CHEF JOHN'S BANANA BREAD
Banana bread is one of those things people rarely make on purpose, only when those last three bananas are almost black. This scrumptious banana-walnut loaf, spiked with dark chocolate chips, is so good you'll want to make it well before the bananas get to that condition.

Steps:
- Preheat the oven to 350°F. Butter and flour 9x5-inch metal loaf pan.
- In a medium bowl, whisk together the flour, baking soda, baking powder and salt.
- In the bowl of an electric mixer, beat the butter and sugar until light and fluffy, about 2 minutes. Add the eggs one at a time, beating well after each addition. Add the mashed bananas, lemon juice and vanilla extract and mix well. It will look a little curdled at this point; that's okay.
- Add the flour mixture and beat on low speed until just incorporated. Do not over mix. Pour the batter into the prepared loaf pan and bake until a tester inserted into the center comes out clean, 40 to 45 minutes. Let cool in the pan for about 10 minutes, then turn out onto a wire rack to cool completely.
- Freezer-Friendly Instructions: The bread can be frozen for up to 3 months. After it is completely cooled, wrap it securely in aluminum foil, freezer wrap or place in a freezer bag. Thaw overnight on the countertop before serving.

Steps:
- Place ingredients in the pan of the bread machine.
- Select the Dough setting, and press Start. Mix the bread for 3 to 5 minutes until the bananas are mashed and all ingredients are thoroughly combined. If necessary, use a rubber spatula to push the dough from the sides of the bread pan. When 3 to 5 minutes have passed on the clock display, press Stop. Do not continue mixing. Smooth out the top of the loaf with the rubber spatula.
- Select the Bake setting, and press Start. The Bake cycle time may vary with machines, but should be about 50 minutes. To test the bread for doneness, insert a toothpick into the center top. Remove the toothpick. If the bread is done, the toothpick will come out clean. If there is batter on the toothpick, reset the machine on Bake and continue to bake an additional 10 to 15 minutes. Test again with the toothpick to ensure the bread is completely baked. Remove the pan from the machine, but allow the bread to remain in the pan for 10 minutes. Remove the bread to cool completely on a wire rack.

ANGIE'S TO-DIE-FOR BANANA BREAD
A not too sweet, super-moist, deep golden brown, dense banana bread with a crispy sugary crust right out of the oven. It is enjoyed at our home hot with butter, and eaten like cake with a fork. The kids don't let it make it to Day 2, so if you love it like we do, get it while it's hot! You'll never make another banana bread recipe again!

Steps:
- Lightly coat a six cup capacity loaf pan, with melted butter.
- Adjust the oven rack to the middle position and preheat the oven to 325°F.
- Spread the nuts on a baking sheet and toast in the oven until lightly browned, about 8-10 minutes.
- Shake the pan halfway through to ensure that the nuts toast evenly.
- Cool, chop coarsely; set aside.
- Turn the oven up to 350°F.
- In a medium bowl, whisk the banana puree, eggs, and vanilla extract to combine.
- In the bowl, of an electric mixer fitted with a paddle, attachment, cream the butter, baking soda, baking powder, salt, cinnamon, nutmeg, cloves, and poppy seeds on low, 2 to 3 minutes, until softened.
- Add the sugars and turn the mixer up to medium, mixing another 3 to 4 minutes until fluffy, scraping down the sides of the bowl as needed.
- Add the flour and banana mixture alternately in three batches, beginning with the flour, mixing until just combined.
- Remove the bowl from the mixer and fold in the nuts.
- Pour the batter into prepared loaf pan to just below the rim.
- Cut two 1/4 inch thick strips from the remaining banana, slicing down the entire length.
- Arrange the two C-shapes on top of the loaf, staggered, with the two ends slightly interlocking with each other in the center.
- Sprinkle about one teaspoons of granulated sugar over the surface.
- Bake for 50-60 minutes until nicely browned and firm to the touch.
- Do not slice bananas for the top too thickly or they will sink.

CHEF DINE'S BANANA QUICK BREAD
This is a recipe I came up with years ago. It is so moist! My boys love it and leave bananas on the bunch because they know I'll have to make the banana bread. We prefer banana bread w/out nuts. It is more on the sweet side, like a banana muffin.
