4 cups chopped yellow onions (3 onions)
1/8 cup good olive oil, plus extra for chicken
1/8 cup minced garlic (2 cloves)
2 red bell peppers, cored, seeded, and large-diced
2 yellow bell peppers, cored, seeded, and large-diced
1 teaspoon chili powder
1 teaspoon ground cumin
1/4 teaspoon dried red pepper flakes, or to taste
1/4 teaspoon cayenne pepper, or to taste
2 teaspoons kosher salt, plus more for chicken
2 (28-ounce) cans whole peeled plum tomatoes in puree, undrained
1/4 cup minced fresh basil leaves
4 split chicken breasts, bone in, skin on
Freshly ground black pepper
Chopped onions, corn chips, grated cheddar, sour cream

Steps:

  • Cook the onions in the oil over medium-low heat for 10 to 15 minutes, until translucent. Add the garlic and cook for 1 more minute. Add the bell peppers, chili powder, cumin, red pepper flakes, cayenne, and salt. Cook for 1 minute. Crush the tomatoes by hand or in batches in a food processor fitted with a steel blade (pulse 6 to 8 times). Add to the pot with the basil. Bring to a boil, then reduce the heat and simmer, uncovered, for 30 minutes, stirring occasionally.
  • Preheat the oven to 350 degrees F.
  • Rub the chicken breasts with olive oil and place them on a baking sheet. Sprinkle generously with salt and pepper. Roast the chicken for 35 to 40 minutes, until just cooked. Let cool slightly. Separate the meat from the bones and skin and cut it into 3/4-inch chunks. Add to the chili and simmer, uncovered, for another 20 minutes. Serve with the toppings, or refrigerate and reheat gently before serving.

4 tablespoons extra-virgin olive oil, divided
4 boneless, skinless chicken breasts, 6 ounces each
2 tablespoons chopped thyme leaves, about 6 sprigs
Salt and pepper
1/4 cup pignoli (pine nuts) a couple of handfuls
3 cups chicken stock, divided
4 tablespoons cold butter, divided
1 medium red onion, finely chopped
3 ribs celery, finely chopped
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon freshly grated nutmeg, eyeball it
1 cup dry white wine, 1/4 of a bottle
1 cup dried cherries, a couple of handfuls
2 cups plain couscous
1/2 teaspoon ground allspice, eyeball it
1/4 teaspoon ground cinnamon, eyeball it
1/4 cup honey, eyeball a healthy drizzling
2 scallions, finely chopped
Generous handful flat-leaf parsley, finely chopped

Steps:

  • Preheat a large nonstick skillet over medium-high heat with the 3 turns of the pan of extra-virgin olive oil, about 3 tablespoons. Season chicken liberally with half of the thyme, salt and pepper and add to the hot skillet. Cook the chicken for 5 to 6 minutes on each side. Remove the chicken from the pan to a plate and cover with foil to keep warm.
  • In the bottom of a medium sauce pot, heat and toast pine nuts over moderate heat and remove. Add 2 cups stock and 1 tablespoon butter to the pot and bring to a boil.
  • Return the chicken skillet to the burner over medium-high heat, add 1 turn of the pan of extra-virgin olive oil, add the onion, celery, crushed red pepper flakes, nutmeg, salt and pepper, cook for 3 to 4 minutes or until the celery and onions are tender. Add the white wine, and cook until the pan is almost dry, 1 minute. Add the 2 cups boiling chicken stock, and dried cherries and continue to cook for about 5 to 6 minutes or until there is only about 1/2 cup of liquid left in the pan. Turn the heat off the under the pan. Add the remaining 3 tablespoons cold butter in small pieces and whisk until it has completely melted.
  • In a medium saucepan bring the remaining 1 cup chicken stock to a boil, add couscous, allspice, cinnamon and a little salt. Cover pot and remove from heat. Let stand 5 minutes. Drizzle honey over the couscous and add the pine nuts, scallions and parsley. Toss and fluff with a fork to combine.
  • Serve the chicken whole or sliced with cherry sauce poured over it and couscous alongside. Dark seared greens or simple salad complete the meal.

1 medium onion, chopped
1 tablespoon olive oil
2 garlic cloves, minced
2 cans (14 ounces each) chicken broth
1 can (4 ounces) chopped green chiles
2 teaspoons ground cumin
2 teaspoons dried oregano
1-1/2 teaspoons cayenne pepper
3 cans (14-1/2 ounces each) great northern beans, drained, divided
1 cup shredded Monterey Jack cheese
Sliced jalapeno pepper, optional

Steps:

  • In a Dutch oven over medium heat, cook chicken and onion in oil until lightly browned. Add garlic; cook 1 minute longer. Stir in the broth, chiles, cumin, oregano and cayenne; bring to a boil., Reduce heat to low. With a potato masher, mash one can of beans until smooth. Add to saucepan. Add remaining beans to saucepan. Simmer for 20-30 minutes or until chicken is no longer pink and onion is tender., Top each serving with cheese and, if desired, jalapeno pepper.Freeze option: Freeze cooled chili in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add broth or water if necessary.

1 cup chopped onion
1 cup chopped green pepper
2 garlic cloves, minced
4-1/2 cups diced cooked chicken
2 cans (14-1/2 ounces each) stewed tomatoes
1 can (15 ounces) pinto beans, drained
2/3 to 3/4 cup mild or medium picante sauce
1 teaspoon chili powder
1 teaspoon ground cumin
1/2 teaspoon salt
Optional toppings: shredded cheddar cheese, diced avocado and sour cream

1 (4 pound) whole chicken, cut into 8 pieces
salt and pepper to taste
½ cup all-purpose flour for dusting
1 (15 ounce) can pitted dark cherries packed in water
½ cup white sugar
1 tablespoon cornstarch
1 orange - with peel, quartered and thinly sliced
½ cup slivered almonds, toasted

Steps:

  • Heat the oil in a large skillet over medium-high heat. Season the chicken with salt and pepper, then coat with flour. Fry in the hot oil until browned, turning as needed. Reduce heat to medium, cover and cook for about 25 minutes or until meat is tender and juices run clear.
  • Remove the chicken from the pan, and pour off all but 1/4 cup of the drippings. Return to medium heat and stir in the cherries, reserving some of the cherry liquid for later. Stir in sugar and bring to a boil. Dissolve the cornstarch in the reserved cherry liquid, then stir into the pan. Cook, stirring gently, until thickened.
  • Add orange slices and almonds to the skillet, then return the chicken pieces to the skillet. Spoon sauce over the chicken to coat, and simmer over low heat for 5 to 10 minutes before serving.

10 plum tomatoes, halved lengthwise
1 jalapeno chile, halved (seeded if desired)
1 white onion, peeled and halved
4 garlic cloves, peeled
2 tablespoons extra-virgin olive oil
2 pounds boneless, skinless chicken thighs, cut into 1/2-inch cubes
1/4 cup chili powder
Salt
2 canned chipotle chiles in adobo sauce, finely chopped
1 3/4 cups homemade or store-bought low-sodium chicken stock
1 can (15 ounces) kidney beans, drained

Steps:

  • Preheat broiler, with rack 3 inches from heat source. Arrange tomatoes, jalapeno, onion, and garlic, cut side down, on a rimmed baking sheet. Broil until starting to char, about 5 minutes. Pulse tomatoes and jalapeno in a blender or a food processor until chunky. Chop onion and mince garlic.
  • Heat a large heavy skillet (preferably enamel cast-iron) over medium-high heat. Add oil. Working in batches, brown chicken in a single layer, allowing to sear before stirring, 5 to 6 minutes; transfer to a plate.
  • Reduce heat to medium. Add onion and garlic to skillet. Cook until soft and golden, about 8 minutes. Add chili powder and 2 teaspoons salt. Cook, stirring, for 1 minute. Stir in chipotles, and add chicken. Raise heat to high. Add tomato-jalapeno mixture. Cook, scraping up browned bits, until fully incorporated, 3 to 5 minutes. Stir in stock; simmer for 20 minutes. Add beans; simmer for 10 minutes. Serve with desired toppings.

CURRY CHICKEN CHILI WITH SRIRACHA

2 jalapeno peppers
1 large white onion
Neutral oil, such as peanut or safflower
1 pound package ground chicken

1 tablespoon (a palm full) ground chili powder
1 tablespoon ground cumin
1 tablespoon ground coriander
1 1/2 teaspoons (1/2 a palm full) garam masala
1 to 1 1/2 cups chicken stock
1 can (14 ounces) diced tomatoes
1 cup tomato sauce
3 tablespoons sriracha
1 can (15 ounces) chickpeas, lightly drained
Garlic naan
Melted butter, if desired
2 tablespoons mango chutney, plus more for serving optional
Greek yogurt or sour cream
Thinly sliced scallions or finely chopped chives
Pickled jalapeno peppers, mild or hot
Lime wedges, optional
Blue corn chips, optional
Cilantro leaves, optional

Steps:

  • Gather your ingredients.
  • Peel and grate or mince ginger. Peel and chop or grate the garlic. Halve and seed jalapeno peppers then chop. Peel and chop the onion.
  • Heat a Dutch oven over medium-high heat with oil, 2 turns of the pan. Add chicken and brown and crumble. Season with salt and pepper. Add ginger, garlic, peppers, onions and sweat a few minutes. Add chili powder, cumin, coriander and garam masala and stir a minute more. Add stock, tomatoes, tomato sauce and sriracha. Reduce heat a bit to simmer and thicken.
  • Add chickpeas to a food processor and coarsely chop, 5 to 7 pulses. Add chickpeas to chili.
  • If serving naan, preheat griddle to medium-high, sprinkle with water and cook bread until blistered. Brush with melted butter if desired.
  • Adjust seasonings for the chili and stir in mango chutney if using. Serve with yogurt or sour cream, scallions or chives, pickled jalapeno peppers and any optional toppings.

1 cup water
1/2 cup raisins
1/2 cup brown sugar
3/4 cup chili sauce, same as 6 oz
3/4 cup ketchup, same as 6 oz
1 (16 ounce) can dark cherries, pitted
1 cup cooking sherry

Steps:

  • Season chicken and place in broiler until brown.
  • Combine all but the cherries and sherry.
  • Pour over the chicken and cover with foil and bake at 325 degrees for 30 minutes.
  • Add the wine and cherries and continue baking for another 15 minutes. Remove foil and still continue to bake an additional 15 minutes uncovered. Check for doness.
  • Serve with rice.

8 ounces whole onion or 7 ounces chopped ready-cut onion (1 2/3 cups)
2 large cloves garlic
1 teaspoon canola oil
8 ounces skinless, boneless chicken breasts
15 or 16-ounce can low-sodium white beans (Great Northern, white kidney)
1/2 jalapeno
1/2 teaspoon ground coriander
1 teaspoon ground cumin
14 ounce can no-salt-added crushed tomatoes
1 ounce red onion to yield 2 tablespoons finely minced
10 sprigs cilantro to yield 1 tablespoon chopped
1 lime
1 cup frozen corn kernels
4 tablespoons nonfat yogurt
Freshly ground black pepper

Steps:

  • Chop whole onion.
  • Heat on high heat nonstick pan large enough to hold all ingredients.
  • Mince garlic.
  • Reduce heat to medium-high, and add oil; add onion and garlic, and saute until onion begins to brown.
  • Wash, dry and cube chicken.
  • Rinse and drain beans.
  • Add chicken to pan, and brown on both sides.
  • Wash, seed and mince jalapeno.
  • When chicken is brown, add jalapeno, coriander, cumin, crushed tomatoes and beans. Reduce heat, and simmer while preparing rest of dish.
  • Mince red onion; wash, dry and chop cilantro.
  • Squeeze half of lime into chili; stir in corn; season with pepper.
  • Continue cooking for about five minutes; then, serve with yogurt, lime wedges, chopped red onion and chopped cilantro.

2 tablespoons vegetable oil
1/2 cup coarsely chopped shallots (about 1 large)
1 tablespoon peeled chopped fresh ginger (about one 1 1/2-inch piece)
1 teaspoon minced fresh jalapeño (seeds and membranes removed)
Scant 4 cups dark sweet fresh cherries, pitted and de-stemmed (3 cups afterwards)
Two 14 1/2-ounce cans diced tomatoes, no salt added (you'll only use 1 1/2 cans; save the rest for another use)
1/4 cup blackstrap molasses
1/4 cup cider vinegar
1 tablespoon chipotle chile from a can of chipotle chiles en adobo
3 tablespoons Dijon mustard, divided
1 1/4 teaspoons chile powder, divided
2 teaspoons coarse salt, divided
15 grinds black pepper, divided
2 teaspoons light brown sugar
3 pounds bone-in, skinless chicken thighs, trimmed if necessary (about 8)
4 to 6 warmed burger buns, for serving

Steps:

  • 1. Heat the oil in a large heavy saucepan over medium-high heat. When hot, add the shallots, ginger, and jalapeño and sauté until softened, about 2 minutes. Add the cherries, tomatoes, molasses, vinegar, chipotle, 1 tablespoon mustard, 3/4 teaspoon chile powder, 1 1/2 teaspoons salt, and 5 grinds pepper, and bring to a boil over high heat. Reduce to a simmer over medium heat, and cook until aromatic and thickened, about 5 minutes. Remove from the heat and carefully transfer half to a blender; purée until smooth, about 20 seconds. Purée the second half until smooth (you should have about 5 1/4 cups). Set aside.
  • 2. Meanwhile, mix 2 tablespoons mustard, 1/2 teaspoon chile powder, 1/2 teaspoons salt, 10 grinds pepper, and the brown sugar in a large bowl; add the chicken and mix well with your hands. Put the chicken in the bottom of the slow cooker and pour 1 1/2 cups of the barbecue sauce on top (reserve the remainder for serving and extras). Cover and cook on low until the meat is cooked through and tender, 4 to 4 1/2 hours.
  • 3. Use tongs to transfer the chicken to a cutting board and carefully use a fork to separate the meat from the bones, discarding the bones (you should have about 4 cups meat).
  • 4. To serve, stir together 1 cup of the remaining sauce and the shredded meat, and reheat in the microwave or on the stovetop. Spoon some meat and sauce onto the bottom half of each bun, cover with the top bun, and serve.

1 pound fresh or frozen pitted sweet cherries
1/2 cup orange juice
1/2 cup soy sauce
1/4 cup packed brown sugar
1/4 cup honey
2 tablespoons lemon juice
1 garlic clove, minced
2 teaspoons minced fresh gingerroot
1 broiler/fryer chicken (3 to 4 pounds), cut up
3 tablespoons butter

Steps:

  • Set aside 3/4 cup cherries. In a blender, combine orange juice and remaining cherries; cover and process until smooth. Add the soy sauce, brown sugar, honey, lemon juice, garlic and ginger; set aside., In a large skillet over medium heat, brown chicken on all sides in butter. Place chicken skin side down in an ungreased 13-in. x 9-in. baking dish. Top with cherry sauce. , Bake, uncovered, at 350° for 20 minutes; turn chicken. Top with reserved cherries. This recipe, which I haven't made yet, comes from the Cherry Marketing Institute and is loaded with antioxidants. They recommend that you garnish with corn strips, red onion and avocado. It could be made vegetarian, and I'd like to try it with beef. I would increase the spices, too.

4 ounces dried tart cherries, chopped (about 3/4 cup)
1 tablespoon olive oil
1 cup chopped onion
1 tablespoon chopped fresh garlic
2 teaspoons finely chopped jalapenos
1 lb ground turkey
1 roasted red pepper, cut into 1/4-inch cubes
1 tablespoon chili powder
1 teaspoon chili powder
1 1/2 teaspoons ground cumin
1 teaspoon ground coriander
1 teaspoon dried mustard
1/2 teaspoon dried oregano
4 cups chopped fire-roasted tomatoes
1 (16 ounce) can black beans
1/4 cup chopped cilantro

Steps:

  • Heat 1 cup of broth. Place cherries in small bowl. Add hot broth and set aside.
  • Heat olive oil in a 4-quart saucepan over medium heat. Add onion; sauté until onion is soft, about 5 minutes. Add garlic and jalapeno; cook 1 minute. Do not brown. Add turkey; cook until it is no longer pink.
  • Add bell pepper, chili powder, cumin, coriander, mustard and oregano. Cook over medium-high heat, stirring occasionally, about 2 minutes. Add tomatoes and remaining broth; bring to boil. Reduce heat; simmer, uncovered, about 5 minutes.
  • Stir in beans, cilantro and cherry mixture. Continue cooking until thoroughly heated.

6 skinless, boneless chicken breast halves - rinsed and patted dry

1 onion, diced
2 cloves garlic, minced
1 fresh jalapeno pepper, sliced into rings
1 pound frozen tart cherries, thawed and roughly chopped
1 pound frozen mango chunks, thawed and roughly chopped
2 cups sparkling cherry juice (such as R.W. Knudsen®)
¼ cup fresh lemon juice, or to taste
2 tablespoons brown sugar

Steps:

  • Heat the oil in a large, deep skillet over medium heat. Sprinkle salt over both sides of each piece of chicken; cook the chicken in the hot oil until browned on both sides, but still slightly pink in the center, 3 to 5 minutes per side. Remove chicken to a plate and set aside. Add the onion, garlic, and jalapeno pepper to the remaining oil in the skillet; cook and stir until the onion is tender and beginning to brown, 5 to 7 minutes. Stir the cherry and mango into the mixture; cook and stir until the liquid in the pan is slightly thickened, 3 to 5 minutes. Add the cherry juice, lemon juice, and brown sugar to the mixture; stir and return to a simmer.
  • Return the chicken to the pan. Ladle some of the sauce over the chicken to cover. Return the mixture to a simmer and cook until the liquid thickens and the chicken is no longer pink in the center and the juices run clear, about 10 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

1 -1 Medium Onion Diced
2 -2 Cup Celery Diced
1 -1 Medium Green Pepper Diced
1 -1T Garlic Minced
1 -1 Bay Leaf
1/4 -1/4 t Chipotle Powder
1 -1 t Ground Cumin
1 -1 t salt
1 -1 t pepper
1 -1 T Paprika
1 -1 t Onion Powder
3 -3 15 oz. cans of white beans
1 -1 quart chicken stock
2 -2 17 oz. jars of cherry salsa (I used one hot and one mild and ordered them thru Cherry Republic.com)
1.25 -1.25 lb cooked diced chicken (I used like 1.5 lbs)
1 1/2 -1 1/2 cup Half and Half
1/4 -1/4 cup potato starch (I used corn starch, think it is the same)

Steps:

  • -saute onion, celery and green pepper in oil for 5 min over Medium -add garlic, stir for 30 secs -Add all spices and continue to stir until spices are mixed well -Add beans, chicken stock, salsa and cooked chicken -Add Half and Half -Bring to a simmer -Combine starch with 1 cup of water and whip until lump free -Whisk slowly into chili -Bring to a simmer and allow to simmer for 20 mins, stir often MAKES 2.5 QUARTS (it fed about 7-8 of us) One thing...at first it was too liquidy so I added more starch/water. This helped thicken it.

1 egg, beaten
¾ cup flour
1 green pepper, sliced
1 red pepper, sliced
rice, to serve
3 cloves garlic cloves, crushed
1 red chilli, chopped
3 tablespoons soy sauce
2 tablespoons tomato puree
½ cup water

Steps:

  • Season the chicken with salt and pepper.
  • Cut the chicken into thin strips then coat in the egg wash and flour.
  • Shallow fry for a few minutes on each side, until golden brown.
  • Add the peppers and fry for another couple of minutes. Remove the chicken and peppers and set aside.
  • In the same pan, add the garlic, red chilli, soy sauce, tomato purée, and water. Stir and simmer the mixture reduces and is thick and syrupy.
  • Add back in the chicken and peppers and stir well in the sauce.
  • Serve with rice.
  • Enjoy!
