My cherry truffles were the delicious result of a kitchen experiment involving a bottle of kirsch I'd received as a gift and some dried cherries I had on hand. They won a blue ribbon at the Wisconsin State Fair! -Gerry Cofta, Milwaukee, Wisconsin

1 cup finely chopped dried cherries
1/4 cup cherry brandy
11 ounces 53% cacao dark baking chocolate, chopped
1/2 cup heavy whipping cream
1 teaspoon cherry extract
COATING:
4 ounces milk chocolate, chopped
4 ounces dark chocolate, chopped
Melted dark, milk and white chocolate and pearl dust

Steps:

  • In a small bowl, combine cherries and brandy; cover and let soak for 1 hour or until cherries are softened., Place dark chocolate in a small bowl. In a small saucepan, bring cream just to a boil. Pour over chocolate; whisk until smooth. Stir in extract and soaked cherries with liquid. Cool to room temperature, stirring occasionally. Refrigerate for 1 hour or until firm., Shape into 1-in. balls. Place on baking sheets; cover and refrigerate for at least 1 hour., In a microwave, melt milk chocolate; stir until smooth. Dip half of the balls into milk chocolate, allowing excess to drip off. Place on waxed paper; let stand until set., Melt dark chocolate; stir until smooth. Dip remaining balls into dark chocolate, allowing excess to drip off. Place on waxed paper; let stand until set. Drizzle with melted chocolate and decorate with pearl dust as desired. Store in an airtight container in the refrigerator.

1 cup flour
1/2 teaspoon baking powder
1/2 cup vegetable oil
3 tablespoons cherry-flavored Jello gelatin (powder)
1 (3 3/4 ounce) package vanilla instant pudding mix
2 eggs, separated
3 tablespoons milk
1/2 teaspoon almond extract
3/4 cup chopped pecans
7 ounces flaked coconut
1 teaspoon water

Steps:

  • Combine flour, baking powder, oil, jello, pudding mix, egg yolks, milk and almond extract. Blend well. Stir in nuts and 2/3 cup coconut.
  • Shape into balls, using a rounded teaspoons for each. Slightly beat egg whites with water. Roll balls in egg whites, then in remaining coconut. Place on ungreased cookie sheets, pressing down to flatten.
  • Bake at 350 for 15 to 18 minutes or until delicately browned.

Cherry Chocolate Truffles With Coconut image

12 ounces bittersweet or semisweet chocolate
1 cup heavy cream
1 tablespoon unsalted butter
Pinch of salt
1/2 teaspoon vanilla extract
/2 teaspoon cherry extract
Shredded coconut, for coating

Steps:

  • Chop the chocolate and put in a heatproof bowl. Bring the heavy cream, butter and salt to a simmer in a saucepan over medium heat; pour over the chocolate and let sit until completely melted, about 10 minutes. Stir with a rubber spatula or whisk until smooth. (If necessary, microwave in 20-second intervals until the chocolate melts.)
  • Whisk in the vanilla and cherry extracts. Stir the ganache until it is smooth and shiny. Pour into a shallow baking dish and refrigerate until firm, at least 3 hours or overnight.
  • Roll tablespoonfuls of the ganache into 18 to 24 balls, then roll in shredded coconut. Transfer to a parchment-lined baking sheet, cover with plastic wrap and refrigerate until firm, at least 1 hour or overnight. (To make these in advance, roll into balls but do not coat; cover and freeze up to 2 weeks. Let sit at room temperature for 20 minutes before uncovering, then roll in coating.)

These are an essential for the truffle plate at Christmas. They take minutes to make and look great. Dipping in dark chocolate and then drizzling white chocolate over the top looks divine. You could also use red/green sprinkles for that festive touch.

50 g red glace cherries
1/3 cup condensed milk
2 cups coconut
2 teaspoons cherry flavored liqueur or 2 teaspoons cherry extract
220 g dark chocolate or 220 g chocolate, of choice

Steps:

  • Process the first 4 ingredients in a food processor until combined. Refrigerate for approx 30 minutes.
  • Melt chocolate in a heavy pot over low heat or in a microwave; remove from heat.
  • Place cold truffle on skewer or dipping fork, and swirl in chocolate to coat or dip 1/2 only of the truffle in the chocolate mixture.
  • Place on wax or parchment paper to set.

This is such a wonderful way of serving your chocolate truffles at Christmas or New Year - or indeed any special winter festival! I do make my own truffles for this, but you can buy ready-made truffles for ease and speed of course! I love to see my family and friend's faces when I bring the coffee and "chocolates" out with this Truffle Tree! Allow yourself plenty of time to assemble this, the plant pot and the tree "trunk" can be prepared beforehand; once the chocolate truffle tree has been assembled, it will be fine for up to 2 days before you need to serve it, stored in a very cool and dry place - NOT a fridge however. I have made this with a well-known gold wrapped chocolate nut truffle before, as well as the white chocolate and coconut version by the same company! The truffles shown in my photos are local hand-made truffles, but any "firm" high chocolate truffle is fine. I have my own truffle recipe posted on zaar, Recipe #271012 which also works very well with this tree! Have fun - and just watch your guest's faces when you bring this out!! NB: You can also make this with marshmallows and other suitable sweets or candy, especially for children.

1 kg good quality chocolate truffles or 1 kg marshmallows
1 (15 inch) foam balls
1 (10 -12 inch) length wood branches
15 -20 small white foam balls
1 plant pot
florist's foam
aluminum foil
length ribbon
cocktail stick

Steps:

  • Spray the "trunk" of the tree with a colour of your choice such as gold or silver.
  • Spray the plant pot the same colour, allow them to dry for at least 4 hours.
  • Cover the foam ball with aluminium foil and wrap securely around, taping if necessary.
  • Place some pebbles in the bottom of the plant pot and then push the florist's foam in, on top of the pebbles - wedging it in so that it is firm.
  • Stick the "trunk" into the foil-covered ball - firmly - then push the other end of the "trunk" into the florist's foam in the prepared plant pot. Make sure it is firm and does not rock, add some more pebbles.
  • Tie a ribbon around the top of the "trunk" at the base of the foil-covered ball - then tie a large bow.
  • Take a cocktail stick and push it into your truffle, (or other sweets/candy) then push the other end into the foam ball making sure it is securely positioned.
  • Do this for all the chocolate truffles until the "tree" is full.
  • Add some white foam packing balls around the top of the plant pot to resemble snow - brush off any loose cocoa and serve with coffee!

These truffles have a rich dark chocolate ganache, with a dark chocolate coating, then rolled in cocoa. If you don't like cocoa on the outside, there are a few variations to the recipe. These aren't hard to make, but it takes some time to shape and coat them. They also make perfect little gifts.

14 ounces very high quality dark chocolate (70% cocoa)
1 cup heavy cream (35%)
8 ounces very high quality dark chocolate (70% cocoa)
1 cup very high quality cocoa powder
1/4 cup icing sugar

Steps:

  • For ganache, break chocolate into small pieces in a large aluminum bowl.
  • Bring cream slowly to a light boil in a small saucepan over low heat.
  • Pour boiling cream over chocolate and keep stirring until all the chocolate has melted and the batter is homogeneous. It is very important that there are no pieces of chocolate left here and that the batter is very smooth.
  • Refrigerate for 15 minutes or until ganache is just thick enough to easily form truffle balls.
  • Form even round balls and place on waxed paper, slightly flattening bottom.
  • For coating, melt the chocolate in a double-boiler. If you don't have a double boiler, heat 2 inches of water in a small saucepan. Break chocolate into small pieces in a small aluminum bowl. Turn off heat and place bowl on top of saucepan with hot water. Let chocolate melt and stir until smooth. Place bowl of melted chocolate on a dry towel.
  • Sift together cocoa powder and icing sugar.
  • Dip each ball in the melted chocolate (slightly cooled, but not hardened); place back on waxed paper to let chocolate harden slightly.
  • When chocolate is hardened enough so that it doesn't rub off on your finger, roll in cocoa mixture. Store truffles in covered container at room temperature in a slightly cool place away from heat.
  • Here are a few variations. If coating in cocoa powder, sift first with a little icing sugar or it will be too bitter.
  • White Chocolate Truffles: Using high quality white chocolate, follow the same recipe as above.
  • Coconut Truffles: Make a white chocolate ganache, sprinkle in shredded coconut when ganache is still warm, and roll in shredded coconut instead of cocoa powder.
  • Rum Raisin: Make a dark chocolate ganache, soak raisins in rum and drain, add raisins to warm ganache.
  • Orange Grand Marnier: Make a dark chocolate ganache, soak small cubes of orange rind in Grand Marnier and drain, stir in orange cubes when ganache is still warm.
  • Hazelnut: Make a milk chocolate ganache, stir in tiny pieces of hazelnut, and roll in chopped hazelnuts and/or cocoa powder.
  • Pistachio: Make a dark chocolate ganache, crush unsalted pistachio's and stir into warm ganache, roll in crushed pistachios and/or cocoa powder.
  • Coffee Truffles: Roll in coffee powder instead of cocoa.

  • In a small saucepan, bring the cream, butter and sugar to a boil, stirring constantly. Remove from the heat; stir in chocolate until melted. Cover and refrigerate for at least 4 hours or until easy to handle. , Pat cherries with paper towels until very dry. Shape a teaspoonful of chocolate mixture around each cherry, forming a ball. 1 cup heavy cream
1/4 cup butter, cut into pieces
3 tablespoons granulated sugar
6 (1 1/2 ounce) each Godiva dark chocolate bars (finely chopped)
3 tablespoons cognac or 3 tablespoons other flavored liqueur
confectioners' sugar
unsweetened cocoa powder
chopped walnuts

Steps:

  • Make the truffles:.
  • Heat heavy cream, butter and sugar in medium saucepan over medium heat to a gentle boil. Remove from heat. Add chopped chocolate and let stand 30 seconds. Whisk until smooth. Stir in cognac.
  • Place saucepan in bowl of ice water. Beat chocolate mixture until it thickens, holds its shape and is firm enough to pipe, using hand-held electric mixer at medium speed.
  • Transfer ganache to pastry bag fitted with 1/2-inch plain tip (such as Ateco #6). Pipe 1-inch mounds onto baking sheet. Freeze truffles for 15 minutes or until just firm enough to shape.
  • With hands dusted with confectioners' sugar, gently roll ganache into 1-inch balls. Refrigerate about 10 minutes or just until firm.
  • Coat the truffles:.
  • Roll one-third of the truffles in confectioners' sugar. Roll another third in cocoa powder. Then roll remaining truffles in chopped walnuts. Store truffles in airtight container in refrigerator up to 5 days.
  • To serve:
  • Remove truffles from refrigerator 30 minutes before serving. Place each truffle in a decorative petit four paper cup and arrange on serving plate.
