CHERRY-WALNUT BALLS
Maraschino cherries fill these fluffy bite-size cookies, while powdered sugar and red edible glitter give them their snowy appearance.

- Preheat oven to 325°F. Drain chopped maraschino cherries on paper towels; pat dry to remove any excess liquid. Set cherries aside.
- In a large mixing bowl beat butter with an electric mixer on medium to high speed for 30 seconds. Add the 1/2 cup powdered sugar, almond extract, and vanilla. Beat until combined, scraping sides of bowl occasionally. Beat in as much of the flour as you can with the mixer. Using a wooden spoon, stir in any remaining flour, the walnuts, and maraschino cherries.
- Shape dough into 1-inch balls. Place balls 2 inches apart on an ungreased cookie sheet. Bake for 18 to 20 minutes or until bottoms are light brown. Cool on cookie sheets for 5 minutes.
- If desired, stir some red edible glitter into additional powdered sugar. Roll warm cookies in the powdered sugar mixture to coat. Place cookies on wire racks; cool. If desired, roll cooled cookies in the powdered sugar mixture again before serving.

Years ago, I saved this festive recipe and made it only at Christmastime. But my grandkids loved the sweet combination of peanut butter, chocolate and cherries so much that now I mix up a batch anytime they ask or visit!

- In a small bowl, beat the butter and peanut butter until smooth. Beat in vanilla. Gradually add confectioners' sugar and mix well. Cover and refrigerate for at least 1 hour. , Pat cherries dry with paper towel. Dust hands with additional confectioners' sugar. Wrap each cherry with a rounded tablespoon full of peanut butter mixture; shape into a ball. (Peanut butter mixture may need to be refrigerated occasionally while rolling cherries.) Cover and refrigerate for at least 1 hour. , In a microwave, melt chocolate chips and shortening; stir until smooth. Dip peanut butter balls in chocolate; allow excess to drip off. Place on waxed paper. Refrigerate for at least 1 hour or until set.

I love maraschino cherries and coconut. These are so easy that the kids can prepare them and they are great to have in the fridge for a pop in the mouth snack! We usually double this and use a cookie scoop do depending on how big (or small) you make them is how many you will get. Cooking time is chilling time.

I'm gravitating towards the Paleo Diet so I created this high-protein and energy snack recipe out of a desire to eliminate those expensive and so-called nutritious protein bars. I don't want all of the processed carbs that are hidden in them because, quite honestly, they aren't that healthy. These are really tasty and my whole family loves them. I recommend making them fairly small and bite-sized, as they can crumble a little as you're biting into them. Freezing or refrigerating them keeps the messiness down, but they won't spoil if left at room temperature. I eat 4 or 5 with a big glass of water and feel full!

From Land o' Lake. I think it is unique because of the marshmallows in it. You don't really taste them (in fact everyone surprised when I said they were in there) but they add a wonderful creamy note that compliment the cherries beautifully.
