CHEVRE CHEESECAKE

Chevre Cheesecake image

A gluten-free, soy-free, cow dairy-free New York cheesecake that has that decadent mouth-feel. I have served it several times without anyone noticing it wasn't the REAL STUFF. At a recent party my husband mentioned that he had not had cheesecake for 20 years because of his allergies so this became my goal and voila! Enjoy!

Provided by MATHGOD

Categories     Desserts     Cakes     Cheesecake Recipes     New York Cheesecake Recipes

Time 7h40m

Number Of Ingredients 9

7 ounces gluten-free gingersnap cookies, finely crushed

CREAMY CHEVRE AND BASIL PASTA

Creamy Chevre and Basil Pasta image

Chevre (goat cheese) is a favorite of mine. This is from "Monday to Friday Pasta" by Michele Urvater. The sweetness of the red peppers and the creaminess of the cheese combine to form something greater than their parts. The dish is fast with the aid of a food processor, it comes together in less than 20 minutes

HOW TO MAKE GOAT CHEESE (CHèVRE) IN ONLY 6 STEPS

From morningchores.com
  • Milk Preparation. If you milk your own goats, your cheese-making starts with your regular routine of milking your goats and straining the milk. The only difference is you’ll strain your milk into a pot you can use for making cheese instead of a jar.
  • Add Mesophilic Culture. Every culture has a different bacterial activity level. So, you’ll need to refer to your culture packet for exact guidelines on how much culture to apply.
  • Add Rennet. After culturing, add a drop or two of rennet to each quart of milk you used. Every drop is going to be a slightly different size. So there’s not a whole lot of precision possible when it comes to using rennet for small batches.
