



Smoky Football Cheese Ball with Pecan-Bacon Crust image

6 strips bacon, at room temperature
Three 8-ounce packages cream cheese, softened to room temperature
1 cup (8 ounces) shredded Cheddar or Monterey Jack cheese
1/4 cup heavy cream
2 teaspoons hot sauce, such as Tabasco
1 tablespoon smoked Spanish paprika
1 tablespoon Worcestershire sauce
1 cup (8 ounces) chopped pecans
3 slices white Cheddar or provolone cheese
Crackers or your favorite bread, for serving

Steps:

  • Lay the bacon strips in a cold skillet, raise the heat to medium and cook, turning, until desired crispness, 5 to 10 minutes. Drain on paper towels.
  • Meanwhile, combine the cream cheese, Cheddar, heavy cream, hot sauce, paprika and Worcestershire sauce in a large bowl with an electric mixer until the mixture is smooth and even. Scrape the mixture onto a serving platter and use clean hands to shape it into a football.
  • Chop the bacon and combine with the chopped pecans in a medium bowl. Press the bacon-and-pecan mixture into the cheeseball to cover completely.
  • Cut the slices of cheese into one long 3/4-inch thick strip and 5 to 8 small strips. Arrange the cheese strips on the cheese ball to look like the laces on a football.
  • Cover with plastic wrap and let chill for at least 2 hours before serving with crackers or bread.

Steps:

  • Preheat oven to 375°. Place bacon in a single layer in a foil-lined 15x10x1-in. baking pan. Bake until lightly browned, 16-18 minutes., Remove bacon from pan. Discard drippings from pan, wiping clean if necessary., In a shallow bowl, mix remaining ingredients. Dip both sides of bacon in brown sugar mixture, patting to help coating adhere; return to pan., Bake until caramelized, 8-10 minutes longer. Remove immediately from pan.

2 ½ cups mature cheddar, grated
¼ cup blue cheese
salt, to taste
pepper, to taste
1 red pepper, finely chopped, divided
2 spring onions, finely chopped
¾ cup chopped pecans, divided
4 slices cooked bacon, chopped, divided
¾ cup fresh parsley, chopped
1 teaspoon poppy seed
cracker, for serving

Steps:

  • Add the cream cheese, cheddar cheese, blue cheese, salt, and pepper to a large bowl and mix well with a fork.
  • Add ½ of the chopped red pepper, the spring onions, ½ of the pecans and ½ of the bacon to the bowl and mix to combine.
  • Transfer the cheese mixture to a sheet of cling film and wrap it up. Shape into a ball and refrigerate for at least 1 hour.
  • In a shallow bowl, mix together the rest of the red pepper, the parsley, remaining pecans and bacon, and the poppy seeds.
  • Remove the cheese ball from the cling film and roll it around the topping mixture until completely covered.
  • Serve with a selection of crackers.

¼ cup MUSSELMAN'S® Apple Butter
1 tablespoon hot sauce
1 ½ cups shredded sharp Cheddar cheese
8 slices bacon, crisply cooked and crumbled
1 cup raw pecans, chopped
2 tablespoons butter, melted
½ teaspoon salt

Steps:

  • In a large bowl, mix together the cream cheese, apple butter and hot sauce until smooth. Stir in the Cheddar and bacon until evenly mixed.
  • Divide mixture in half and form each half into a ball. Chill both cheese balls in the fridge until firm.
  • Preheat the oven to 350 degrees F. Place the chopped pecans on an ungreased baking sheet and toss with the melted butter and salt. Bake for 8 minutes, tossing halfway through the baking time.
  • Remove the pecans from the oven and let cool completely. Transfer to a cutting board and give them another rough chop.
  • Roll the surface of the chilled cheese balls in the pecans right before serving. Serve with crackers.
