Dear SOS: My wife and I had Chi Dynasty in Studio City recommended to us. We went there last Saturday and had three appetizers, one of which was the Chinese chicken salad. Its menu professed that it was "voted best in town." I'm not sure who did the voting, but I can certainly say it was one great salad! 5 tablespoons plus 1 teaspoon soy sauce
2 tablespoons plus 1 teaspoon rice vinegar
2 tablespoons sugar
1 tablespoon plus 1 1/2 teaspoons sesame oil
2 teaspoons grated fresh ginger
8 cups chopped iceberg lettuce
3 cups crispy rice noodles
1 pound boiled chicken breast, cut into strips
1/3 cup finely chopped peanuts, more to taste
2 tablespoons minced preserved ginger, more to taste
1 tablespoon roasted black sesame seeds, more to taste
1/4 cup chopped green onions, more to taste
1/4 cup cilantro leaves, more to taste
Dressing

Steps:

  • In a medium bowl, whisk together the soy sauce, rice vinegar, sugar, sesame oil and ginger. Taste and adjust seasoning and flavoring as desired. This makes a generous one-half cup of dressing.
  • In a large bowl, toss together the lettuce, noodles, chicken, peanuts, ginger, sesame seeds, green onions and cilantro leaves. Add half the dressing, tossing to lightly coat. Taste, and toss in additional dressing as desired. Serve immediately.

4 tablespoons low-sodium soy sauce, divided
2 teaspoons toasted sesame oil, divided
1 pound skinless, boneless chicken breasts
1/2 head napa cabbage, thinly shredded (about 6 cups)
1/4 head red cabbage, shredded (about 2 cups)
1 large carrot, shredded (about 2 cups)
3 scallions, trimmed and thinly sliced, greens included (about 1/2 cup)
1 (8-ounce) can sliced water chestnuts
1 (11-ounce) can Mandarin oranges in water, drained
1/3 cup rice wine vinegar
1 teaspoon minced garlic
1 teaspoon minced ginger
2 tablespoons canola oil
2 tablespoons brown sugar
1 1/2 teaspoons chili-garlic sauce or chili sauce
1/4 cup sliced almonds, toasted

Steps:

  • Preheat oven to 350 degrees F.
  • Combine 1 tablespoon soy sauce and 1/2 teaspoon sesame oil and brush onto chicken breasts. Arrange in a baking dish and bake until juices run clear, about 13 to15 minutes. Remove from oven, cool completely, and cut into 1/4-inch slices.
  • In a large bowl, combine Napa cabbage, red cabbage, carrot, scallions, water chestnuts, Mandarin orange and sliced chicken. In a separate bowl, whisk together 3 tablespoons soy sauce, vinegar, garlic, ginger, oil, 1 1/2 teaspoons sesame oil, brown sugar and chili sauce. Pour dressing over salad and toss to combine. Divide among bowls and top each serving with 2 teaspoons toasted almonds.

3 ½ boneless chicken breast halves, cooked and diced
1 head lettuce, torn into small pieces
4 green onions, sliced
4 stalks celery, sliced thin
½ cup walnuts, chopped
2 tablespoons sesame seeds, toasted
6 ounces Chinese noodles, heated briefly to crisp
6 tablespoons seasoned rice vinegar
4 tablespoons white sugar
1 teaspoon salt
½ cup peanut oil

Steps:

  • In a large salad bowl combine the chicken, lettuce, green onion, celery, nuts, seeds and noodles. Mix all together. Set aside.
  • To Make Dressing: Put vinegar in a small bowl. Dissolve sugar and salt in vinegar before adding oil. Shake/Beat well.
  • Add dressing to salad and toss to coat. Serve and enjoy!

1 cup sweet and sour sauce
1 pinch ground ginger
6 cups romaine lettuce - torn, washed and dried
1 cup fresh bean sprouts
4 boneless chicken breast halves, cooked and shredded
½ cup cornflakes cereal
¼ cup toasted sliced almonds
1 pinch ground black pepper
2 tablespoons sesame seeds

Steps:

  • Pour sweet and sour sauce into a large bowl. Sprinkle ground ginger into the bowl and mix it thoroughly with the sauce.
  • Place romaine lettuce and bean sprouts into the bowl of sauce and toss it a few times.
  • Add the shredded chicken to the bowl and toss it thoroughly with the lettuce and bean sprouts.
  • Transfer the salad into a large serving bowl or 4 separate serving bowls. Top with cornflakes, almonds and a pinch of black ground pepper. Sprinkle with sesame seeds, if desired.

1 lb chicken breast, boneless
1 onion, chopped
2 garlic cloves
1 cup napa cabbage, shredded
1 cup celery, diced
3/4 cup bamboo shoot, sliced
1/2 cup mushroom, sliced
1/2 cup bean sprouts
1 teaspoon cornstarch
1 cup chicken stock
1/2 cup snow peas
1/8 cup soy sauce
1/2 teaspoon ginger, crushed
1/4 teaspoon dry mustard
1 cup rice, cooked

Steps:

  • Put oil in wok.
  • Slice chicken breast thin; add to hot pan with onion; cook until chicken is cooked.
  • Add garlic; add cabbage; add celery, mushrooms, bamboo shoots, and bean sprouts.
  • Add corn starch to chicken stock; add to wok; cook for 4 minutes.
  • Add snow peas; cook for 1 minute more.
  • Serve over rice.
