HABANERO SALSA - RECIPE

This homemade habanero salsa recipe is fiery in all the right ways, made with habanero peppers, tomatoes, onion, garlic, red wine vinegar, a bit of lime juice, and a few select seasonings. Break out the chips for some habanero heaven.

2 tablespoons olive oil (divided)
1 pound tomatoes (chopped)
3 habanero peppers (chopped)
1 small white onion (chopped)
2 cloves garlic (chopped)
2 tablespoons red wine vinegar
1 teaspoon lime juice
Salt to taste
OPTIONAL SEASONINGS: chopped cilantro (Mexican oregano, dash of chili powder, pinch of cumin)

Steps:

  • Heat a pan to medium heat and add 1 tablespoon olive oil. Add the chopped tomatoes, habaneros and onion. Cook them down, stirring a bit, about 5 minutes to soften.
  • Add the garlic and stir. Cook another minute, until you can smell the awesome garlic.
  • Scoop the contents into a blender or food processor along with the vinegar, lime juice, salt, and optional seasonings. Blend until smooth.
  • Heat the same pan back to low heat and add the remaining olive oil. Pour the salsa into the pan and let it simmer for 15 minutes to let the flavors develop.
  • Cool and store in the refrigerator, covered. It is best served chilled.

When I go to Mexican restaurants and they bring salsa and chips to the table, I always ask them to bring the "hot stuff" for me. It is usually a thinner salsa but packs the spicier punch that I love. This is my own version of that salsa. The bell peppers give a sweetness that nicely contrasts the heat of the habanero. You may want to use gloves when handling the habanero as the oils will stick to your fingers and transfer to anything you touch.

Number Of Ingredients 10

4 tomatoes
1 yellow bell pepper
1 orange bell pepper
1/2 habanero pepper
1/2 white onion
1/2 bunch cilantro
1 lime, juice of
4 garlic cloves
1 teaspoon salt
1/2 teaspoon cumin powder

Steps:

  • Halve and core tomatoes and bell peppers. (Don't halve and core the habenero--the seeds contain the heat you want).
  • Roast tomatoes, bell peppers, habanero, and unpeeled garlic cloves under broiler until skins blacken.
  • Discard skins of tomatoes, bell peppers, and garlic, and cut the habanero in half. I only use half, but if you want severe burnage, use the whole thing.
  • Add all ingredients to food processor and blend until you get your desired consistency.
  • Chill before serving.
  • Variations: you know what you like: add more cilantro, cumin, garlic or salt to your satisfy your own taste.

16 medium tomatillos (about 2 pounds), husked, rinsed
1/2 medium white onion
4 garlic cloves, peeled
1 1 1/2-inch-long fresh habanero chile
1/2 cup chopped fresh cilantro
1 1/2 tablespoons fresh lime juice
1 teaspoon salt

Steps:

  • Preheat broiler. Line rimmed baking sheet with foil. Arrange tomatillos, onion, garlic, and chile on prepared baking sheet. Broil until vegetables blacken in spots, about 5 minutes per side for chile and about 10 minutes per side for tomatillos, onion, and garlic.
  • Transfer vegetables and any accumulated juices to blender. Add cilantro, lime juice, and salt. Puree until smooth. Transfer salsa to bowl. Cover and refrigerate until cold, at least 1 hour and up to 4 hours. Season salsa to taste with more salt.

5 habanero chiles, roasted
4 amarillo chiles
3 scallions, finely chopped
1 grapefruit, juiced
1 lime, zested and juiced
1 bunch cilantro, leaves picked and chopped
Salt and pepper

Steps:

  • Soak the habanero and amarillo chiles in hot water for approximately 10 minutes. Remove the chiles from the water and scrape and deseed them. Place the chiles into a food processor and add enough of the soaking liquid to cover a quarter of the way. Puree into a fine paste. Place the puree into a bowl and add in the chopped scallions, fruit juices, lime zest, and chopped cilantro. Mix well, season with salt and pepper, and serve warm.

3 fresh jalapeno peppers
2 onions, finely chopped
2 tablespoons garlic, minced
1 tablespoon white sugar
2 teaspoons salt
1 teaspoon freshly ground black pepper
1 (7 ounce) can diced green chile pepper
½ cup minced fresh cilantro
2 limes, juiced
7 (15 ounce) cans canned tomatoes
1 habanero pepper, seeded

Steps:

  • Roast jalapenos over a grill or gas burner until completely blackened. Seal in a plastic bag or a bowl covered with plastic wrap, and allow to steam until skins are loosened. When cool, remove skin, stem, and seeds.
  • Place jalapenos, onions, garlic, sugar, salt, and pepper into the bowl of a blender or food processor. Pulse to chop and blend, then pour into a large bowl, and mix with the can of green chiles, cilantro, and lime juice. Pulse the tomatoes in batches to desired size, and add to green chile mixture.
  • Return one cup of chopped tomatoes to the blender along with the habanero, and puree well. Strain the puree to remove any large pieces of habanero, and add to the tomatoes. Mix well, cover, and chill in the refrigerator at least one hour to allow flavors to blend.

This sweet and spicy salsa combines mangoes, habaneros, fresh cilantro and lime.

1 garlic clove
Kosher salt
1/4 cup coarsely chopped fresh cilantro
2 tablespoons extra-virgin olive oil
2 ripe mangoes, peeled, pitted and diced (about 2 1/2 cups)
4 scallions, thinly sliced
1 habanero chile, stemmed, seeded, and finely chopped,
Juice of 2 limes
Tortilla chips, for serving

Steps:

  • Finely chop the garlic, sprinkle with 1 1/4 teaspoon salt, and mash into a coarse paste using flat side of a large knife. Mix the garlic paste with cilantro, oil, mango, scallions, habanero and lime juice. Set aside for at least 15 minutes to allow the flavors to meld. Season with additional salt and serve with tortilla chips for scooping.

This salsa will keep, covered and refrigerated, about 5 to 6 weeks, mainly because no mold or bacteria would dare to come near the stuff.

1 tablespoon minced garlic
1/3 cup virgin olive oil
6 ripe plum tomatoes, halved freshly ground black pepper
10 habanero peppers
1/4 cup lime juice (about 2 limes)
1/4 cup chopped cilantro

Steps:

  • Combine tablespoon of olive oil and garlic and mix well.
  • Rub tomato halves with this mixture, sprinkle with salt and freshly cracked pepper and roast in 500-degree oven until they begin to take o some serious color, about 15 to 20 minutes.
  • Remove from oven, cool to room temperature and dice.
  • Meanwhile, grill habanero peppers over a medium-hot fire until slightly colored, 2 to 3 minutes.
  • Remove peppers from fire and mince.
  • Be very careful when working with this pepper.
  • Wear gloves when mincing it, and if you get any of the juice on your skin, wash it off with a mild bleach solution, which neutralizes the capsaicin.
  • Also, be sure not to rub your eyes while working with these peppers, and wash your hands well after you're done.
  • These little guys are incendiary.
  • In medium-size bowl, combine tomatoes, peppers, 1/4 cup olive oil, lime juice and cilantro, mix well, and prepare for takeoff.

BLUEBERRY HABANERO SALSA

Our family favorite. This odd combination makes for a beautiful and delicious treat. I have substituted serrano peppers for a milder salsa, but prefer the fruity apricot taste of the habaneros. Sometimes to tone it down at the last minute I add blue agave.

1/2 to 3 fresh habanero chiles*
1/4 cup water
1/8 teaspoon coarse salt, or to taste

Steps:

  • Heat a dry comal or flat iron griddle over moderately low heat until hot and pan-roast tomatoes and habaneros, turning them occasionally to ensure even roasting, until browned and soft throughout, 25 to 30 minutes. Discard tomato stems and wearing rubber gloves, stem and seed chiles.
  • In a blender purée tomatoes, chiles, water, and salt until smooth. (Salsa may be made 10 hours ahead and chilled, covered. Bring salsa to room temperature before serving.)
