ROASTED CHERRY TOMATO SOUP
Creamy, healthy and easy, this homemade roasted cherry tomato soup is fantastic all year long! And is seriously delicious served with plenty of crusty bread and fresh basil. Dairy free, gluten free and vegan.

Steps:
- Preheat the oven to 400ºF.
- Add the onion, tomatoes and garlic (leave the cloves whole!) to a large rimmed baking sheet. Drizzle with the olive oil, then sprinkle with the salt and pepper. Toss to coat and spread in an even layer.
- Bake for about 30 minutes, stirring halfway through, until the tomatoes have shriveled and started to char.
- Remove from the oven and let cool for about 5 minutes.
- Add the roasted veggie mixture to a blender, along with the broth, tomato paste, oregano, coconut milk and salt. Process until smooth. Transfer the mixture to a medium saucepan.
- Set the pan over medium low / low heat and cook for about 10 minutes, stirring occasionally, until warmed through and the flavors have had a chance to meld. Taste and season with additional salt / pepper as needed.
- Serve topped with plenty of fresh basil and bread on the side for dipping!

- Remove papery outer skin from garlic (do not peel or separate cloves). Cut top off of garlic bulb. Drizzle with oil. Wrap each bulb in heavy-duty foil. Bake at 425° for 30-35 minutes or until softened. Cool for 10-15 minutes. Squeeze softened garlic into a blender. Add the 14-1/2-oz. can of diced tomatoes; cover and process until smooth. Set aside. , Transfer 1/4 cup oil from the foil to a Dutch oven or soup kettle (discard the remaining oil). Saute onion in oil over medium heat until tender. , Stir in the stewed tomatoes, cream, jalapenos, garlic pepper, sugar, salt, pureed tomato mixture and remaining diced tomatoes. Bring to a boil. Reduce heat; cover and simmer for 1 hour. Garnish with croutons and cheese if desired.

- GARLIC BREAD CROUTONS:.
- Preheat oven to 300ºF. In a large bowl, mix 1/2 cup olive oil and 3 minced garlic cloves. Add bread pieces and toss to coat. On a large baking sheet, arrange coated bread in a single layer. Bake in preheated oven until golden (approximately 20 minutes), stirring once. Set baked croutons aside.
- TOMATO SOUP (can be started while croutons are baking):
- In a large heavy-duty pot, heat 2 tbs. olive oil over medium heat. Add onions and sauté for approximately 25 minutes, or until very tender. Add remaining six minced garlic cloves and cook for one minute. Add chicken stock, crushed tomatoes and 1/2 cup grated Parmesan. Simmer uncovered for about 30 minutes, stirring occasionally. Season with salt and fresh ground pepper.
- Add garlic bread croutons to soup and cook for one minute more. Ladle soup into bowls and garnish each serving with basil slices and Parmesan shavings.

TOMATO AND GARLIC-BREAD SOUP

- Preheat oven to 300°F. Mix 1/2 cup olive oil and 3 minced garlic cloves in large bowl. Add sourdough bread pieces and toss to coat. Arrange bread in single layer on large baking sheet. Bake until golden, stirring once, about 20 minutes. Set garlic-bread croutons aside.
- Heat remaining 2 tablespoons olive oil in heavy large pot over medium heat. Add onions and sauté until very tender, about 25 minutes. Add remaining minced garlic and cook 1 minute. Add chicken stock, crushed tomatoes and 1/2 cup Parmesan cheese. Simmer soup uncovered 30 minutes, stirring occasionally. Season to taste with salt and pepper.
- Add garlic-bread croutons to soup and cook 1 minute. Ladle soup into bowls. Sprinkle with thinly sliced basil and Parmesan cheese shavings.
ROASTED GARLIC AND CHERRY TOMATO PASTA SAUCE
A wonderful and easy roasted cherry tomato sauce for pasta.

- Preheat the oven to 375 degrees F (190 degrees C).
- Peel off outer layers of the garlic but leave cloves intact. Chop about 1/2 inch off the top of the garlic head and place in a ramekin or small casserole dish. Drizzle the exposed side with 2 tablespoon olive oil and sprinkle with 1/4 teaspoon salt. Cover with aluminum foil.
- Roast in the preheated oven until tender, 45 minutes to 1 hour. Remove from the oven and cool for 15 minutes. Remove roasted garlic by squeezing it from the skins; set aside.
- Heat remaining 1/4 cup olive oil in a deep skillet over medium-high heat. Add onion, cayenne, and remaining 1 teaspoon salt. Reduce heat to medium and cook until onion is translucent and slightly golden, about 5 minutes.
- Add tomatoes and white wine and continue to cook until most of the wine has been reduced, about 5 minutes. Add butter and cook until completely melted, 1 to 2 minutes.
- Add roasted garlic and enough chicken broth to completely cover the tomatoes; bring to a boil. Reduce heat to a simmer and cook until sauce has reduced and thickened, about 15 minutes.

EASY TOMATO SOUP AND GARLIC BREADSTICKS
I can always count on homemade tomato soup and garlic breadsticks to make me feel all warm and cozy. My easy garlic breadsticks are pillowy on the inside, golden brown and buttery on the outside-so good that you may never make a yeast-risen breadstick again! Serve this tomato soup for an afterschool snack or easy lunch.

- Small bunch fresh basil, optional
- For the breadsticks: Preheat the oven to 375 degrees F with a rack in the upper third of the oven. Line a sheet pan with aluminum foil and lightly spray with nonstick spray.
- Whisk the flour, baking powder, salt and baking soda together in a medium bowl, w. Add the yogurt and oil and mix with a wooden spoon until a shaggy dough forms. Turn the dough onto a lightly floured work surface and knead until the surface is smooth and the dough is homogeneous, 1 to 2 minutes. If the dough is very sticky, knead in an additional tablespoon of flour at a time. Flatten into a disk and divide into 8 wedges.
- Lightly spray your work surface and hands with nonstick cooking spray to make rolling easier. Roll each wedge into a 6-inch rope and place on the sheet pan, spacing the breadsticks evenly apart.
- Bake in the upper third of the oven until springy to the touch and golden, 20 to 22 minutes, rotating the pan front to back halfway through. Switch the oven to broil and broil until desired level of golden brown is achieved, 30 to 60 seconds. This will happen quickly! Remove the breadsticks from the oven.
- While the breadsticks bake, prepare the soup: Melt the butter (or heat the oil) in a medium Dutch oven or saucepan over medium heat. Add the onions and a few pinches of salt. Cook, stirring occasionally, until the onions are translucent, 3 to 5 minutes. Add the tomato paste and cook, stirring occasionally, until the onions are coated and a fiery orange color, about 1 minute. Add the flour and stir to coat the onions, allowing the flour to cook for about 1 minute.
- Toss the garlic into the onions and immediately add the tomatoes and their juice, the broth, yogurt and sugar if using. Season with salt and pepper. Raise the heat and bring to a boil. Blend the soup with an immersion blender until smooth. (Alternatively, working in batches, transfer the soup to a blender, blend until smooth, then pour into a large heatproof bowl. Return the blended soup to the Dutch oven.)
- Reduce to a simmer, check for seasoning and allow to simmer, stirring occasionally, while the breadsticks finish baking.
- Finish the breadsticks: Place the butter, garlic and salt in a small saucepan and heat over medium-low heat until the butter melts and the garlic just begins to sizzle. Immediately remove from the heat (don't allow the garlic to brown) and brush the garlic butter over the just-baked breadsticks and sprinkle with the Parmesan. Serve the breadsticks with the soup, garnishing the soup with torn basil leaves, if desired.

Bake 40-45 minutes or until garlic cloves and tomatoes are soft. Unwrap garlic and cool 10 minutes., In a large saucepan, heat remaining oil over medium heat. Add onion; cook and stir until tender. Add minced garlic, thyme and tomatoes. Squeeze garlic from skins and add to tomato mixture. Add stock; bring to a boil. Reduce heat; simmer, uncovered, 20-25 minutes or until flavors are blended, stirring occasionally., Remove soup from heat; cool slightly. Process in batches in a blender until smooth; return to saucepan. Add cream and the remaining salt and pepper; heat through, stirring occasionally.

- Heat the oven to 350°F.
- Brush the slices of bread with olive oil on both sides, then arrange the slices on a baking sheet that has a rim. Toast in the oven, flipping the slices halfway through, until golden brown on both sides, 15 to 20 minutes. Maintain the oven temperature.
- Cut the 1 whole clove of garlic in half. Rub the cut sides of the garlic halves over the toasted bread slices. Set the bread aside.
- In a large skillet over medium, heat 1/4 cup olive oil. Add the onions and saute until slightly caramelized, about 15 minutes. Add the 1/2 cup of sliced garlic and saute until tender, about 3 minutes. Set aside.
- Season the chicken stock with salt and pepper.
- Lightly coat a 2 1/2-quart baking dish with olive oil.( I used a large lasagna baking dish since I worried it might bubble over) Layer half of the bread slices over the bottom of the baking dish. Spoon half of the onion mixture over the bread, then top with half of the tomatoes, a third of the grated Parmesan cheese and the chopped basil.
- Layer the remaining toast over the onions and tomatoes, then top with the remaining onions and tomatoes. Sprinkle half of the remaining cheese over the dish.
- Add 3 cups of the stock and wait 5 minutes for the bread to absorb it. Add another cup of stock and wait another few minutes.
- Continue adding stock (up to 6 cups total) until the liquid comes to within 1/4 inch of the top of the dish. Reserve remaining stock.
- Sprinkle the remaining Parmesan over the ingredients, then cover with foil and bake for 45 minutes.
- Remove the foil, increase heat to 400°F and bake until the top is golden brown. Remove from the oven and cool slightly. Once cooled, cut into 8 servings and arrange each in a shallow serving bowl.
- Heat the reserved chicken stock, then ladle some around (not over) each serving. Garnish with basil and parsley.
