1/2 cup dried cherries, finely chopped
1/2 cup cherry brandy
3 ounces cream cheese, softened
1 tablespoon butter, softened
3-3/4 cups confectioners' sugar
6 ounces dark chocolate candy coating, chopped
1 tablespoon shortening
DRIZZLE:
White candy coating, chopped
Pink paste food coloring

Steps:

  • Place cherries in a small bowl. Cover with brandy; refrigerate overnight., In a large bowl, beat cream cheese and butter until smooth. Add confectioners' sugar; beat until crumbly. Drain cherries, reserving 2 teaspoons brandy. Add cherries and reserved brandy to cream cheese mixture. , Roll into 1-1/2-in. balls. Place balls on a waxed paper-lined baking sheet. Cover loosely and refrigerate for 1 hour., In a microwave, melt dark chocolate candy coating and shortening; stir until smooth. Dip balls in chocolate; allow excess to drip off. Return to the baking sheet., For drizzle, melt a small amount of white candy coating in a microwave; stir in food coloring until smooth. Drizzle over candies. Chill until set.

1 cup semisweet chocolate chips
½ cup bourbon
¼ cup corn syrup
3 cups crushed vanilla wafers
1 ½ cups ground walnuts
24 candied cherries, halved
½ cup confectioners' sugar

Steps:

  • In the microwave oven or over a double boiler, melt chocolate chips, stirring occasionally until smooth. Remove from heat and stir in the bourbon and corn syrup.
  • In a medium bowl, toss together the crushed vanilla wafers and ground walnuts. Pour the chocolate mixture over the crumbs in the bowl and blend well using your hands. Shape into 1 inch balls and press a cherry half into the center of each one. Roll each cookie in confectioners' sugar to coat.
  • Store in an airtight tin for at least a week before serving.

40 gingersnap cookies
1 package (8 ounces) cream cheese, softened
1-1/2 cups semisweet chocolate chips, divided
1-1/4 cups sliced almonds, divided
2 tablespoons chopped candied orange peel
1 teaspoon almond extract
60 maraschino cherries, stems removed

Steps:

  • Place gingersnaps, cream cheese, 1/2 cup chocolate chips, 1/2 cup almonds, orange peel and extract in a food processor; process until combined. Refrigerate until firm enough to form into balls. Pat cherries dry with paper towels. Wrap each cherry with a rounded tablespoonful of cream cheese mixture; shape into a ball. Freeze until firm, about 20 minutes. , Chop remaining sliced almonds; set aside. In a double boiler, melt remaining chocolate chips; stir until smooth. Dip cherry balls in chocolate; allow excess to drip off. Sprinkle balls with almonds. Place on waxed paper. Refrigerate until set, about 1 hour.

1 cup semisweet chocolate chips
½ cup rum
¼ cup light corn syrup
3 cups vanilla wafer crumbs
1 ½ cups chopped pecans
1 cup confectioners' sugar
24 red candied cherries, halved

Steps:

  • Melt the chocolate chips and stir in the rum and corn syrup.
  • Stir together the vanilla wafer crumbs, pecans and 1/2 cup of the confectioners' sugar. Drizzle the chocolate mixture over the crumb mixture and stir until blended.
  • Shape mixture into 1 inch balls. Roll balls in the remaining confectioners' sugar. Place cherry half in center of each cookie, pressing down lightly. Store in an airtight container for several days to develop flavor.
