These homemade thick & chewy cranberry orange granola bars are the perfect snack! Easy to make, plenty sturdy and freezer friendly, they're an awesome grab & go option. Dairy free, gluten free and vegetarian.

1 ½ cups old-fashioned rolled oats
½ cup oat bran
¼ teaspoon ground cinnamon
¼ teaspoon salt
¾ cup dried cranberries
1 cup raw pecan halves, chopped
¼ cup melted coconut oil*
¼ cup creamy almond butter
2 teaspoons vanilla extract
1 tablespoon orange zest (from 1 large orange)
2 tablespoons honey
½ cup brown rice syrup

Steps:

  • Preheat the oven to 325ºF. Line an 8x8 inch baking pan with parchment paper (cutting a big enough piece so that it hangs over on two sides). Lightly mist with nonstick or olive oil spray. Set aside.
  • In a large bowl, mix together the oats, oat bran, cinnamon, salt, cranberries and pecans until well combined.
  • In a medium bowl, mix together the coconut oil, almond butter, vanilla, orange zest, honey and brown rice syrup until well combined.
  • Pour into the bowl with the dry ingredients and mix until well combined and everything is evenly moistened (it will be a very thick mixture!). Dump the mixture into the prepared baking pan and press firmly into an even layer.
  • Bake for about 30 minutes, until lightly browned. Remove from the oven and set the pan on a wire rack to cool completely.
  • Once completely cool, use the parchment overhang to lift from the pan. Use a sharp knife to cut into squares.
  • Store at room temperature or in the refrigerator in an airtight container (they will keep longer in the fridge). I personally like to wrap the individual bars in plastic wrap - perfect for grab and go!

1/4 cup all-purpose flour
1-1/2 teaspoons sugar
2 tablespoons cold butter
2 tablespoons chopped pecans
TOPPING:
2 tablespoons beaten egg
1-1/2 teaspoons whole milk
3/4 teaspoon grated orange zest
1/4 teaspoon vanilla extract
1/3 cup sugar
1-1/2 teaspoons all-purpose flour
1/4 cup chopped fresh or frozen cranberries
2 tablespoons sweetened shredded coconut
2 tablespoons chopped pecans

Steps:

  • In a large bowl, combine flour and sugar; cut in butter until mixture resembles coarse crumbs. Stir in pecans. Press into an 8x4-in. loaf pan coated with cooking spray. Bake at 350° for 15 minutes., Meanwhile, in another bowl, combine the egg, milk, orange zest and vanilla. Combine sugar and flour; gradually add to egg mixture and mix well. Fold in the cranberries, coconut and pecans. Spread over crust. , Bake for 15-20 minutes or until golden brown. Cool on a wire rack.

2 cups quick-cooking oats
1 cup dried cranberries
1 cup pecan halves
½ cup ground flax seed
½ cup milk chocolate chips
¼ cup wheat germ
1 cup packed light brown sugar
½ cup honey
2 tablespoons vegetable oil
½ teaspoon salt
1 teaspoon vanilla extract
½ teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line an 8-inch square baking dish with parchment paper or waxed paper.
  • Mix oats, cranberries, pecans, ground flax seed, chocolate chips, and wheat germ together in a bowl.
  • Stir brown sugar, honey, vegetable oil, and salt together in a large microwave-safe bowl; heat in microwave for 30 seconds. Stir mixture and heat in microwave again until smooth, about 30 seconds more. Stir vanilla extract and cinnamon into brown sugar mixture.
  • Stir brown sugar mixture into oats mixture until evenly mixed and chocolate is melted; pour into the prepared baking dish.
  • Bake in the preheated oven until edges are golden brown, about 30 minutes. Lift bars out of pan by pulling by the parchment paper; cool for 5 minutes before cutting into bars.

  • Line a 9-inch square baker with two strips of criss-crossed parchment paper, cut to fit neatly against the base and up the sides. The parchment paper will make it easy for you to slice the bars later.
  • In a medium skillet over medium heat, toast the pecans and pepitas, stirring often, until they are fragrant and the pepitas are starting to make little popping noises, about 5 minutes. Transfer the toasted pecans and pepitas to a food processor. Add the cranberries and then run the machine for about 10 seconds, until the nuts and cranberries are all broken up. (If you skip the food processor step, your bars will be more difficult to slice through and more likely to crumble at the edges.)
  • In a mixing bowl, combine the contents of the food processor with the oats, orange zest, cinnamon and salt. Whisk to combine.
