3 tablespoons minced shallots
3/4 cup cherry preserves
1/4 cup balsamic vinegar
1/4 teaspoon Italian spices
1/8 teaspoon ground pepper
6 boneless chicken breasts
1/2 teaspoon salt

Steps:

  • Preheat grill.
  • In a medium saucepan, heat the olive oil over medium heat until hot.
  • Add the shallots and saute until softened- about 3-4 minutes.
  • Add the cherry preserves, balsamic vinegar, Italian seasonings, and the pepper.
  • Reduce heat to medium low and cook until the mixture is reduced by one-fourth.
  • About 6-8 minutes.
  • Reserve 6 tbsp of glaze in small bowl.
  • Lightly season chicken breasts with salt.
  • Place chicken on grill.
  • Cook, covered for 4 minutes per side.
  • Brush one side with glaze.
  • Let set for 1 minutes then flip and brush other side with glaze.
  • Repeat until chicken is cooked through.

2 cups orange juice
1/2 cup soy sauce
1/4 cup Dijon mustard
1/2 cup honey
1/4 cup onion, small diced
2 tablespoons ginger, grated
Kosher salt

2 tablespoons olive oil
1 tablespoon Dijon mustard
1 lemon, zested, juiced
1 orange, zested, juiced
2 garlic cloves, peeled, chopped
1 teaspoon kosher salt

2 Cornish hens, split, backbones removed

Steps:

  • Put all the sauce ingredients into a saucepan. Over medium heat bring it to a boil, and then reduce to a simmer for 1/2 hour. At the same time mix the marinade together, and rub it all the over hens. Marinate for at least 1 hour. Roast hens in a preheated 375 degree F oven for 25 minutes, and then brush with sauce. Finish the hens on a preheated grill for another 7 minutes, turning and brushing with more sauce to glaze.

Boxed stuffing
Dried cherries
Candied walnuts
Leeks
Shallots
Handful each of king trumpet and clam shell mushrooms
Minced garlic

Steps:

  • Preheat oven to 350° Make the stuffing according to the package instructions to get 4 cups worth. Add cherries and walnuts, I used the cinnamon honey walnuts that I got at the farmer's market. Stuff the birds and put them in a deep dish that allows for a bit of room between the birds. Wash and dice the leeks and shallots. Cut the mushrooms however you want them cut. I like them whole unless they were rather large then I cut them down a bit. In a deep sauce pan heat the olive oil and add the garlic, leeks shallots and mushrooms. Sautéing them until the shallots are soft (the mushrooms will fully cook in the oven so don't over cook the leeks now). Add about ½ a cup of the balsamic vinegar and boil down a bit. Pour this over the hens and then place in the oven for an hour. If after an hour they aren't done (mine weren't but I always like to check) cook for another 25-30 minutes.

1 1/2 cups dried California figs, pitted and roughly chopped
1/4 cup honey
2 tablespoons lemon juice
3 cups warm water
1/2 cup balsamic vinegar
1 stick unsalted butter, for the glaze

2 tablespoons extra-virgin olive oil
1 small onion, finely chopped
1 teaspoon finely chopped rosemary leaves
1/4 pound loose sweet Italian sausage
2 tablespoons all-purpose flour
4 cornbread muffins, torn into pieces, or 1/2 loaf cornbread, cubed (about 2 cups)
1 cup rehydrated dried figs, roughly chopped
Salt
Pepper
1/2 egg, lightly beaten
1/4 cup heavy cream
1/2 cup chicken stock, homemade or store-bought
4 Cornish game hens, 1 to 1 1/2 pounds each
4 tablespoons unsalted butter, room temperature
Kosher salt
Freshly ground black pepper

Steps:

  • Preheat oven to 400 degrees F.
  • Begin by re-hydrating the figs. In a large mixing bowl add the figs, honey, lemon juice and cover with warm water. Cover with plastic wrap and set aside for 20 to 25 minutes until the figs are tender and soft. Strain the figs and reserve the liquid - as this will be the base for the glaze.
  • To make the stuffing, heat a little extra-virgin olive oil over medium heat and gently saute the onions with rosemary. Add the sweet Italian sausage and continue to saute until browned, 10 to 12 minutes. When done, scrape it all into a large mixing bowl, add the cornbread pieces and figs and season well with salt and pepper. Give it a good toss until it's well combined. In a separate bowl, whisk together the egg, cream, and stock, and pour that over the cornbread. Stir the stuffing together and set it aside while you work on the hens.
  • Wash and clean the birds. Season the cavities with salt and pepper and fill with stuffing. Dot the top of each bird with butter and season with salt and pepper. Lay out on a roasting tray and pop into the oven for 40 to 45 minutes. While they are roasting, set the fig liquid over medium-high heat and add balsamic and butter. Reduce until syrupy and baste the birds with 10 minutes to go. When done, an instant-read thermometer should registers 160 degrees F in the thickest part of the thigh. Allow to rest for 10 minutes before serving.

  • Preheat oven to 350 degrees F (175 degrees C).

You could substitute any dried fruit (cranberries, apricots, etc) for the dried cherries. Use a complimentary fruit preserve accordingly.

4 Cornish hens
3/4 cup port wine
1 cup chicken broth
1/4 cup raspberry preserves or 1/4 cup raspberry jam
1/3 cup dried cherries
salt and pepper
dried thyme
3 tablespoons cornstarch, mixed with
water, to form paste

Steps:

  • Preheat oven to 400°F.
  • Rinse hens thoroughly and cut in half along the breastbone. Place halves, skin side up, in a shallow baking dish coated with cooking spray. Season with salt, pepper and dried thyme.
  • Place in oven and roast for approximately 40 minutes to an hour, until skin is nicely browned. For extra color, brush with melted better during last 15 minutes.
  • In a medium saucepan, combine port, chicken broth, cornstarch mixture, raspberry preserves, and dried cherries.
  • When hens are done cooking, remove from oven and let them rest on counter. Add pan drippings to the port mixture. Bring to a boil and simmer until desired consistency is reached. Add more preserves if the sauce is too tart. (The sauce can actually be made/reduced ahead of time - just reheat when pan drippings are added). Add more water or chicken broth if the sauce is too thick. Season with salt and pepper if needed.
  • Serve with sauce spooned over hens.
