3 cups sifted cake flour
2½ teaspoons baking powder
1 teaspoon salt
⅓ cup unsalted butter, room temperature
⅓ cup vegetable shortening
1½ cups sugar
¼ cup maraschino cherry juice
¾ cup whole milk
¼ teaspoon almond extract
16 maraschino cherries, cut into eighths
5 egg whites, room temperature, stiffly beaten
For the Frosting
8 oz (1 block) cream cheese, room temperature
¾ cup (1½ sticks) unsalted butter, room temperature
¼ cup maraschino cherry juice
6 cups confectionary sugar

  • InstructionsTo make the cakeStep 1: Prepare the oven. Preheat it to 350 degrees F.Step 2: Grease and flour a two 9-inch round layer cake pans and if desired you can line the bottom of the pan with parchment.Step 3: In a medium bowl, sift the flour, baking powder, and salt.Step 4: In a large bowl, cream the butter, shortening, and sugar for about 5 minutes or until fluffy.Step 5: Use a measuring cup to measure the milk, almond extract, and cherry juice.Step 6: Alternately add the wet and dry ingredients, beginning and ending with the dry ingredients, to the creamed mixture. Make sure to beat well every after addition. And fold in the cherries.Step 7: In a different bowl, stiffly beat the egg whites. To lighten the batter, fold in 1/3 of beat whites to the batter. Then, fold in the rest of the egg white mixture until fully combined.Step 8: Share the batter between the pans. Place inside the preheated oven and bake for 30 to 35 minutes or until the cake is springy when touched.Step 9: Once done, remove the pans from the oven. Don't remove the cakes yet, let them cool in the pan for about 10 minutes. Then, carefully loosen the edges with a think knife. Transfer the cakes onto the racks and cool them into room temperature.To make the FrostingStep 1: In a bowl, cream the butter and cream cheese with 1/2 confectionary sugar. Stir in the cherry juice and mix in enough confectionary sugar to get your desired consistency and taste.

1 teaspoon baking powder
1 teaspoon vanilla extract
1 teaspoon almond extract
21 ounce cherry pie filling
16 ounces cream cheese (softened)
1/2 cup unsalted butter (softened)
1/3 cup cherry pie filling (from the can listed above)
2 1/4 cups powdered sugar
1 teaspoon almond extract
1 teaspoon vanilla extract
Maraschino cherries with stems

Steps:

  • Preheat oven to 325 degrees F. Spray or lightly grease 13 x 9 baking pan.
  • Measure 1/3 cup of cherry pie filling and set aside to use in frosting. (see below)
  • With a mixer on low speed, combine dry cake mix, eggs, baking powder, both extracts, and remaining cherry pie filling until combined. Increase speed to medium and beat until creamy, a minute or so.
  • Pour batter into prepared pan, and level with a spatula.
  • Bake for 45 minutes or until toothpick comes out clean. Remove cake from oven and allow to cool completely in pan on a wire rack.

1 package white cake mix (regular size)
CANNOLI FILLING:
2 packages (8 ounces each) cream cheese, softened
1 carton (15 ounces) ricotta cheese
1 cup confectioners' sugar
1 teaspoon vanilla extract
1/2 teaspoon almond extract
1 jar (16 ounces) maraschino cherries
1 cup miniature chocolate chips
FROSTING:
1 cup shortening
1 cup butter, softened
7-1/2 cups confectioners' sugar
3 teaspoons vanilla extract
4 to 5 tablespoons water
Pink and green gel food coloring

Steps:

  • Prepare and bake cake according to package directions, using two greased and floured 9-in. round baking pans. Cool for 10 minutes before removing cakes from pans to wire racks to cool completely., In a large bowl, beat cream cheese and ricotta until fluffy. Add confectioners' sugar and extracts; beat until smooth. , Drain cherries well, reserving 1 teaspoon cherry juice. Chop cherries. Stir chopped cherries, chocolate chips and reserved cherry juice into ricotta mixture. Refrigerate for 1 hour or until spreadable., In another large bowl, cream shortening and butter until light and fluffy. Gradually add confectioners' sugar and vanilla; beat until smooth. Add enough water to achieve a spreadable consistency. Tint 3/4 cup frosting pink. Tint 1/4 cup frosting green. Set aside 1-1/2 cups white frosting., Cut each cake horizontally into two layers. Place one layer on a serving plate; spread with a third of the filling. Repeat layers twice. Top with remaining cake layer. Spread remaining white frosting over the top and sides of cake , To decorate, cut a small hole in the corner of pastry or plastic bag; insert tip #5. Fill the bag with reserved white frosting; pipe vines on cake. Change to shell tip #21; pipe shell border along bottom and top edges. Use petal tip #103 and pink frosting to pipe the rosebuds. Use leaf tip #67 and green frosting to pipe the leaves. Store in the refrigerator.

Steps:

  • Cream the cream cheese, butter or margarine, sugar, and vanilla together until smooth. Beat in eggs one at a time. Sift together 2 1/4 cup flour, baking powder, and salt; fold into cream cheese mixture. Dredge cherries in 1/4 cup flour, and fold into batter.
  • Sprinkle pecans over the bottom of an ungreased 10 inch angel food tube pan. Bottom should be completely covered. Add a few more pecans if necessary. Spoon batter into pan on top of nuts.
  • Bake for about 75 minutes, or until an inserted wooden pick comes out clean. Allow cake to cool in pan. Run knife around outside edge and center tube. Ease cake out of pan, and onto plate.
