This vinaigrette does not separate for at least 30 minutes once you shake it! Simple, sweet, and savory.

½ cup olive oil
¼ cup balsamic vinegar
1 teaspoon honey
1 teaspoon Dijon mustard
1 shallot, minced
1 clove garlic, minced
salt and ground black pepper to taste

Steps:

  • Combine the olive oil, balsamic vinegar, honey, Dijon mustard, shallot, garlic, salt, and black pepper together in a glass jar with a lid. Replace lid on the jar and shake vigorously until thoroughly combined.

1/2 cup balsamic vinegar
1 clove garlic (crushed and finely minced)
1/2 teaspoon dried Italian herb blend (optional)
1 1/2 cups olive oil
Salt and fresh-ground black pepper (to taste)

Steps:

  • Combine the mustard, balsamic vinegar, garlic, and Italian herbs, if desired, in a mixing bowl . Whisk vigorously while very slowly drizzling in the olive oil. Use a blender if you prefer.
  • Season with salt and fresh-ground black pepper to taste.
  • This dressing can be refrigerated overnight to intensify the flavors. Stir before serving. Balsamic dressing can be stored for several weeks in the refrigerator.

1 15 ounce can Dark Sweet Cherries
1 cup balsamic vinegar
2 cloves garlic (minced)
1/2 cup sugar
1/2 cup red wine vinegar
2 cups canola oil
1 teaspoon salt
1/2 teaspoon black pepper (freshly ground)

Steps:

  • Drain the cherries and then puree them in a blender or food processor.
  • In a medium size pot, bring pureed cherries, balsamic vinegar, garlic, and sugar to a boil. Reduce heat and allow mixture to simmer uncovered for 10 minutes.
  • Pour the cooked mixture in a standing mixer or blender. Mix in red wine vinegar, salt, and pepper. While mixing, slowly pour in the oil and beat for 2 more minutes.
  • Store in jars in the refrigerator for up to two weeks.

¼ teaspoon freshly ground black pepper

Steps:

  • Place tomatoes and mozzarella balls in a large bowl. Add salt and pepper and stir gently. Pour in dressing (you may not need all the dressing) and stir gently.
  • Spread the tomatoes on a platter, drizzle with dressing, and sprinkle with the basil. Serve immediately.
  • Place olive oil, vinegar, salt, and pepper in a container with a lid and shake until well blended.

5 tablespoons 100% black cherry juice
2 tablespoons balsamic vinegar
3 tablespoons white sugar
1/4 teaspoon onion powder
1/2 teaspoon Dijon mustard (don't use regular mustard)
3 tablespoons good quality olive oil
5-6 cups mixed greens ((5 ounces))
1 large pear, (thinly sliced)
2 teaspoons lemon juice
3/4 cup red grapes
1/2 cup sliced almonds
1/2 cup dried cherries
1/3 cup feta cheese
Optional: sliced strawberries

Steps:

  • DRESSING: Combine all the ingredients except the olive oil in a small blender jar; pulse until combined. Drizzle in the olive oil, and pulse again until just combined and emulsified. Alternatively, combine all the ingredients in a jar and shake until well combined. You may need to stir up the sugar as it has a tendency to settle on the bottom.
  • ALMONDS: If desired, toast the almonds (optional) by adding the sliced almonds in a single layer to a completely dry skillet (don't add any oil) and place on medium-high heat. Stir the almonds every 15 seconds for about 1-2 minutes or until the color slightly darkens and they start to smell good-- but watch carefully to prevent burning. You can also use honey-roasted almonds in this salad.
  • SALAD: Thinly slice a large pear and toss with the lemon juice. Slice the red grapes in half. Add the sliced pears, sliced grapes, almonds, and dried cherries to the mixed greens.
  • DRESSING: Toss with the dressing (add to preference, you may not want to add it all) and sprinkle feta cheese on top.
  • STORAGE: This salad (like most) doesn't make good leftovers. If you aren't eating this immediately, keep the ingredients separate from the dressing and toss right before eating. Top with feta after dressing the salad.

2 tablespoons lemon juice

24 ounces cherry, plum, or hot house tomatoes (or other variety of ripe tomato)
3 tablespoons extra-virgin olive oil
2 tablespoons balsamic vinegar
2 garlic cloves (minced)
1 teaspoon fresh oregano (or 1/2 teaspoon dried oregano , optional)
1 teaspoon fresh basil (chopped, or 1/2 teaspoon dried basil, optional)
Salt (to taste)
Black pepper (freshly ground, to taste)

Steps:

  • Gather the ingredients.
  • Slice the tomatoes in half and, if using plum or larger tomatoes, core them to remove the seeds . Chop the tomatoes into chunks (whatever size you desire). If using grape, cherry, or another small tomato, cut in half so they will absorb the flavors of the dressing. There's no need to seed them.
  • Place the chopped tomatoes in a large bowl. Add the olive oil, balsamic vinegar, garlic, and herbs (if using). Toss well.
  • Transfer to a serving dish and season with salt and pepper to taste. Or plate the salad individually for your guests and garnish with a sprig of fresh oregano or basil.

Once water is boiling, reduce heat to a simmer and cook until lentils are no longer crunchy, and are tender but not mushy. About 15-20 minutes depending on the variety of lentils you have. Drain excess water and let cool.
  • In a small tupperware container, add all the ingredients for the honey balsamic vinegar. Shake vigorously to emulsify the dressing and combine everything together.
  • In a large bowl, add the lentils, arugula, cherries, asparagus, and chicken if using. Dress lightly with the vinaigrette to taste. Add goat cheese just before serving and gently toss.
